What Makes an Exceptional Seafood Pizza?

Creating an exceptional seafood pizza hinges on three main pillars: a fantastic crust, fresh, high-quality seafood, and a complementary sauce that enhances rather than overpowers the delicate flavors of the ocean. Our recipe meticulously balances these elements to deliver a pizza that’s truly a cut above.

First, the crust provides the canvas. A soft, chewy, yet slightly crisp base is crucial for supporting the toppings without becoming soggy. Second, the choice and preparation of seafood are paramount. Using fresh, plump shrimp and tender scallops ensures a succulent bite and rich, natural flavors. Lastly, a creamy, garlicky white sauce offers a buttery counterpoint to the briny seafood, creating a harmonious and indulgent experience. This combination ensures every slice is bursting with flavor and delightful textures.

Essential Seafood Pizza Ingredients

Crafting the perfect seafood pizza begins with selecting the finest ingredients. Here’s a detailed look at what you’ll need and some tips for choosing them:

Seafood pizza ingredients arranged on a kitchen countertop
Gathering your ingredients is the first step to a sensational seafood pizza.
  • Bread Flour: For the ultimate chewy yet crisp crust, bread flour is preferred due to its higher protein content. However, all-purpose flour will also yield a perfectly delicious crust, though it might be slightly less crisp.
  • Yeast: Essential for the dough’s rise, use rapid-rise or instant yeast for convenience and consistent results. Ensure your yeast is fresh for optimal activation.
  • Olive Oil: A good quality olive oil adds flavor to the dough and helps with browning. You can substitute with avocado oil if you prefer a more neutral flavor, especially for sautéing.
  • Butter: Used to sauté the garlic and seafood, butter forms the flavorful base of our creamy white sauce. Both dairy and plant-based butter options work beautifully.
  • Garlic: Fresh garlic cloves are non-negotiable! They infuse the butter and sauce with an aromatic depth that is key to this pizza’s incredible flavor. Mince them finely for even distribution.
  • Shrimp or Prawns: Look for large, plump, and joyful-looking shrimp or prawns. Peeled and deveined with tails removed are ideal for easy eating. Fresh is always best, but high-quality frozen shrimp, thawed properly, are also an excellent choice. (And if you love shrimp, don’t miss our Boom Boom Shrimp recipe!)
  • Scallops: These add a touch of gourmet elegance and delicate sweetness to the pizza. If scallops aren’t available or you prefer, you can use extra shrimp or even crab meat for a different but equally delicious outcome.
  • Milk: Whole milk is recommended for a richer, creamier white sauce, but any milk you have on hand will work just fine.
  • Mozzarella Cheese: What’s pizza without melted, bubbly mozzarella? Use freshly grated pizza mozzarella for the best texture and stretch. It provides that classic pizza chewiness that perfectly complements the seafood.
  • Tomatoes: Choose ripe, red tomatoes bursting with color and natural sweetness. Diced small, they add a fresh, tangy counterpoint to the creamy sauce and seafood.
  • Onions: Thinly sliced white or red onions add a mild sharpness and texture that beautifully complements the other toppings.
  • Parsley: Fresh Italian parsley, minced, is used as a garnish to add a pop of color and herbaceous freshness at the end. Fresh basil or cilantro can also be lovely alternatives.

How To Make Seafood Pizza: A Detailed Step-by-Step Guide

Creating this gourmet seafood pizza is simpler than you might think, starting with a tender, flavorful crust and building up to the exquisite toppings. Follow these steps for a perfect result:

1. Crafting the Perfect Pizza Dough:

The foundation of any great pizza is its crust. This recipe ensures a soft, tender, and incredibly tasty base that’s surprisingly easy to achieve.

  1. Combine Dry Ingredients: In the bowl of a stand mixer fitted with a dough hook, combine the bread flour (or all-purpose flour), instant or rapid-rise yeast, and coarse salt. Give them a quick stir to ensure they are well mixed.
  2. Add Wet Ingredients and Knead: Pour in the olive oil and warm water. Start mixing on low speed until the ingredients come together and form a rough ball of dough. Increase the speed slightly and continue to knead for approximately 10 minutes. The dough should transform into a smooth, elastic ball. During kneading, if the dough appears too sticky, add a very small amount of flour, a tablespoon at a time, until it still sticks slightly to the bottom of the bowl but no longer clings to the sides.
  3. First Rise: Lightly oil a clean bowl. Transfer the smooth dough ball to this bowl, turning it once to coat lightly with oil. Cover the bowl with a clean kitchen towel or plastic wrap and place it in a warm spot. Allow the dough to rise until it has doubled in size, which typically takes about 1 to 1.5 hours, depending on the warmth of your environment.
  4. Divide and Rest: Once the dough has risen, gently turn it out onto a lightly flour-dusted counter. Using a sharp knife or dough cutter, divide the dough into 4 even pieces. Shape each piece into a smooth, round ball. Let these dough balls rest on the floured counter for about 20 minutes. This resting period allows the gluten to relax, making the dough much easier to roll out thinly.
  5. Roll Out Crusts: Using a rolling pin, roll out each dough ball into a circle of your desired thickness. For a classic pizza experience, aim for a relatively thin crust. Carefully transfer the rolled-out dough rounds onto parchment-lined baking sheets or directly onto a pizza pan.

2. Preparing Your Succulent Seafood Toppings:

The key to perfect seafood on pizza is quick cooking to keep it tender and flavorful.

  1. Preheat Oven: Begin by preheating your oven to 450ºF (230ºC) to ensure it’s ready when your pizzas are assembled.
  2. Infuse Butter with Garlic: In a large saucepan, melt the butter over medium heat. Add the minced garlic and stir continuously until it becomes fragrant, which should take approximately one minute. Be careful not to burn the garlic.
  3. Sear Shrimp and Scallops: While the garlic butter is still on the stove, pat your peeled and deveined shrimp (or prawns) and scallops thoroughly dry with paper towels. This crucial step prevents them from steaming and ensures a beautiful sear. Season the seafood with ¾ teaspoon of kosher salt. Place the seasoned shrimp and scallops into the fragrant butter and sear on the first side for 1-2 minutes until they begin to turn opaque. Flip them and continue cooking for another 1-2 minutes until they are just opaque throughout. Immediately remove the shrimp and scallops from the pan to prevent overcooking, but crucially, leave the garlicky, shrimp-infused butter in the saucepan. This flavorful butter will form the base of your amazing white sauce!

3. Whipping Up the Creamy White Sauce for the Pizza:

This luscious garlic cream sauce is the secret weapon of this seafood pizza.

  1. Prepare Flour Paste: In a medium-sized bowl, place the all-purpose flour. Gradually whisk in about 2 tablespoons of milk to create a smooth, lump-free paste. This technique prevents lumps from forming when you add the rest of the liquid.
  2. Create the Sauce: Gradually whisk in the remaining ¾ cup of milk into the flour paste until well combined. Then, pour this flour-milk mixture directly into the saucepan containing the garlicky butter that was left from cooking the seafood. Add ⅓ teaspoon of salt. Bring the mixture to a gentle simmer over medium heat, whisking constantly, until the sauce thickens to a creamy consistency. The seafood essence in the butter will truly deepen the flavor of this sauce.

4. Assembling and Baking Your Masterpiece:

Bringing all the elements together for a golden, bubbly, and irresistible seafood pizza.

  1. Layer the Toppings: Divide the warm, creamy white sauce evenly among your prepared pizza dough rounds, spreading it almost to the edges. Next, sprinkle a generous layer of grated mozzarella cheese over the sauce. Arrange the seared shrimp, scallops, diced tomatoes, and thinly-sliced red onions evenly over the cheese.
  2. Bake to Perfection: Carefully transfer the loaded pizza pans to your preheated oven. Bake for 15-20 minutes, or until the pizza crust is golden brown and the mozzarella cheese is melted and bubbly. For even browning, rotate the pans halfway through the baking time.
  3. Garnish and Serve: Once baked, remove the pizzas from the oven. Sprinkle generously with fresh minced parsley. Slice immediately and serve hot. For an extra flourish, offer fresh lemon wedges on the side for squeezing over individual slices.

Pro Tips for the Best Seafood Pizza

Achieving seafood pizza perfection is easy with these expert tips:

  • Choose Your Seafood Wisely: Always opt for fresh or high-quality frozen seafood. If using frozen, ensure it is fully thawed overnight in the refrigerator or quickly in a bowl of cold water on the countertop before use. Properly thawed seafood cooks more evenly and prevents excess moisture.
  • Prevent Steaming, Promote Searing: It’s crucial to pat your shrimp, prawns, and scallops completely dry with paper towels before searing. Excess moisture will cause the seafood to steam rather than sear, resulting in a rubbery texture instead of a tender, slightly caramelized bite.
  • Don’t Overcook the Seafood: Seafood cooks very quickly. When searing for the pizza, aim for just opaque. Remember, it will continue to cook in the oven, so slightly undercooking it initially will yield perfectly tender results on the finished pizza.
  • Whisk Flour into Cold Milk: To ensure your white sauce is silky smooth and free of lumps, always whisk the flour into a small amount of cold milk first to create a paste. Then, gradually whisk in the remaining milk before adding it to the warm, garlicky butter.
  • Avoid Overloading: While it’s tempting to pile on the toppings, resist the urge to overload your pizza. Too many toppings can weigh down the crust, making it soggy and preventing even cooking. Keep your toppings balanced for the best flavor and texture.
  • Reheating Leftovers: If you’re lucky enough to have leftovers, be mindful when reheating. Seafood can become rubbery if exposed to high heat for too long. Reheat your pizza “low and slow” in a conventional oven or a skillet over medium-low heat until warmed through and the cheese is just bubbly again, rather than using a blazing hot grill element or microwave.
  • Enhance with Freshness: For a final flourish, a drizzle of good extra virgin olive oil, a sprinkle of fresh oregano or basil leaves, a touch of grated Parmesan, or a few red pepper flakes can dramatically enhance the flavors and presentation. Fresh lemon wedges served on the side add a bright, zesty counterpoint.

What To Serve With Seafood Pizza

To complete your seafood pizza feast, consider pairing it with fresh, vibrant side dishes that complement its rich flavors:

  • Fresh Peach Caprese Salad: The sweetness of peaches and fresh mozzarella will beautifully balance the savory pizza.
  • Watermelon Salad with Goat Cheese, Watercress and Mint: A refreshing and unexpected combination that adds a delightful zing.
  • Strawberry Salad with Rhubarb Dressing: Fruity and tart, this salad offers a wonderful contrast.
  • Simple Green Salad: A classic Caesar salad or a mixed green salad with a light vinaigrette is always a great choice.
  • Garlic Bread: If you can’t get enough garlic, a side of toasted garlic bread can be a welcome addition.

Make Ahead and Storage Solutions

Planning ahead makes entertaining or busy weeknights a breeze. Here’s how to manage your seafood pizza components:

  • Dough Preparation: The pizza dough can be made in advance. After its first rise, you can refrigerate it for up to 3 days, or freeze it (tightly wrapped) for up to 3 months. Thaw frozen dough in the refrigerator overnight before using.
  • Seafood & Sauce: For best results, cook the seafood and prepare the white sauce just before assembling and baking the pizza. This ensures the freshest flavors and textures.

Storing Leftovers

Should you miraculously have any leftovers (it’s rare!), here’s how to store them:

  • Refrigeration: Store any leftover seafood pizza in an airtight container or wrapped tightly in plastic wrap in the refrigerator for up to three days.
  • Reheating: For best results, reheat slices in a skillet over medium-low heat until warmed through and the cheese is bubbly again. You can also use an oven at a moderate temperature (around 300°F/150°C) to gently warm it, preventing the seafood from becoming rubbery.
  • Freezing: Leftover pizza can also be frozen for up to two months. Wrap individual slices tightly in plastic wrap and then in foil to prevent freezer burn. Reheat from frozen in the oven for a quick, delicious snack.

Frequently Asked Questions (FAQs) About Seafood Pizza

Got questions? We’ve got answers to help you master your seafood pizza!

Do Italians make seafood pizza?

Absolutely! Seafood pizza is a cherished part of Italian cuisine. One of the most famous examples is Pizza Frutti di Mare, which translates to “fruits of the sea.” This traditional pizza often features a medley of fresh seafood like shrimp, squid, clams, or mussels, typically on a delicious tomato base.

Do Italians eat cheese with seafood?

Traditionally, many authentic Italian seafood dishes, including some versions of Pizza Frutti di Mare, do not include cheese. The belief is that cheese can overpower the delicate flavors of the seafood. However, modern interpretations and regional variations do exist, and a light hand with a mild cheese like mozzarella (as in our white sauce recipe) can actually complement the seafood beautifully without dominating it. It truly comes down to personal preference!

What sauce is best for seafood pizza?

While some traditional Italian seafood pizzas use a light tomato sauce, a white sauce, such as the garlic cream sauce in this recipe, is exceptionally well-suited for seafood pizza. Its buttery richness and creamy texture beautifully complement the lean protein and delicate flavors of shrimp, scallops, and other seafood, creating a harmonious and indulgent taste experience.

Which seafood toppings go best on pizza?

Many types of seafood make fantastic pizza toppings! Some of the most popular and delicious choices include cooked shrimp, prawns, scallops, calamari (squid), clams, mussels, and even lobster. For a unique touch, you could also consider flaked crab meat or delicate white fish like cod.

Can I use frozen seafood for this recipe?

Yes, absolutely! High-quality frozen shrimp and scallops can be used. Just ensure they are fully thawed according to package instructions (preferably overnight in the fridge) and thoroughly patted dry before cooking to prevent excess moisture from making the pizza soggy.

How do I prevent the crust from getting soggy?

Several factors help prevent a soggy crust: ensure your dough is rolled to an appropriate thickness (not too thin or too thick), don’t overload the pizza with too many wet toppings, and make sure your oven is preheated to a high temperature for a quick, crisp bake. Pre-baking the crust for a few minutes before adding toppings can also help.

Seafood Pizza (Pizza Frutti di Mare) Recipe

By: Jennifer Pallian BSc, RD

An easy Seafood Pizza recipe with shrimp (or prawns) and white sauce. Also known as pizza frutti di mare or fish pizza, seafood lovers will swoon.

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

Servings: 8

Ingredients

For Pizza Dough:

  • 4 cups bread flour (all-purpose works too, but the crust will be less crisp and chewy)
  • 1 envelope (2 ¼ tsp) instant or rapid-rise yeast
  • 1 ½ tsp coarse salt
  • 2 tbsp olive oil
  • 1 ¾ cups warm water

For Pizzas:

  • 2 tbsp butter
  • 1 large clove garlic, minced
  • 8 oz peeled, deveined shrimp or prawns (tails removed)
  • 8 oz scallops
  • Kosher salt (¾ tsp for seafood, ⅓ tsp for sauce)
  • 2 tbsp all-purpose flour
  • ¾ cup milk
  • 1 ½ cups grated pizza mozzarella
  • ½ cup diced tomatoes
  • ¼ cup thinly-sliced red onion
  • 2 tbsp minced parsley

Instructions

For Pizza Dough:

  1. Combine the flour, yeast, and salt in the bowl of a stand mixer fitted with a dough hook. Add the oil and water and mix on low speed until the dough comes together. Continue on low speed to knead the dough for about 10 minutes, until it forms a smooth ball. Add a bit more flour if the dough is too sticky — it should stick a bit to the bottom of the bowl, but not to the sides.
  2. Transfer to a lightly oiled bowl, cover with a clean kitchen towel, and let rise in a warm place till doubled in size, 1 to 1 ½ hours.
  3. Turn dough out onto a flour-dusted counter and cut into 4 even pieces. Shape each piece into a smooth, round ball and let rest for about 20 minutes (this makes it easier to roll out thinly). Use a rolling pin to roll out each ball into a circle of desired thickness and place dough rounds onto parchment-lined baking sheets.

For Pizzas:

  1. Preheat oven to 450ºF (230ºC).
  2. Melt the butter in a large saucepan over medium heat. Add garlic and stir until fragrant, about a minute.
  3. Pat dry shrimp and scallops and season with ¾ tsp salt. Sear on the first side, then flip and continue cooking until just opaque, 1-2 minutes. Remove shrimp and scallops and keep the garlicky butter on the stove.
  4. Place the flour in a medium bowl and whisk in about 2 tbsp of the milk to make a smooth paste. Gradually whisk in the rest of the milk, then whisk the flour-milk mixture into the garlic butter on the stove. Add ⅓ tsp salt and simmer over medium heat until the sauce thickens.
  5. Divide sauce between the prepared pizza dough rounds and top first with cheese, and then shrimp, scallops, tomatoes, and onions. Bake until the crust is golden and the cheese is bubbly, 15-20 minutes, rotating pans halfway through for even browning. Sprinkle with parsley and serve.

Notes

  • You can make the dough using the provided recipe or save time by using store-bought dough.
  • Pat the shrimp/prawns and scallops dry before searing them to prevent steaming and ensure a better sear.
  • Buy plump, large shrimp/prawns for a fantastic eating experience and presentation.
  • Whisk the flour into milk off the heat first to ensure a silky-smooth sauce and to avoid lumps from forming.
  • To finish: Up the ante with a drizzle of good olive oil, and/or a sprinkle of fresh oregano, fresh basil leaves, Parmesan cheese, and red pepper flakes if you like! A few lemon wedges on the side also make for a beautiful presentation.
