Ingredients

  • 4 Tablespoons olive oil, divided
  • 2 slices bacon, diced (optional, for topping)
  • 1 yellow onion, diced
  • 2 cloves garlic, crushed or minced
  • 1 1/2 pounds cauliflower, about half of a medium-sized head, cut into florets
  • 1 cup chicken stock or vegetable stock
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream
  • 4 ounces white cheddar, shredded, divided
  • 4 scallions, green and white parts, thinly sliced (for topping)
