Ingredients for Healthy Vinegar Coleslaw displayed on a counter
  • Cabbage: The foundation of any great coleslaw! We recommend using about half a large head of fresh white or green cabbage. Shredding it finely ensures a delicate texture that readily absorbs the dressing. You can use a sharp knife, a mandoline, or a food processor for consistent results.
  • Carrots: Adding a touch of natural sweetness and vibrant color, carrots are a must. Two medium carrots, shredded, are ideal. Alternatively, to save time, a cup of pre-shredded matchstick carrots works perfectly.
  • Radishes: These often-overlooked root vegetables provide a wonderful, subtle peppery kick and an extra layer of crunch. We suggest using about four radishes, finely shredded, to introduce a refreshing sharpness that balances the other ingredients.
  • Fresh Herbs: A generous handful of freshly chopped parsley is essential for a burst of bright, herbaceous flavor. Fresh herbs elevate the entire salad, adding a fragrant note that complements the tang of the dressing.
  • The Signature Dressing: This light and tangy dressing is what sets our coleslaw apart. It’s a simple yet powerful combination of:
    • White Vinegar: Provides the characteristic zesty base.
    • Extra Virgin Olive Oil: Adds richness and helps emulsify the dressing.
    • Honey: A touch of sweetness to balance the acidity of the vinegar. You can substitute with an equal amount of granulated sugar if preferred.
    • Dill Seeds: Offer a warm, slightly anisy flavor that pairs beautifully with cabbage.
    • Celery Seeds: Deliver a distinct, savory aroma that is classic in many coleslaw recipes.
    • Salt & Pepper: To season the dressing perfectly, enhancing all the flavors.

Exciting Recipe Variations to Customize Your Coleslaw

One of the best aspects of this Vinegar Coleslaw recipe is its adaptability. Feel free to experiment with different ingredients to create a version that perfectly suits your taste and whatever fresh produce you have on hand. Here are some fantastic ideas to inspire your culinary creativity:

  • Cabbage Choices: While we’ve used classic white cabbage for its mild flavor and crisp texture, feel free to swap it for other varieties. Red cabbage will add a beautiful pop of color and a slightly bolder flavor, while napa cabbage offers a softer, more delicate crunch. A mix of different cabbages can also create a visually appealing and texturally rich slaw.
  • Add More Vegetables: Enhance the nutritional value and visual appeal by incorporating additional crunchy vegetables. Consider finely sliced zucchini or zucchini noodles, sweet fresh corn kernels (especially in summer), thinly sliced red onion for a pungent kick, crisp bell peppers in various colors, refreshing cucumber slices, or vibrant green onions. For an extra tang, include some quick pickled vegetables or quick pickled red onions.
  • Boost with More Fresh Herbs: Beyond parsley, a medley of fresh herbs can truly transform the flavor profile. Experiment with finely chopped basil for a sweet, peppery note, cilantro for a bright, citrusy essence (especially good with Mexican-inspired dishes), refreshing mint, or additional dill for an even stronger savory aroma.
  • Explore Different Vinegars: The type of vinegar significantly impacts the dressing’s character. While white vinegar provides a clean, sharp tang, you can try other options. Apple cider vinegar offers a fruity, mellow acidity, red or white wine vinegar adds depth, rice vinegar brings a delicate sweetness, and balsamic vinegar contributes a richer, more complex flavor profile. Choose the vinegar that best complements the overall meal.
  • Introduce Seeds and Nuts for Extra Crunch: For an additional layer of texture and nutty flavor, incorporate toasted seeds or chopped nuts. Toasted sesame seeds or sunflower seeds provide a satisfying crunch, while chopped pistachios, sliced almonds, walnuts, or pecans add a gourmet touch and healthy fats.
  • Add a Fruity Twist: A touch of fruit can introduce a lovely sweetness and unexpected burst of flavor. Diced pineapple, fresh mango, or crisp apple pieces can transform your coleslaw into a more tropical or autumn-inspired dish. The sweetness of the fruit pairs wonderfully with the tangy dressing.
  • Zesty Citrus Notes: Elevate the brightness of your slaw with citrus. Grate some lemon zest or lime zest into the mix for an aromatic lift. A squeeze of fresh lemon juice or lime juice in the dressing can also amplify the overall flavor, making it even more refreshing and vibrant.

How to Make This Easy Vinegar Coleslaw

Making this refreshing vinegar coleslaw is incredibly simple and takes just a few steps. You’ll be enjoying a delicious, homemade side dish in no time!

Step 1: Prepare Your Vegetables
In a large mixing bowl, combine the shredded cabbage, carrots, and radishes. Ensure all vegetables are finely shredded for the best texture and to allow them to soak up the dressing effectively. If using a food processor, this step will be even quicker, yielding perfectly uniform shreds.

Step 2: Whisk Together the Zesty Dressing
In a separate small mixing bowl, combine all the dressing ingredients: white vinegar, extra virgin olive oil, honey (or sugar), dill seeds, celery seeds, and a pinch of salt and pepper. Whisk vigorously until the ingredients are well combined and the dressing appears slightly emulsified. Taste and adjust seasonings as needed to ensure a perfect balance of sweet, tangy, and savory flavors.

Step 3: Dress and Serve Your Slaw
Pour the prepared dressing evenly over the combined vegetables in the large bowl. Using tongs or two large spoons, gently toss the coleslaw until all the shredded vegetables are thoroughly coated with the dressing. Finish by sprinkling the freshly chopped parsley over the salad for an extra pop of color and fresh aroma.

Serve immediately for maximum crispness, or allow it to chill in the refrigerator for at least 30 minutes to let the flavors meld and deepen. This coleslaw is fantastic as a light side salad or as a flavorful, crunchy topping for your favorite sandwiches, such as classic BBQ Pork Sandwiches.

Expert Tips for the Perfect Vinegar Coleslaw

Achieving a truly exceptional coleslaw is easier than you think. Follow these expert tips to ensure your vinegar coleslaw is consistently delicious and perfectly crisp every time:

  • Utilize Your Food Processor: If you own a food processor, it’s your best friend for coleslaw preparation! Use the shredding disk to quickly and effortlessly shred all the vegetables – cabbage, carrots, and radishes – in a matter of seconds. This ensures uniform pieces, which not only look better but also absorb the dressing more evenly.
  • Smart Shortcuts for Busy Days: Short on time? Don’t hesitate to take advantage of pre-prepped ingredients. You can easily buy a bag of pre-shredded coleslaw mix from your grocery store, or opt for separate bags of shredded cabbage and matchstick carrots. These shortcuts significantly cut down on prep time without sacrificing flavor.
  • Always Taste and Adjust: The secret to any great salad is proper seasoning. Once you’ve dressed your coleslaw, take a moment to taste it. Does it need more salt? A touch more pepper? Perhaps a little extra honey for sweetness or a splash more vinegar for tang? Adjusting the seasoning to your preference makes a big difference to the overall flavor of the finished slaw.
  • Consider Making Extra Dressing: Coleslaw, especially vinegar-based versions, can absorb a lot of dressing as it sits. If you’re preparing this salad ahead of time for a picnic, party, or even for daily meal prep, it’s a great idea to make a double batch of the dressing. This way, you’ll have extra on hand to toss into the salad just before serving, ensuring it remains moist and flavorful without becoming soggy. You might also want to add a little extra olive oil and vinegar when refreshing leftovers.
  • Chill Time is Key: While delicious immediately, allowing your coleslaw to chill in the refrigerator for at least 30 minutes (or even a few hours) before serving allows the flavors to meld and deepen. The cabbage will also slightly soften, enhancing the texture while retaining its crunch.
  • Fine Shredding for Optimal Flavor: The finer you shred your cabbage and other vegetables, the more surface area there is for the dressing to coat. This leads to a more flavorful bite with every forkful.

    • Grilled Mediterranean Chicken Wings

    • Grilled Flank Steak with Dry Rub
    • Spiced Honey Lime Grilled Chicken
    • BBQ Baked Pork Chops

How to Store Your Vinegar Coleslaw

Proper storage is key to enjoying your vinegar coleslaw for several days. While it’s always best when fresh, this coleslaw holds up remarkably well as leftovers due to its mayo-free dressing.

  • Refrigeration: Once prepared, transfer any leftover coleslaw to an airtight container. Store it in the refrigerator for 4-5 days.
  • Best Quality: For the best taste and texture, try to consume the coleslaw within the first 2-3 days. After that, the vegetables may start to soften slightly, and the flavors might mellow.
  • Refreshing Leftovers: Before serving chilled leftovers, give the coleslaw a good toss. The dressing may settle at the bottom, so redistributing it will ensure every bite is flavorful. If the slaw seems a little dry or dull, you might need to add a splash more of white vinegar, a drizzle of extra virgin olive oil, and a pinch of salt and pepper to revive its freshness and zest.

Servings: 4

Ingredients

For the coleslaw:

  • 4 cups shredded cabbage, I used half a large head of cabbage
  • 1 cup shredded carrots, I used 2 medium carrots or 1 cup matchstick carrots
  • 4 radishes, shredded
  • 1/4 cup freshly chopped parsley

For the dressing:

  • 1/4 cup white vinegar
  • 3 Tablespoons extra virgin olive oil
  • 2 teaspoons honey {or you can use 2 teaspoons sugar}
  • 1/2 teaspoon dill seeds
  • 3/4 teaspoon celery seed
  • Salt & pepper to taste

Instructions

  • In a large bowl, combine the shredded cabbage, carrots, and radishes.
  • In a small mixing bowl, whisk together the white vinegar, extra virgin olive oil, honey, dill seeds, and celery seeds until well combined. Season with salt and pepper to taste.
  • Pour the dressing over the vegetables and stir until the coleslaw is evenly coated. Sprinkle the freshly chopped parsley over the salad.
  • Serve immediately as a refreshing side salad or as a crunchy topping for sandwiches, such as BBQ Pork Sandwiches.

Notes

  • For convenience, you can substitute the fresh cabbage and carrots with 1 (16oz) bag of pre-shredded coleslaw mix that includes carrots.
  • If you plan to store this salad for later or make it ahead for an event, consider preparing extra dressing. Coleslaw can absorb dressing over time, and having a bit more on hand will ensure it remains moist and flavorful when ready to serve.
  • To save time, buy pre-shredded cabbage and matchstick carrots. This makes assembling the coleslaw incredibly quick and easy.
