Instructions

  • Preheat oven to 350°F (175°C). Line 2 baking sheets with parchment paper for easy release and to prevent sticking.
  • Using an electric mixer (with the paddle attachment if using a standing mixer), beat the softened unsalted butter and granulated sugar in a large bowl for a full 5 minutes on medium speed. This extended creaming is crucial for creating airy, crackly tops. Pause twice during this process to scrape down the sides of the bowl and the beater to ensure thorough mixing.

    Next, add the two large eggs one at a time, followed by the pure vanilla extract. Continue to beat the mixture on medium-high speed until it becomes visibly light and fluffy, which should take approximately 1 minute more. Again, pause twice to scrape down the bowl and beater, ensuring all ingredients are well-incorporated.

  • In a separate medium-sized bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, baking powder, and kosher salt until all dry ingredients are thoroughly combined and evenly distributed.

    Gradually add this dry ingredient mixture to the wet mixture in the electric mixer. Beat on low speed until the ingredients are *just* combined. It is very important not to overmix the dough at this stage. Once combined, remove the bowl from the mixer and gently stir in about 3/4 of the chopped dark chocolate using a spatula, reserving the remaining chocolate for topping the cookies later.

  • Form the prepared dough into uniform 1-inch balls. For the neatest, most appealing bakery-style appearance, roll the dough balls smoothly between your palms. Alternatively, use a small cookie scoop for consistent sizing.

    Place these dough balls approximately 2 inches apart on your prepared baking sheets to allow sufficient room for them to spread during baking without touching.

  • Bake the cookies for 6 minutes. After this initial bake, carefully remove the baking sheets from the oven. This is a critical step: firmly bang the pan on the counter once or twice to intentionally deflate the cookies slightly and encourage the formation of those desirable crackly tops. Immediately after banging, press a few of the reserved chocolate chips or chunks into the centers of each cookie.

    Return the baking sheets to the oven and continue baking for approximately 3 more minutes, or until the edges of the cookies begin to firm and show further crackles, but their centers still appear soft, puffy, and slightly underdone.

    Once baked, allow the cookies to cool undisturbed on the baking sheets for 5 minutes. This crucial period allows the residual heat to finish cooking them gently, helping them set without becoming overbaked. After 5 minutes, carefully transfer the warm cookies to a wire cooling rack to cool completely.

    If desired, sprinkle with flaky salt (like Maldon) while the cookies are still warm for an exquisite sweet-salty contrast and a gourmet finish.
