- 1/2 cup yogurt, low fat plain Stonyfield
- 1 lemon, juiced (about 4 tablespoons of fresh lemon juice)
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1/4 cup fresh mint, chopped
- 1 teaspoon cumin
- 1 teaspoon honey
- Salt and pepper to taste
- 1 cup bulgur wheat
- 2 tomatoes, seeds removed, diced (1 cup)
- 1 rib celery, chopped
- 1/2 cucumber, peeled, seeded and chopped (or 2 mini cucumbers)
- 1/4 red pepper, seeds removed, chopped
- 3 green onions, chopped
- 1 cup curly parsley, chopped
- Salt and pepper to taste
Instructions

Put 1 cup bulgur in a medium mixing bowl with 1 cup boiling water. Let sit for one hour.

In a small mixing bowl whisk together low fat plain yogurt, lemon juice, olive oil, garlic, fresh mint, cumin, honey and salt and pepper. Cover and put in the refrigerator to chill.
