Elevate your meals with this incredibly **Easy Curtido Recipe**, a vibrant Salvadoran fermented cabbage relish that brings a burst of color, tang, and satisfying crunch to any plate. Forget bland sides – this crisp, slightly sour blend of cabbage, carrots, chili, and onion can be prepped in just 15 minutes and is ready to enjoy in as little as 6 hours. Not only is it a delicious addition, but its versatility knows no bounds, making it the perfect companion for sandwiches, juicy burgers, savory tacos, or authentic pupusas.

I absolutely adore preparing this simple Curtido recipe. It’s a fantastic way to infuse any meal with incredible flavor, invigorating crunch, and delightful texture. The entire batch can be assembled in minutes and then refrigerated, ready for when you need that zesty kick. Curtido is a traditional fermented cabbage vegetable relish, akin to a tangy slaw, originating from the culinary heart of El Salvador. Many recognize it fondly as Salvadoran curtido or Salvadoran cabbage slaw.
While often compared to sauerkraut, Curtido distinguishes itself as a Central American staple. Both are fermented vegetable dishes, but Curtido typically incorporates a mix of vegetables beyond just cabbage, often including carrots, onions, and chilies, giving it a unique, brighter flavor profile. Sauerkraut, primarily German in origin, focuses almost exclusively on fermented cabbage. Unlike mere pickling, where vegetables are preserved in an acidic brine, fermentation allows beneficial bacteria to flourish, developing complex flavors and enhancing nutritional value. This process links Curtido culturally to German sauerkraut and Korean kimchi, celebrated for their fermented goodness.
When I’m crafting a batch of Cod Fish Tacos or any other Mexican-inspired dish, a jar of this crisp, slightly acidic Curtido is always within reach in my refrigerator. It pairs wonderfully with pupusas, burritos, enchiladas, and even rich bratwurst. For a warming soup accompaniment, try it with Slow Cooker Mexican Chicken Lime Soup, or add an unexpected tang to your lunch with a Chickpea Salad Sandwich. If you appreciate the refreshing taste of sour and crunchy vegetables, you’ll also love my Refrigerator Dill Pickles or my Quick Pickled Red Onions.
Why Curtido Is A Must-Try Addition to Your Kitchen
Beyond its incredible taste and texture, Curtido offers a multitude of reasons to become a staple in your home. It’s not just a side dish; it’s a flavor enhancer, a texture transformer, and a nutritious boost all in one. Here’s why you’ll fall in love with this easy recipe:
- Explosion of Flavor: The combination of crisp cabbage, sweet carrots, pungent onion, and spicy chili, all brought together by a tangy vinegar brine, creates a complex flavor profile that is both refreshing and addictive.
- Satisfying Crunch: The thinly sliced vegetables maintain a delightful crunch, providing a much-needed textural contrast to softer dishes. This isn’t your average soggy coleslaw!
- Healthy & Probiotic-Rich: While this particular recipe uses a quick pickling method, the initial salt treatment and resting period can kickstart a mild fermentation. Fermented foods are known to support gut health and offer beneficial probiotics, making Curtido a delicious way to nurture your well-being.
- Incredibly Versatile: From traditional Salvadoran pupusas to modern tacos, burgers, and even grain bowls, Curtido complements a vast array of cuisines and dishes.
- Quick and Easy: With only 15 minutes of active preparation time and a mere 6 hours of resting, you can have a fresh batch of homemade Curtido ready for dinner tonight. No complex canning or long fermentation periods required for this quick version!
- Vibrant and Colorful: The mix of green and red cabbage, bright orange carrots, and white onion creates a visually appealing relish that brightens up any meal.
Essential Ingredients for Vibrant Curtido

Creating this flavorful Curtido requires just a few simple, fresh ingredients. For precise measurements and step-by-step instructions, please refer to the dedicated recipe card further down this page.
- Cabbage: This recipe calls for about half a large head of cabbage. I highly recommend using a mixture of both green and red shredded cabbage. The green cabbage offers a classic crispness, while the red cabbage adds a beautiful pop of color and a slightly earthier flavor. Thinly shredded cabbage is key for the best texture and absorption of flavors.
- Carrots: Grated carrots are an essential addition, contributing a delightful sweetness that balances the tanginess of the vinegar, as well as an appealing color and additional crunchy texture.
- Onion: Both red onion or white onion work wonderfully in this recipe. Red onions tend to have a slightly sharper bite and beautiful purple hue, while white onions offer a milder, more classic onion flavor. Choose based on your preference.
- Chili Pepper: For a pleasant kick, I typically use two thinly sliced serrano peppers. However, you can easily substitute with jalapeño peppers for a milder heat, or even a spicier habanero if you dare. This ingredient is entirely optional; feel free to adjust the quantity to suit your preferred spice level, or omit it altogether for a completely mild relish.
- Salt: Using good quality sea salt or kosher salt is crucial. Salt not only seasons the vegetables properly but also helps draw out moisture from the cabbage, contributing to its crisp texture and aiding in the pickling process.
- Vinegar: White vinegar is my go-to for this recipe as it provides a clean, sharp acidity that truly makes the Curtido sing. However, apple cider vinegar can be used as an alternative; it will impart a slightly fruitier, mellower tang.
- Water: The key to this quick Curtido recipe is using boiling water to cover the vegetables. This rapid heat helps to soften the vegetables slightly while maintaining their crispness and ensures proper infusion of the flavors. Cold or warm water will not yield the same desired results.

Ways to Modify and Customize Your Curtido
One of the joys of making homemade Curtido is how easily it can be adapted to suit your personal taste and what you have on hand. Don’t be afraid to experiment with these delicious variations:
- Adjust the Spice Level: If you crave more heat, swap the serrano chili for a spicier pepper like a habanero or a Scotch bonnet. For a milder touch, use fewer chilies, remove the seeds and membranes, or opt for a mild poblano. A pinch of crushed red pepper flakes can also add an extra hint of warmth.
- Add More Vegetables: This pickling method works beautifully for a variety of vegetables. Consider adding thinly sliced cucumber, zucchini, bell peppers (any color), or even radishes for additional crunch and flavor. Ensure all additions are sliced thinly for even pickling.
- Incorporate Fresh Herbs: Fresh herbs can greatly enhance the aromatic complexity of your Curtido. Try adding a handful of fresh oregano (Mexican oregano is particularly authentic), cilantro, dill, or parsley along with the other vegetables. Their vibrant notes will infuse the relish as it rests.
- Boost Acidity with Citrus: For an extra layer of bright flavor, a small squeeze of fresh lime or lemon juice can be added to the mixture before jarring. Start with just a teaspoon or two and adjust to taste.
- Garlic Infusion: Thinly slice a couple of garlic cloves and add them to the mixture for a pungent, savory depth that complements the other flavors beautifully.
- A Touch of Sweetness: If you find the Curtido too tart, a tiny pinch of sugar (white or brown) can help balance the acidity, though traditional Curtido is usually savory and sour.

How to Make Easy Curtido: A Step-by-Step Guide
Making homemade Curtido is surprisingly simple and quick. Follow these steps for perfect, crisp results every time:
Optional Pre-Salting Step: For extra crispness and to help draw out excess moisture, toss the shredded cabbage in 1 teaspoon of salt (not including the recipe’s specified salt amount) in a large bowl. Let it sit for 15-20 minutes. You’ll notice water pooling at the bottom of the bowl. Drain the liquid and gently squeeze out any remaining moisture from the cabbage before proceeding with the recipe. This step helps the cabbage stay wonderfully firm yet tender.
Step 1: Prepare Your Vegetables: Begin by thoroughly washing and preparing all your vegetables. The key to the best Curtido texture and flavor absorption is thinly slicing them. Use a sharp chef’s knife for precise, thin cuts, or for even faster and more consistent results, employ a mandoline slicer or a food processor with a slicing attachment.

Step 2: Combine and Season: In a large mixing bowl, combine the thinly sliced cabbage, grated carrots, sliced onion, and serrano chilies (if using). Add the specified amount of sea salt and white vinegar. Using your hands or a large spoon, give everything a really good toss. Ensure all the vegetables are evenly coated with the salt and vinegar. This initial mix is crucial for distributing flavor.

Step 3: Jar the Curtido: Carefully transfer the combined vegetable mixture into a large, clean mason jar, or divide it among several smaller mason jars. Pack the vegetables down firmly, removing as many air pockets as possible. This ensures the vegetables remain submerged in the liquid. Pour the freshly boiling water over the packed vegetables, making sure they are completely covered. The boiling water is essential for the quick softening and flavor infusion of this recipe. Screw on a tight-fitting lid immediately. Remember, always use hot water for this step – cold or warm water will not work.

Step 4: Refrigerate and Enjoy: Once the jars are sealed, place them into the refrigerator. Allow the Curtido to rest for a minimum of 6 hours. Ideally, for the best flavor development, let it sit overnight. The flavors will deepen and meld beautifully as the vegetables ferment slightly in the fridge, resulting in a more complex and satisfying relish. Give it a gentle shake or stir before serving.
Recipe Tip: Patience is a virtue here! While you can technically eat it after 6 hours, Curtido truly shines after sitting for at least 12-24 hours. The extended time allows the flavors to deepen and mature, creating a more harmonious and tangy profile.

Storage and Longevity: Keeping Your Curtido Fresh
Proper storage is essential to maintain the crispness and flavor of your homemade Curtido. Store your Curtido in a tightly sealed container or mason jars in the refrigerator. It will stay fresh and delicious for up to a week. You might notice that the flavor profile evolves slightly over time as it continues to marinate and mildly ferment in the fridge, often becoming even more complex and tangy.
Pro Tip: Always ensure the vegetables remain submerged under the liquid. This prevents them from drying out and helps maintain their freshness and vibrant color. If necessary, gently press them down with a clean spoon before re-sealing the jar.
How to Enjoy Your Homemade Curtido: Versatile Serving Ideas
The beauty of Curtido lies in its incredible versatility. These deliciously crisp and slightly sour vegetables complement a wide array of dishes, making them a fantastic addition to almost any meal where you crave extra crunch, tang, and flavor. This vibrant side dish is a natural fit for traditional Latin American cuisine, but it also shines when paired with many other global flavors.
Here are some of my favorite ways to incorporate these crunchy, flavorful veggies into your meals:
- Rice Bowls & Grain Bowls: Add a generous spoonful to give a fresh, zesty contrast to hearty rice bowls. It’s fantastic with my Slow Cooker Cuban Pork Rice Bowl, Mediterranean Buddha Bowl, Chicken Shawarma Rice Bowl, or this Mediterranean Baked Turkey Meatball Rice Bowl.
- Tacos, Burritos, and Enchiladas: Curtido is the ultimate topping for Mexican and Tex-Mex dishes. It cuts through richness and adds essential texture. I particularly love it with these Slow Cooker Shredded Beef Tacos, Easy Cod Fish Tacos, Tilapia Fish Tacos, or even Southwest Breakfast Egg Tacos.
- Sandwiches & Burgers: Replace traditional pickles or coleslaw with Curtido on your favorite sandwiches, hot dogs, pulled pork sliders, or grilled burgers for an unexpected burst of flavor and crunch. It’s a game-changer!
- Breakfast Dishes: Brighten up your breakfast routine by adding Curtido to scrambled eggs, omelets, or breakfast burritos for a tangy kick to start your day.
- Grilled Meats & Sausages: Serve it alongside grilled chicken, steak, pork chops, or sausages (like bratwurst) to provide a fresh counterpoint to rich flavors.
- As a Simple Side Dish: Enjoy it straight from the jar as a refreshing, healthy side to almost any main course.
- Other Mexican-Inspired Dishes: A few other ways I love to use them is to add them to this Chilaquiles Recipe, Slow Cooker Mexican Beef Brisket, or this Mexican Zucchini.
Frequently Asked Questions About Easy Curtido
For achieving consistently thin slices, a mandoline slicer is your best friend. It makes quick work of cabbage, carrots, and onions, ensuring an even texture. Alternatively, a food processor with a slicing attachment can speed up the process. If you’re using a sharp chef’s knife, take your time and aim for uniform, delicate strips for the best results.
The most important tip is to ensure that all the vegetables are completely submerged under the liquid in the jar. This creates an anaerobic environment that keeps them fresher longer and prevents oxidation and drying out. After filling, gently press the vegetables down with a clean utensil to release any trapped air bubbles and ensure they are fully immersed. If needed, add a little extra boiling water to cover them before sealing.
While white vinegar provides a crisp, clean acidity, you can certainly experiment. Apple cider vinegar will give your Curtido a slightly fruitier and milder tang. Rice vinegar could also work for a different subtle flavor profile. Just ensure you use a vinegar with at least 5% acidity for proper preservation and flavor development.
This “Easy Curtido” recipe is a quick pickling method that mimics the flavors of a traditional fermented Curtido, but it does not involve the lengthy, wild fermentation process of its classic counterpart. The boiling water and refrigeration allow for a rapid infusion of flavors and a very mild, short-term fermentation if any. For true, deep probiotic benefits and complex fermented flavors, a traditional longer fermentation method would be required. However, this quick version delivers fantastic taste and crunch in a fraction of the time!
Absolutely! This recipe scales up very well. Simply double or triple the ingredients, ensuring you have enough large jars or a very large container to hold the mixture. The preparation and resting times remain the same. Having a big batch on hand is perfect for meal prepping or entertaining!
