Curried Butternut Squash Soup

Ingredients
- 2 tablespoons of olive oil
- 1 cup yellow onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated or minced
- 2 tablespoons red curry paste
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 3 pounds butternut squash, peeled and cubed {about 4½ cups uncooked 1-inch cubes}
- 3 cups vegetable broth
- 1 – 15 ounce can coconut milk, divided
- 1/2 of a lime, juiced {about 1 tablespoon}
- 1/2 cup cilantro, chopped {plus more for garnish}
- Peanuts or chickpeas can be added for crunch at the end
Instructions

Heat a large pot or dutch oven over medium heat. Add the olive oil, onion, garlic, and ginger and cook just until onions begin to soften.
