Ingredients

  • 4 chicken breast
  • 2 eggs, beaten
  • 1/4 cup coconut milk
  • 1/2 cup coconut flour
  • 3/4 cup shredded coconut, unsweetened (you can use sweetened if you want)
  • 1/2 cup Mauna Loa Dry Roasted Unsalted Macadamia Nuts, pulsed in a food processor or blender
  • 4 Tablespoons coconut oil
  • 1 – 20 oz. DOLE Pineapple Slices, Chopped
  • 1/4 red onion, finely chopped
  • 1/2 red bell pepper, chopped
  • 1 jalapeño, seeds and membranes removed, chopped (optional for spice)
  • 1 teaspoon lime juice
  • Salt , to taste
  • King’s Hawaiian Deluxe Hamburger buns

Instructions

  • Set out three shallow bowls and a large plate. In the first bowl add the coconut flour. In the second bowl, beat the two eggs and then add the coconut milk and stir until combined. In the third bowl, add the shredded coconut and the crushed macadamia nuts and stir well to combine.
  • Dredge each chicken breast filet thoroughly in the coconut flour, ensuring it’s completely coated. Next, dip the chicken into the egg and coconut milk mixture, making sure the entire surface is wet. Finally, dredge the chicken generously in the coconut macadamia mixture until it is fully coated. Place the breaded chicken on the large plate. Repeat this process for all remaining chicken filets.
  • In a large frying pan, heat 2 Tablespoons of coconut oil over medium heat until shimmering. Carefully add the breaded chicken filets to the pan. Cook the chicken for 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C) and the crust is golden brown and crispy. Add more coconut oil as needed for subsequent batches if cooking in batches.
  • While the chicken is cooking, prepare your fresh pineapple salsa. In a medium bowl, combine all the salsa ingredients: chopped DOLE pineapple, finely chopped red onion, chopped red bell pepper, the chopped jalapeño (if using), lime juice, and salt. Mix gently to combine all the vibrant flavors. Taste and adjust seasoning if necessary.
  • Once the Macadamia Coconut Crusted Chicken is cooked, serve it immediately on a toasted King’s Hawaiian Deluxe Hamburger bun. Generously top each chicken breast with the fresh, zesty pineapple salsa. Enjoy this tropical delight warm!
