How to Make Turkey Tikka Kebabs: An Easy Guide
The kebabs come together quickly once the turkey has marinated. Follow these steps for the best results.



Mix the Marinade
Whisk together yogurt, minced garlic, paprika, cayenne, minced ginger, garam masala, and salt in a large bowl until you have a thick, richly colored paste.
Marinate the Turkey

Cook until the meat releases easily from the grates, flip to get good grill marks, then move the skewers to the cooler side, close the lid, and continue cooking until the internal temperature reaches 165°F. Total cooking time is about 8–12 minutes depending on your grill and piece size.

Tandoori Turkey Skewers (with Cucumber Raita)
Ingredients
- 1 cup plain full-fat Greek yogurt
- 2 tbsp minced garlic
- 1 ½ tbsp paprika
- 1 tsp cayenne
- 1 tbsp minced ginger
- 1 tbsp garam masala
- ¾ tsp kosher salt
- 1 3-lb Butterball Boneless Turkey Breast Roast thawed and cut into bite-sized pieces
- Oil for grill grates
- Cucumber Raita
Instructions
- Whisk together the yogurt, garlic, paprika, cayenne, ginger, garam masala, and salt in a large bowl. Add the turkey and rub the marinade all over to coat. Cover and let stand for 1 hour at room temperature or up to 48 hours refrigerated.
- Thread the turkey onto metal skewers. Oil the grill grates and preheat on medium-high, lighting half the burners and leaving a cooler area on the grill.
- When the grill is very hot, place skewers over direct heat and cook until the meat releases easily from the grates. Flip and cook until well marked on all sides.
- Move the skewers to the unlit portion of the grill, close the lid, and continue cooking until the internal temperature reaches 165°F, about 8–12 minutes total.
Notes
- Chicken substitute: You can use 3 lbs of boneless, skinless chicken thighs or breasts instead of turkey.
- Salt adjustment: If substituting unbrined chicken, you may need to increase salt to taste.
