How to Make Chicken and Potato Soup

Step 1 — Soften the vegetables. Melt butter in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until they begin to soften and the onion is translucent at the edges, about 5–6 minutes.

Step 2 — Build the base. Add garlic and cook about 30 seconds until fragrant. Sprinkle in flour and stir constantly for 1 minute to cook out the raw flour taste. Gradually pour in the broth, scraping the bottom so the flour dissolves into the liquid.
