For those who frequently visit our kitchen, my deep affection for lentil soups is probably no secret. As the cooler months arrive, our rotation of lentil-based recipes grows exponentially, becoming an indispensable part of our seasonal menu.
Lentils are truly a culinary marvel, and I adore incorporating them into soups for myriad reasons. They bring an incredible heartiness and satisfying fullness to any dish, making meals substantial and incredibly gratifying. Beyond their satisfying texture, lentils are a nutritional powerhouse, packed with plant-based protein, fiber, and essential minerals, contributing significantly to a healthy diet. Their unique ability to be pureed into a silky-smooth, creamy texture without the need for heavy cream or dairy is particularly appealing, especially when crafting vegan and dairy-free options. In today’s standout Lentil Tomato Soup, humble red lentils are elevated to new heights. They are thoughtfully paired with a vibrant medley of roasted heirloom tomatoes (for their intense, sun-kissed flavor), sweet bell peppers, pungent garlic, and aromatic onions. The flavor profile is further enhanced by a carefully chosen blend of warm spices, including classic Italian seasoning, a generous dash of smoked paprika, earthy turmeric, and the star ingredient: chipotle chili powder.
My preference for chipotle chilies stems from their unparalleled ability to infuse a distinct, deep smoky flavor that transforms any dish. Their versatility is truly endless, shining not only in soups and stews but also in marinades, dry rubs, and sauces. If you appreciate this unique smoky characteristic, I highly recommend exploring it in some of my other popular recipes such as Vegetarian Chili, the robust Albondigas en Chipotle, a flavorful Grilled Flank Steak Dry Rub, and the tantalizing Chicken Tinga.

- Effortless Meal Prep: One of the greatest advantages of this soup is its make-ahead potential. You can easily prepare it earlier in the day, or even a full day in advance. Simply allow it to cool completely before storing it in the refrigerator. In fact, we find that the flavors deepen and meld together beautifully when given time to rest, making it taste even better the next day. Essential Ingredients & Smart Substitutions for Lentil Tomato Soup

Creating this flavorful Lentil Tomato Soup begins with a selection of simple, wholesome ingredients. Below is a comprehensive overview of what you’ll need, along with helpful suggestions for substitutions to accommodate various preferences or what you might have on hand. For precise measurements and step-by-step instructions, please refer to the detailed recipe card further down the page.
- Olive Oil (Divided): A foundational ingredient for roasting vegetables and sautéing spices. Extra virgin olive oil offers the best flavor.
- Fresh Tomatoes: I lean towards heirloom tomatoes for their incredibly rich, deep, and robust flavor profile, which truly shines after roasting. However, feel free to use any variety you prefer; firm vine-ripened tomatoes or Roma tomatoes are excellent and widely available alternatives. For convenience or when fresh tomatoes are out of season, high-quality canned tomatoes work wonderfully – fire-roasted or crushed tomatoes can add an excellent depth of flavor.
- Red Bell Pepper: A large red bell pepper contributes a beautiful natural sweetness and vibrant color once roasted. Yellow, orange, or even green bell peppers are perfectly suitable substitutes, though green bell peppers will offer a slightly more bitter note.
- Garlic: A whole head of garlic, roasted until sweet and mellow, is a critical flavor component. The roasting process transforms its sharp bite into a creamy, aromatic delight.
- White Onions: Medium white onions, quartered and roasted, add a fundamental savory sweetness to the soup. Yellow onions can be used interchangeably.
- Salt: Essential for seasoning and bringing out the natural flavors of the vegetables and spices. Adjust to taste.
- Italian Seasoning: A fragrant blend of herbs like oregano, basil, thyme, and rosemary that provides a classic, aromatic backdrop. You can also create your own blend or use individual dried herbs.
- Chipotle Chili Powder: This is our secret weapon for that irresistible smoky heat. If you prefer a milder soup or don’t have chipotle powder, regular chili powder can be used instead, though the smoky nuance will be less pronounced. For extra depth, you can also include some smoked paprika.
- Smoked Paprika: Enhances the smoky profile and adds a lovely warm, earthy note and vibrant color. Do not confuse it with sweet or hot paprika; smoked paprika is key here.
- Turmeric: Contributes a beautiful golden hue and an earthy, slightly peppery flavor with incredible health benefits.
- Black Pepper: A universal spice that adds a subtle warmth and balances other flavors.
- Red Lentils: These quick-cooking lentils break down easily, helping to thicken the soup and adding a fantastic source of plant-based protein. Remember to rinse them thoroughly and pick through for any small debris before cooking. While red lentils are ideal for their texture, you can also use canned green, yellow, or brown lentils for convenience. If using canned, ensure they are thoroughly drained and rinsed before adding them to the soup.
- Vegetable Broth: The liquid base for our soup. Use a good quality vegetable broth to ensure a rich, savory flavor. Low-sodium broth is a good option if you prefer to control the salt content.
- Chipotle Chili Peppers in Adobo Sauce: For an extra layer of smoky heat and a hint of tang, two chopped chipotle peppers from a can of adobo sauce are fantastic. These are quite potent, so adjust the quantity to your heat preference. You can omit them if you prefer a milder soup or increase them for a bolder kick.
- Fresh Parsley or Cilantro (Garnish): Fresh herbs add a burst of color and freshness, elevating the soup’s presentation and taste.

How to Craft This Flavorful Lentil and Tomato Soup
Creating this delightful Lentil Tomato Soup is a journey of simple steps, culminating in a deeply satisfying and nourishing meal. The secret to its incredible depth of flavor lies in roasting the vegetables, which caramelizes their natural sugars and intensifies their taste. Follow these steps for a perfect bowl every time:
Step 1. Prepare Your Vegetables for Roasting: Begin by preheating your oven to a robust 425 degrees F (220 degrees C). To ensure easy cleanup and prevent sticking, line one large baking sheet (or two medium ones, if preferred, to avoid overcrowding) with parchment paper. This step is crucial for even roasting.
Carefully halve your red bell peppers, removing the seeds and any white pith, then place them skin-side up on the prepared baking sheet. This orientation allows the skin to char slightly, infusing a lovely smoky note. Next, quarter your onions and tomatoes, adding them to the same baking sheet, ensuring they have enough space to roast without steaming.
Step 2. Season and Prepare the Garlic: In a small bowl, combine all of your measured seasonings: Italian seasoning, smoked paprika, turmeric, salt, and black pepper. This creates a balanced spice blend. Drizzle 2 tablespoons of extra virgin olive oil generously over the prepared vegetables on the baking sheet. Sprinkle half of your seasoning blend over them, then use your hands to gently toss and coat all the vegetables evenly. Ensure they are well-seasoned for maximum flavor.
For the garlic, slice approximately ½ inch off the very top of the garlic bulb, exposing the individual cloves. Place the entire bulb in a piece of aluminum foil, drizzle with the remaining 1 tablespoon of olive oil, and wrap it securely. This protects the garlic and allows it to roast until incredibly soft and sweet.

Step 3. Roast the Vegetables to Perfection: Carefully transfer the baking sheet, along with the foil-wrapped garlic bulb, to your preheated oven. Allow the vegetables to roast for approximately 35 minutes. Keep an eye on them, as roasting times can vary. You’ll know they’re ready when the skin of the bell pepper begins to char and blister, and the tomatoes and onions are tender and slightly caramelized. The aroma filling your kitchen will be incredible! Once roasted, remove the vegetables from the oven and set them aside.
Step 4. Assemble and Simmer the Soup: While your vegetables are roasting, heat a large Dutch oven or a sturdy soup pot over medium-high heat on your stovetop. Once the pot is thoroughly warmed, add the remaining 1 tablespoon of olive oil, followed by the second half of your seasoning blend. Toast the spices gently for about one minute, stirring constantly, until they become incredibly fragrant. This step awakens their flavors.
Next, add the thoroughly rinsed red lentils to the pot, followed by 4 cups of vegetable broth. Carefully unwrap the roasted garlic bulb; the cloves should be soft enough to easily squeeze out directly into the pot. Add the rest of your beautifully roasted vegetables (tomatoes, bell peppers, onions) to the Dutch oven, along with the chopped chipotle chili peppers in adobo sauce. Stir everything together to combine. Bring the soup to a rolling boil, then immediately reduce the heat to low, cover the pot with a lid, and allow it to simmer gently for about 15 minutes, or until the lentils are tender and cooked through.

Step 5. Puree and Serve Your Delicious Soup: Once the lentils are soft and the soup has simmered, it’s time to achieve that wonderfully creamy texture. For ultimate convenience, use an immersion blender directly in the pot to purée the soup until it reaches your desired smoothness. If you don’t have an immersion blender, carefully ladle the soup into a high-speed blender in batches. Remember to let the soup cool for about 10-15 minutes before blending hot liquids to prevent pressure buildup. Blend until smooth and creamy.
If you find the soup is too thick for your preference, gradually add a little extra vegetable broth until it reaches the perfect consistency. Taste and adjust seasonings if needed.
Serve your hearty Lentil Tomato Soup warm, garnished generously with a sprinkle of fresh red pepper flakes for an extra kick, a handful of freshly chopped cilantro or parsley for brightness, and for a touch of creamy indulgence, a dollop of cool Greek yogurt (or a dairy-free alternative for a fully vegan option). Pair it with crusty bread or a side salad for a complete and satisfying meal.

Expert Tips & Creative Modifications for Your Lentil Tomato Soup
This Lentil Tomato Soup recipe is wonderfully versatile, allowing for a variety of adjustments and enhancements to suit your taste and dietary needs. Here are some expert tips and creative modifications to help you make it truly your own:
- Lentil Variations: While dried red lentils are ideal for their quick cooking time and ability to break down into a smooth texture, you have options. For added convenience, you can substitute with canned green, yellow, or brown lentils. Just be sure to drain and rinse them thoroughly before adding them to the soup to remove excess sodium and preserve flavor. Note that other lentil varieties may not break down as much, resulting in a chunkier soup, which can also be delicious!
- Boosting the Vegetable Content: To make your soup even heartier and more nutrient-dense, consider adding a greater variety of vegetables. Finely diced carrots and celery can be roasted alongside the other vegetables to build a classic flavor base. Sliced mushrooms or zucchini can be added during the last 10-15 minutes of simmering. This is a fantastic way to use up any vegetables you have on hand.
- A Bright Citrus Finish: A squeeze of fresh lemon juice, added just before serving, can work wonders. Its bright acidity cuts through the richness of the soup, balancing the flavors and adding a refreshing zest that truly awakens the palate. Don’t underestimate this simple but impactful addition!
- Customizing the Chili Heat: This recipe intentionally includes both chipotle chili powder and two chipotle peppers in adobo sauce to deliver a robust smoky kick. If you prefer a milder soup, simply reduce the amount of chili powder or omit the adobo peppers. For those who love a fiery experience, feel free to increase the quantity of chipotle peppers or even add a pinch of cayenne pepper for extra warmth.
- Incorporating Leafy Greens: For an extra boost of vitamins and a touch of freshness, stir in a handful of leafy greens such as fresh spinach, peppery arugula, nutrient-rich chard, or tender kale during the last 2-3 minutes of cooking. This allows them to wilt perfectly without becoming overcooked or losing their vibrant color and texture.
- Achieving Your Perfect Consistency: An immersion blender is your best friend for quickly pureeing the soup directly in the pot. Blend until you achieve your desired level of smoothness – from a chunky, rustic texture to a silky, creamy consistency. If, after blending, the soup seems too thick, gradually stir in additional vegetable broth (or even a little water) until it reaches your preferred consistency.
- Adding Protein (Non-Vegan Option): For those who aren’t strictly vegan, a sprinkle of crumbled feta cheese or a swirl of plain Greek yogurt makes a wonderful topping, adding a creamy, tangy contrast. You could also stir in cooked shredded chicken or a hard-boiled egg for extra protein.
- Serving Suggestions: This soup is fantastic on its own, but it also pairs beautifully with a slice of crusty bread for dipping, a fresh green salad, or even a grilled cheese sandwich for a truly comforting meal.

Storage & Freezing Tips for Lentil Tomato Soup
One of the many wonderful aspects of this Lentil Tomato Soup is how well it stores, making it perfect for meal prep and future enjoyment.
- Refrigerating Leftovers: Once the soup has been cooked and allowed to cool completely to room temperature, transfer any leftover portions into an airtight container. Store it in the refrigerator for up to 5 days. The flavors often deepen and improve overnight!
- Freezing for Later: This soup is an excellent candidate for freezing. Ensure the soup is entirely cooled before proceeding. Ladle individual portions into freezer-safe containers or heavy-duty freezer bags (laying them flat to freeze saves space). Properly stored, the soup will keep beautifully in the freezer for up to 3 months. When ready to enjoy, simply thaw overnight in the refrigerator or gently reheat from frozen on the stovetop or in the microwave, adding a splash of broth if needed to adjust consistency.

Ingredients
- 1/4 cup olive oil, divided
- 2 pounds heirloom tomatoes, or tomatoes of your choice
- 1 large red bell pepper, halved, seeds removed
- 1 large bulb of garlic
- 2 medium white onions, quartered
- 1/2 teaspoon salt
- 1 teaspoon Italian seasoning
- 1 teaspoon chipotle chili powder, or you can use regular chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon turmeric
- 1/8 teaspoon black pepper
- 1 cup red lentils, rinsed and picked through for debris
- 4 cups vegetable broth
- 2 chipotle chili peppers in adobo sauce, chopped
- freshly chopped parsley or cilantro, to garnish
Instructions
-
Preheat your oven to 425 degrees F (220 C) and line a large baking sheet (or two medium baking sheets) with parchment paper. Halve the red bell peppers, remove seeds, and place them skin side up on the baking sheet. Quarter the onions and tomatoes and add them to the sheet as well, ensuring not to overcrowd.
-
In a small bowl, mix all of the seasonings together (salt, Italian seasoning, chipotle chili powder, smoked paprika, turmeric, black pepper). Drizzle 2 tablespoons of olive oil over the vegetables, then sprinkle half of the seasoning blend over them. Toss the vegetables well to ensure they are evenly coated.
-
Slice about ½” off the top of the garlic bulb to expose the cloves. Place the garlic bulb in aluminum foil and drizzle with 1 tablespoon olive oil. Wrap tightly.
-
Place the baking sheet with the vegetables and the foil-wrapped garlic bulb in the oven. Roast for 35 minutes, or until the bell pepper skin begins to char and blister, and the vegetables are tender and slightly caramelized. Remove from the oven.
-
Heat a large Dutch oven or heavy-bottomed soup pot on medium heat. Once warmed, add the remaining 1 tablespoon olive oil and the second half of the seasoning blend. Toast for about a minute, stirring constantly, until fragrant.
-
Add the rinsed lentils and 4 cups of vegetable broth to the pot. Squeeze the soft roasted garlic cloves out of the bulb and add them, along with all the remaining roasted vegetables and chopped chipotle chili peppers in adobo sauce, to the pot. Stir everything together and bring the soup to a boil. Then, reduce the heat to low, cover with a lid, and simmer for 15 minutes or until the lentils are soft and fully cooked.
-
Once the lentils are tender, use an immersion blender to purée the soup directly in the pot until it reaches your desired creamy consistency. If you don’t have an immersion blender, let the soup cool for about 10-15 minutes, then carefully transfer it in batches to a high-speed blender to purée. If you desire a thinner soup, add some extra vegetable broth. Garnish with fresh cilantro or parsley and a dollop of Greek yogurt (or a dairy-free alternative) before serving.
Notes
- Puree the soup: For a super smooth consistency, use a stick (immersion) blender directly in the pot. If you prefer a slightly chunkier soup, blend only half of it. If the soup becomes too thick after pureeing, simply add a splash of extra vegetable broth or water to thin it down to your desired consistency.
- Leftovers: Any cooked and cooled leftover soup can be stored in an airtight container in the refrigerator for up to 5 days. The flavors tend to deepen beautifully over time!
- Freeze: This soup freezes exceptionally well. Once completely cooled, transfer the soup into airtight, freezer-safe containers. It can be stored in the freezer for up to 3 months, providing a convenient and healthy meal solution whenever you need it.
