  • 16 ounces of pasta (your choice, smaller pasta works best like elbow macaroni)
  • 3 cups sharp cheddar, shredded (divided)
  • 2 cups mozzarella cheese, shredded (divided)

  • 2 cups whole milk
  • 2 cups heavy cream

Instructions

  1. Lightly spray a casserole dish with cooking oil or butter. If using a cast iron skillet, you can bake directly in it. Set aside. Preheat your oven to 325°F (160°C).
  2. Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Drain well and toss with a small amount of olive oil to prevent sticking. Set aside.
  3. While the pasta cooks, melt the 6 tablespoons of butter in a large skillet or saucepan over medium-low heat.
  4. Gradually whisk in the 1/3 cup all-purpose flour slowly, continuing to whisk constantly for 1-2 minutes until it becomes bubbly and light golden.
  5. Slowly whisk in the 2 cups whole milk and 2 cups heavy cream until the mixture is smooth. Continue whisking over medium heat until it begins to thicken and shows gentle bubbles on the surface.
  6. Whisk in the 1 teaspoon paprika, 1 teaspoon ground mustard, 1/4 teaspoon black pepper, and 1/2 teaspoon sea salt. Continue whisking for 2 more minutes to allow flavors to meld and sauce to thicken further.
  7. Remove the skillet from the heat. Add 1 cup sharp cheddar cheese and 1 cup mozzarella cheese. Whisk until completely smooth and melted. Then, add another 1 cup sharp cheddar and continue whisking until it thickens into a rich, creamy sauce.
  8. Stir in the cooked pasta until it is thoroughly combined and coated with the cheesy sauce.
  9. Pour the mac and cheese mixture into your prepared baking dish or leave it in the large skillet (if oven-safe). Evenly spread the remaining 1 cup sharp cheddar cheese and 1 cup mozzarella cheese over the top.
  10. Sprinkle the 1 cup of panko breadcrumbs evenly over the cheese layer.
  11. Bake in the preheated oven at 325°F (160°C) for 15 minutes, or until the cheese is bubbly and the breadcrumbs are golden brown and crispy.
