- 2 tbsp peanut or vegetable oil
- 4-6 tbsp Thai green curry paste (adjust to preferred spice level)
- 1 398 mL (14 oz) can coconut milk
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 ½ lb (680 g) scallops (fresh or thawed)
For the Corn Relish
- 1 cup corn kernels (fresh or thawed if frozen)
- 1 tbsp peanut or vegetable oil
- 1 tbsp minced cilantro
- 2 tsp fresh lime juice
- 1 green Thai chili (minced, remove seeds for less heat)
- 1 ½ tsp minced red onion or shallot
- ¼ tsp kosher salt
Instructions

In a large skillet or saucepan, heat 2 tablespoons of peanut or vegetable oil over medium heat. Add 4 tablespoons of Thai green curry paste and sauté gently for about 1-2 minutes until it becomes wonderfully fragrant, releasing its complex aromas. Slowly whisk in the entire can of coconut milk, ensuring a smooth consistency. Follow this with the fish sauce and brown sugar, stirring until fully dissolved. Bring the sauce to a gentle simmer, then taste it. This is your opportunity to adjust the flavor and spiciness; if you prefer a hotter and more intense curry, you can then gradually add the remaining 2 tablespoons of curry paste, stirring well. Finally, add the scallops to the simmering sauce. Cook for approximately 4 minutes, flipping them once halfway through, until they are just opaque and tender. Be careful not to overcook.
