Instant Pot Turkey Taco Pasta

Ingredients
For the Pasta:
- 2 tablespoons olive oil
- 1 pound ground turkey (or ground beef/pork – drain any fat after sautéing if needed)
- 2 tablespoons taco seasoning (homemade or store-bought)
- 1 cup frozen sweet corn
- 2 cups chicken broth
- 1 – 14.5 ounce can of fire-roasted diced tomatoes, including juices
- 8 ounces pasta of your choice, uncooked (smaller shapes like elbow macaroni work best; half of a 16-ounce box)
- 1 1/2 cups sharp cheddar, freshly shredded (or cheese of your choice)
Instructions
- Sauté Turkey: Set your Instant Pot to “Sauté” mode until it shows “HOT.” Add olive oil, then ground turkey. Cook, breaking up the turkey, until browned. Stir in taco seasoning. Scrape any browned bits from the bottom of the pot.
- Add Remaining Ingredients (Do Not Stir): Add frozen corn, chicken broth, and diced tomatoes. Gently layer the uncooked pasta on top, ensuring it’s mostly submerged in liquid. Do not stir. Cancel “Sauté” mode.
- Pressure Cook: Secure the lid and set the steam release valve to “Sealed.” Select “Manual” or “Pressure Cook” on HIGH and set the timer for 4 minutes (for al dente pasta) or 5 minutes (for softer pasta).
- Quick Release: Once cooking is complete, immediately perform a quick release of pressure. When the float valve drops, turn off the Instant Pot. Remove the lid carefully, stirring the pasta to combine all ingredients.
- Melt Cheese: Add the shredded cheese to the hot pasta mixture and stir until fully melted and creamy.
- Serve: Serve the taco pasta immediately in bowls with your favorite garnishes like fresh cilantro, sour cream, extra cheese, and diced tomatoes.
Recipe Notes
- You can substitute ground beef (80/20 recommended) for ground turkey. If using ground beef, drain any excess fat after browning.
- Regular diced tomatoes can be used instead of fire-roasted tomatoes if preferred, though the smoky flavor will be less pronounced.
- For an even creamier result, stir in 1-2 tablespoons of cream cheese along with the shredded cheddar cheese.
