  • The Fish: Tilapia Fillets
I’ve opted for tilapia in this recipe due to its mild flavor and quick cooking time, making it an excellent canvas for Greek seasonings. However, its versatility allows for easy substitutions. Feel free to use other light, flaky white fish like cod, halibut, sea bass, or even salmon for a richer, more omega-3-rich option. This seasoning blend also works wonderfully with shrimp if you’re looking for a different seafood experience.
  • The Mediterranean Seasoning Blend: Smoked Paprika & Oregano
Our signature rub combines smoked paprika for a subtle depth and earthy sweetness, and dried oregano, which is the quintessential herb of Greek cuisine, lending its robust, aromatic character. A touch of salt and freshly ground black pepper enhances all the flavors, creating a simple yet powerful coating for the fish.
  • The Brightness: Fresh Lemon
Lemon is indispensable in Greek cooking, and it’s no exception here. Half a lemon is juiced directly over the fish before baking, infusing it with a bright, zesty tang. The other half is sliced and placed atop the fillets, allowing its essential oils to perfume the fish as it cooks. This fresh citrus perfectly complements the richness of the olive oil and the savory notes of the fish. Lime juice can be used as a worthy substitute if lemons are unavailable.
  • For the Olive Tapenade: Kalamata Olives
These distinctive Greek olives are the cornerstone of our tapenade. Kalamata olives are known for their rich, fruity, and slightly briny flavor, with a pleasing texture that isn’t overly bitter, making them ideal for this savory topping.
  • For the Tapenade’s Sweetness & Depth: Sun-Dried Tomatoes
Sun-dried tomatoes bring an intense, concentrated tomato flavor with a delightful touch of natural sweetness to the tapenade, balancing the olives’ brininess.
  • The Creamy Element: Feta Cheese
Crumbled feta cheese adds a salty, tangy creaminess to the tapenade, echoing the Greek theme. For a slight variation, you could experiment with goat cheese, or simply omit the cheese entirely for a dairy-free option.
  • The Fresh Herb: Fresh Parsley
Chopped fresh parsley adds a vibrant color and a clean, herbaceous note to both the tapenade and the salad, cutting through the richness and brightening the overall profile.
  • The Crunch (Tapenade): Toasted Pine Nuts
Pine nuts, lightly toasted, provide a wonderful textural contrast and a subtle, buttery richness to the olive tapenade.
  • For the Salad: English Cucumber, Cherry Tomatoes, Green Onions
These fresh vegetables form the base of our refreshing chopped Mediterranean salad. English cucumbers offer a cool crunch, cherry tomatoes burst with juicy sweetness, and green onions add a mild, pungent kick, creating a perfect counterbalance to the baked fish.

Step-by-Step Instructions

1. Preheat Your Oven: Begin by preheating your oven to a robust 425°F (220°C). This high temperature ensures the fish cooks quickly and stays moist.

2. Prepare the Aromatic Spice Rub: In a small mixing bowl, combine the dried oregano, smoked paprika, salt, and black pepper. Stir these ingredients thoroughly until they are well combined. This simple yet potent blend will infuse your tilapia with classic Greek flavors.

3. Season the Tilapia Fillets: Lightly coat each tilapia fillet with approximately 2 teaspoons of olive oil on both sides. Then, generously rub the prepared spice mixture over the entire surface of each fillet, ensuring they are completely and evenly coated. This creates a flavorful crust during the searing process.

4. Sear the Fish in a Skillet: Heat 1 tablespoon of olive oil in a large, ovenproof skillet (such as a cast-iron pan) over medium-high heat until shimmering. Carefully add the seasoned tilapia fillets to the hot skillet and sear each side for 1-2 minutes. This quick browning step is crucial for developing flavor and creating a beautiful golden crust, while also locking in moisture.

5. Add Lemon and Bake to Perfection: Once seared, cut one half of the fresh lemon and generously drizzle its juice over the tilapia fillets in the skillet. Take the other half of the lemon, slice it thinly, and place a lemon slice on top of each fish fillet. Transfer the skillet directly into your preheated 425°F (220°C) oven. Bake the tilapia for approximately 10-15 minutes, or until the fish is opaque throughout and flakes easily with a fork. Be careful not to overcook, as tilapia can dry out quickly.

6. Prepare the Flavorful Olive Tapenade: While the fish bakes, prepare the vibrant tapenade. In a small bowl, combine the sliced kalamata olives, diced sun-dried tomatoes, toasted pine nuts, crumbled feta cheese, and chopped fresh parsley. Mix all ingredients thoroughly until well combined. Set this aside to allow the flavors to meld until you’re ready to serve.

Drizzle with a generous amount of olive oil and a squeeze of fresh lemon juice. Stir everything gently until well combined. Set aside until serving.

8. Serve and Enjoy: Once the tilapia is perfectly cooked and flaky, carefully remove it from the oven. Arrange the beautiful fish fillets on a serving platter. Spoon a generous amount of the fresh olive tapenade over each piece of tilapia. Serve immediately with extra lemon wedges on the side and the crisp, refreshing Mediterranean chopped salad. Enjoy your delightful and healthy Greek feast!

Expert Tips for the Best Baked Tilapia

Achieving perfectly cooked, moist, and flavorful baked tilapia is easier than you think with these expert tips:

  • Don’t Overcook the Fish: Tilapia cooks very quickly. Overcooking is the most common mistake and leads to dry, rubbery fish. Watch it closely; it’s done when it easily flakes with a fork and is opaque throughout. The general rule is about 10-15 minutes at 425°F, depending on fillet thickness.
  • Pat Dry Your Fillets: Before applying the olive oil and spice rub, ensure your tilapia fillets are thoroughly patted dry with paper towels. This helps the seasoning adhere better and promotes a nicer sear.
  • Use a Hot Skillet for Searing: Getting a good sear on the fish before baking adds a layer of flavor and helps create a beautiful crust. Make sure your ovenproof skillet is adequately hot before adding the fish.
  • Fresh Lemon is Key: Don’t skimp on fresh lemon juice. Its bright acidity cuts through the richness of the fish and olive oil, enhancing all the flavors. Bottled lemon juice simply won’t yield the same vibrant taste.
  • Good Quality Olive Oil: Since olive oil is a prominent flavor component in this Greek-inspired dish, using a good quality extra virgin olive oil makes a noticeable difference.
  • Let the Tapenade Flavors Meld: While you can serve the tapenade immediately, letting it sit for 10-15 minutes (or even longer in the fridge) allows the flavors of the olives, sun-dried tomatoes, and herbs to meld beautifully.
  • Vary Your Herbs: While oregano is classic, feel free to experiment with other Mediterranean herbs like fresh dill, thyme, or even a hint of mint in your tapenade or on the fish.

Delicious Variations & Customizations

This Greek Baked Tilapia recipe is wonderfully adaptable, allowing you to customize it to your taste or what you have on hand:

  • Alternate Fish Choices: As mentioned, cod, halibut, sea bass, or even thicker cuts like salmon or mahi-mahi work beautifully. Adjust baking time accordingly for thicker fillets. For a lighter touch, try shrimp.
  • Spice Rub Variations: Add a pinch of garlic powder or onion powder to the spice mix for extra savory depth. A touch of red pepper flakes can introduce a subtle heat.
  • Tapenade Twists:
    • Add Capers: For an extra briny kick, stir in a tablespoon of chopped capers to your tapenade.
    • Herb Swap: Replace or combine parsley with fresh dill or mint for a different aromatic profile.
    • Nutty Crunch: If pine nuts aren’t available, toasted slivered almonds or walnuts can provide a similar textural element.
    • Dairy-Free Tapenade: Simply omit the feta cheese for a delicious dairy-free version.
  • Salad Enhancements:
    • Add Other Veggies: Include finely diced red onion, bell peppers, or even artichoke hearts for more texture and flavor in your Mediterranean salad.
    • Quinoa or Couscous: For a heartier salad, mix in cooked and cooled quinoa or couscous.
    • Different Cheeses: Try goat cheese or crumbled halloumi in the salad for a unique twist.
  • Grilled or Pan-Fried: If you prefer not to bake, the seasoned tilapia can be fully cooked on the grill or simply pan-fried until flaky, omitting the oven step.

What to Serve with Greek Baked Tilapia

While this dish includes a fantastic Mediterranean salad, you might want to round out your meal with additional complementary sides:

  • For an extra burst of fresh, citrusy flavor, pair this tilapia with a vibrant Lemon Arugula Salad or a refreshing Lemon Kale Salad.
  • Potatoes are always a delightful accompaniment to seafood. Consider serving these savory Lebanese Spicy Potatoes (Batata Harra) or aromatic Lemon Cilantro Roasted Potatoes.
  • Roasted vegetables make a perfect healthy side dish. We highly recommend these Mediterranean Roasted Vegetables, Easy Bok Choy, or sweet and tangy Balsamic Roasted Carrots.
  • A simple bowl of fluffy Mediterranean rice or a slice of crusty bread to soak up the juices would also be wonderful.

Storage and Reheating Tips for Leftovers

Maximize the enjoyment of your Greek Baked Tilapia with these helpful storage and reheating instructions:

  • Storing Leftovers: Any leftover cooked fish should be transferred to an airtight container and stored in the refrigerator. It will remain fresh and delicious for up to 3 days.
  • Reheating for Best Results: To ensure your tilapia remains moist and doesn’t dry out, it’s best to reheat it gently and slowly. Place the fish on a rimmed baking sheet and warm it in a 275°F (135°C) oven for about 15 minutes, or until it reaches an internal temperature of 125°F to 130°F (52°C to 54°C). Avoid high heat in the microwave, which can make fish rubbery.
  • Freezing Cooked Tilapia: If you plan to freeze your cooked tilapia, ensure it has cooled completely first. It’s generally best to freeze the tilapia without the olive tapenade, as the texture of the tapenade may change upon thawing. Wrap individual tilapia fillets tightly in parchment paper or wax paper, then place them in a freezer-safe ziplock bag or airtight container. It can be stored in the freezer for up to 3 months.
  • Thawing Frozen Tilapia: To reheat frozen fish, remove it from the freezer and place it in the refrigerator overnight to thaw. Once thawed, warm it in a hot oven following the reheating instructions above, or gently in the microwave if you’re in a hurry (use short bursts on a lower power setting).
