Ingredients

  • 4 tbsp oil, divided use
  • 1 lb boneless, skinless chicken thighs
  • Salt and pepper, to taste
  • 5 bell peppers, assorted colors, thinly sliced
  • 3 medium onions, thinly sliced
  • 1 jalapeño pepper, minced (remove seeds for less heat)
  • 3 large cloves garlic, minced
  • Tortillas (flour or corn)
  • Optional toppings for serving: limes, sour cream, grated cheese, cilantro, salsa, guacamole

Instructions

  1. Heat a large Dutch oven or heavy-bottomed skillet over high heat for several minutes until very hot. Add 2 tablespoons of the oil. When the oil is shimmering, add the chicken thighs. Season well with salt and pepper. Cook, undisturbed, until well browned, about 3 minutes. The chicken should lift easily without sticking when ready to flip. Flip and cook until opaque and cooked through, about 3 minutes more. Transfer the cooked chicken to a bowl.
  2. Add the remaining 2 tablespoons of oil to the same Dutch oven over high heat. Add the thinly sliced bell peppers, onions, and minced jalapeño. Season generously with salt. Cook, stirring fairly frequently, until the onions are soft and deeply golden brown, and the bell peppers are tender with some charred spots, about 30 minutes. Add the minced garlic and cook for another few minutes until fragrant. Taste and adjust salt if needed.
  3. Once the vegetables are caramelized, cut or tear the cooked chicken thighs into bite-sized pieces. Return the chicken to the pot along with any accumulated juices from the bowl. Cook just until the chicken is reheated through, about 1-2 minutes, stirring to combine with the vegetables.
