Ingredients

  • 1 Tablespoon brown sugar
  • 2 Tablespoons low sodium vegetable broth, {or low sodium chicken broth}
  • 1 Tablespoon fish sauce
  • 2 teaspoons soy sauce, low sodium
  • 1 teaspoon sambal oelek, {use 1/2 teaspoon for less spice or omit}
  • 2 Tablespoons canola oil, divided
  • 1 Tablespoon lemongrass, freshly grated {or use 1 Tablespoons lemongrass paste}
  • 3 cloves garlic, finely chopped
  • 1 medium red bell pepper, seeded, sliced {about 1 cup}
  • 1/2 cup shallots, sliced
  • 8 ounces haricots verts, trimmed and halved {or use green beans}
  • 1 pound boneless, skinless chicken breasts {or chicken thighs}
  • 1/3 cup cashews, unsalted
  • 1 Thai chile, seeds removed, thinly sliced {omit for less spice}
  • Fresh Cilantro, for garnish

Instructions

  • In a small bowl, combine the brown sugar, vegetable broth, fish sauce, soy sauce, and fresh chile paste. Set aside.
  • In a wok or large skillet, heat 1 Tablespoon canola oil over high heat, swirling to coat the pan. Add the lemongrass and garlic, and stir-fry for 30 seconds until fragrant. Using a slotted spoon, remove the lemongrass mixture and transfer it to a bowl, setting it aside. Add the bell pepper, shallots, and haricots verts (or green beans) to the pot and stir-fry for another 3 minutes until crisp-tender. Remove vegetables with the slotted spoon and add them to the lemongrass mixture.
  • Add the remaining 1 Tablespoon canola oil to the pan and swirl to coat. Add the chicken, sliced into bite-sized pieces, and cook for 3 minutes, stirring occasionally. Add the cashews and sliced red chile to the pan and continue to stir-fry for another 4-5 minutes, or until the chicken is fully cooked through and lightly browned.
  • While the chicken cooks, bring a pot of water to a rolling boil for your rice noodles. Once boiling, cook the rice noodles according to package directions until al dente. Drain thoroughly and set aside.
  • Stir the reserved sauce mixture and the lemongrass-vegetable mixture back into the pan with the cooked chicken and cashews. Bring everything to a gentle boil and simmer for 1-2 minutes, allowing the sauce to slightly thicken.
  • Divide the cooked rice noodles among four serving bowls. Top each with a generous scoop of the chicken stir-fry mixture. Garnish with fresh cilantro, if desired, for an added burst of freshness and color.
  • Serve warm and enjoy your homemade Asian-inspired feast!

Notes

  • For variety, try using a different color bell pepper—green, yellow, or orange—to add a different visual appeal and subtle flavor shift.
  • To reduce the heat, simply omit the red chile paste and the freshly sliced red chiles entirely. You can always add a dash of sriracha at the table for individual preference.
  • Experiment with different noodle types. Soba noodles or even regular spaghetti can be used in place of rice noodles for a different texture and taste.
  • If you prefer a rice base, brown rice or sticky rice works wonderfully instead of noodles, offering a heartier meal.
  • If fresh lemongrass and chiles are difficult to find, I often use Gourmet Gardens Lemongrass paste and Red Chile Paste. They are excellent pantry shortcuts that deliver consistent flavor.
