With the arrival of warmer weather, my grill becomes a regular fixture for summer cookouts. There’s a special magic in grilled food; it infuses such incredible flavor, and I’ve found my kids are far more likely to enjoy a meal when it’s cooked over an open flame. The preparation time for these Greek chicken kabobs is wonderfully minimal. You can effortlessly prepare the chicken and vegetables in their zesty Greek marinade earlier in the day, then simply thread them onto skewers when you’re ready to cook. I genuinely believe these are the best chicken kabobs, thanks to the deep flavor and tenderizing effect of the yogurt and carefully selected spices in the marinade. Serve these vibrant kabobs with a variety of vegetable sides, though I particularly love them with a drizzle of my homemade Tahini Yogurt Sauce or a refreshing dollop of Greek Yogurt Tzatziki Sauce for an authentic Mediterranean experience.

While grilling is my preferred method for these Greek Chicken Kabobs, you also have the flexibility to bake or broil them in the oven on a baking sheet. Key Ingredients for Flavorful Greek Chicken Kabobs

Ingredients laid out for Greek Marinated Chicken Kabobs with Lemon including chicken, bell peppers, zucchini, red onion, lemon, Greek yogurt, olive oil, and spices.

Crafting exceptional Greek Marinated Chicken Kabobs starts with high-quality, fresh ingredients. Below is a detailed look at the simple components that come together to create this incredible dish. You’ll find the full list with exact measurements in the recipe card further down.

  • Chicken: For this recipe, I opt for boneless, skinless chicken breast, cut into uniform 1 1/2 inch chunks. Chicken breast yields a wonderfully juicy result when marinated correctly. However, boneless, skinless chicken thighs are also an excellent choice, offering a slightly richer flavor and remaining incredibly moist. Chicken tenderloins, cut into similar chunks, work well too. The key is consistent sizing for even cooking.
  • Vegetables: The beauty of these kabobs lies in the vibrant array of vegetables. I typically use a colorful mix of red bell peppers and green bell peppers, adding both sweetness and a slight bitterness. Fresh zucchini, cut into rounds or chunks, provides a delicate texture, while red onion offers a sharp, aromatic counterpoint that mellows beautifully when grilled. These vegetables not only add flavor and texture but also make the kabobs visually appealing.
  • Lemon: Lemon is a cornerstone of Greek cuisine and crucial to this marinade. I use both the zest and the juice of a fresh lemon. The zest provides a concentrated burst of citrus aroma and flavor, while the juice tenderizes the chicken and brightens the overall profile of the marinade. This dual approach ensures a powerful, authentic lemon essence.
  • Extra Virgin Olive Oil: A good quality extra virgin olive oil is essential for its fruity flavor and its role in distributing the marinade’s flavors evenly while also helping to prevent the chicken and vegetables from sticking to the grill.
  • Seasoning: The marinade is simply yet effectively seasoned with pantry staples: sea salt to enhance all flavors, freshly ground black pepper for a subtle kick, aromatic garlic powder for depth, and a touch of cayenne pepper to introduce a gentle warmth without overwhelming the dish. This balanced blend provides a truly authentic Greek taste.
  • Greek Yogurt: This is the star of the marinade, providing the characteristic tang and incredible tenderizing power. I always use full-fat Greek yogurt for the best flavor and a rich, creamy consistency that clings beautifully to the chicken. The lactic acid in the yogurt gently breaks down the chicken fibers, resulting in exceptionally tender and moist meat. If full-fat isn’t available, other natural yogurts can be substituted, but full-fat offers superior results.

Recipe Tips and Flavor Modifications for Perfect Kabobs

Elevate your Greek Chicken Kabobs with these expert tips and creative modifications, allowing you to tailor the recipe to your exact preferences:

  • Chicken Cut Options: While I’ve used boneless, skinless chicken breast for its lean protein and ability to absorb flavors, boneless, skinless chicken thighs are an equally delicious alternative. Thighs tend to be more forgiving on the grill, staying incredibly moist and flavorful even if slightly overcooked. Feel free to use your preferred cut.
  • Bell Pepper Variety: Don’t limit yourself to red and green bell peppers. Any color bell pepper will work beautifully, adding its own unique sweetness and visual appeal. Yellow and orange bell peppers are particularly vibrant and sweet.
  • Expand Your Veggie Medley: The beauty of kabobs is their versatility. Beyond the suggested vegetables, consider adding chunks of eggplant for a smoky flavor, cherry tomatoes that burst with juice when cooked, or even button mushrooms for an earthy touch. Just ensure all vegetables are cut to a similar size for even cooking.
  • Amplify the Seasoning: Customize the spice blend to your taste. Incorporate classic Greek flavors like dried oregano or thyme. A pinch of paprika can add a smoky sweetness, while a dash of ground cinnamon or cumin will lend an exotic, warm note. Don’t be afraid to experiment with your favorite Greek seasoning blend.
  • A Touch of Cheese: For an extra layer of Mediterranean flavor, crumble some briny feta cheese over the cooked kabobs just before serving. The warmth of the chicken will slightly soften the feta, creating a delightful contrast.
  • Crank Up the Heat: If you enjoy a little spice, easily add a pinch of red pepper flakes or a dash of chili powder to the marinade. This will give your kabobs a pleasant kick without overwhelming the fresh flavors.
  • Soak Wooden Skewers: If you’re using wooden or bamboo skewers, remember to soak them in cold water for at least 30 minutes (or ideally an hour) before threading. This prevents them from burning on the grill. Metal skewers are a reusable and convenient alternative that don’t require soaking.
  • Precision Marinade Time: It’s crucial to adhere to the recommended marinade time of up to 2 hours. While the Greek yogurt tenderizes, the lemon juice can start to “cook” or denature the chicken if left too long, potentially leading to a mushy texture. A shorter marinade of 30 minutes will still impart great flavor, but 2 hours is ideal for maximum tenderness.

How to Make Greek Marinated Chicken Kabobs: A Step-by-Step Guide

Creating these delightful Greek Marinated Chicken Kabobs is a simple and rewarding process. Follow these easy steps to achieve perfectly tender and flavorful skewers:

Step 1. Prepare and Marinate the Chicken and Vegetables: Begin by combining all the marinade ingredients in a large ziplock bag or a spacious mixing bowl. Add the cut chicken pieces, red bell pepper, green bell pepper, zucchini, and red onion. Pour in the sea salt, ground black pepper, fresh lemon juice, lemon zest, extra virgin olive oil, garlic powder, cayenne pepper, and the creamy Greek yogurt. Use tongs or your hands to thoroughly coat the chicken and vegetables in the vibrant marinade, ensuring every piece is well covered. Seal the bag or cover the bowl and refrigerate for up to 2 hours. This marinating time is crucial for infusing flavor and tenderizing the chicken.

Step 2. Thread the Kabobs: Once the marinating time is complete, remove the chicken and vegetables from the refrigerator. If you’re using bamboo or wooden skewers, ensure they have been soaked in cold water for at least 30 minutes (or ideally an hour) to prevent burning on the grill. Now, begin threading the chicken and vegetables onto the skewers, alternating between chicken pieces and various vegetables until all ingredients are used. Aim for a visually appealing pattern and ensure pieces are snug but not overly packed, allowing for even cooking. Once threaded, drizzle about 2 tablespoons of additional olive oil lightly over the assembled skewers.

Step 3. Grill the Chicken Shish Kabobs: Preheat your grill to a medium-high heat. While the grill is heating, brush the grill grates with the remaining olive oil to prevent sticking. Carefully place the skewers directly onto the hot grill. Grill the kabobs for approximately 6 minutes on each side, turning occasionally, until the chicken is golden brown and cooked through. The chicken is safely cooked when it reaches an internal temperature of 165°F (74°C) as measured with a meat thermometer.

Step 4. Serve: Once cooked to perfection, remove the kabobs from the grill. Let them rest for a few minutes to allow the juices to redistribute, ensuring maximum tenderness. Serve these warm kabobs garnished with fresh herbs, such as chopped fresh parsley or cilantro. For an extra layer of flavor and creaminess, I highly recommend serving them with a side of homemade tzatziki sauce for dipping.

Recipe Tip for Marinade: I strongly recommend marinating these Greek Chicken Kabobs for at least 30 minutes to an hour to infuse flavor, with a maximum of 2 hours. It’s important not to exceed 2 hours in this particular marinade because the acidity from the lemon juice, when combined with the yogurt, can begin to break down the chicken’s proteins excessively, potentially resulting in a mushy texture. Sticking to the 2-hour limit ensures tender, not tough or mushy, chicken.

Storage and Reheating Tips for Leftovers

If you happen to have any delicious Greek Marinated Chicken Kabobs left over, storing them properly ensures you can enjoy them for another meal:

  • Storage: Allow the cooked kabobs to cool completely to room temperature. Then, remove the chicken and vegetables from the skewers (or store the skewers whole if they fit) and place them in an airtight container. Refrigerate promptly for up to 3-5 days.
  • Reheating: To reheat, you have a few options. For best results, reheat in a preheated oven at 350°F (175°C) for about 10-15 minutes, or until warmed through, to help retain moisture. Alternatively, you can gently warm them in a skillet over medium heat, adding a splash of water or broth to prevent drying, or even use an air fryer for a few minutes until hot.

What Should I Serve With Greek Chicken Kabobs?

These versatile Greek Chicken Kabobs pair beautifully with a wide array of side dishes, making them perfect for any meal occasion. Here are some of my favorite accompaniments:

  • Fresh Salads: A crisp, refreshing salad is always a fantastic pairing for grilled chicken. Try my Mediterranean Bean Salad for a hearty option, a light and peppery Lemon Arugula Salad with Pine Nuts, a vibrant Summer Orzo Pasta Salad, or a classic, simple Easy Lebanese Salad.
  • Other Vegetable Sides: If you prefer more cooked vegetable options, consider flavorful Lebanese Green Beans (Lubee), earthy and aromatic Turmeric Roasted Cauliflower, or a medley of Mediterranean Roasted Vegetables. All these options complement the kabobs’ flavors perfectly.
  • Potato Creations: Potatoes are a comforting and satisfying addition to this meal. I often prepare creamy Gouda Smashed Potatoes, savory Air Fryer Twice Baked Potatoes, or the wonderfully spicy Spicy Lebanese Potatoes (Batata Harra).
  • Delicious Breads: To soak up all the flavorful juices and sauces, serving these kabobs alongside warm pita bread or soft naan is a must. You can even enjoy them with crunchy homemade pita chips for an added texture.
  • Sauces and Dips: No Greek meal is complete without a delicious sauce! A generous dollop of creamy Tzatziki (Greek yogurt and cucumber dip) or a drizzle of Tahini Yogurt Sauce enhances the experience immensely.
