A truly crunchy, chewy, and rich chocolaty homemade vegan granola bar recipe, perfect for a lunchbox treat or a quick breakfast on the go. These bars perfectly satisfy that intense craving for the crispy, toasted bars reminiscent of classic oatmeal cookies.

Ingredients

  • ½ cup unsweetened shredded coconut
  • ½ cup chopped vegan dark chocolate (or chocolate chips)
  • ½ cup chopped nuts (almonds, pecans, or walnuts work well)
  • ½ cup dried fruit (cranberries, cherries, or raisins)
  • 1 ½ cups old fashioned large-flake oats (do not use quick or instant oats, divided use)
  • ¼ cup brown sugar (lightly packed)
  • ½ cup maple syrup
  • ½ cup melted coconut oil (ensure it’s melted but not hot; butter can be substituted if not strictly vegan)

Instructions

  1. Preheat your oven to 350ºF (175ºC). Line a 9×9-inch (23×23 cm) square baking pan with parchment paper, allowing some overhang on the sides for easy lifting.
  2. In a large mixing bowl, combine the shredded coconut, chopped dark chocolate, chopped nuts, and dried fruit. Gently toss to combine. Scoop out about a quarter of this mixture into a separate small bowl and set aside; this will be used as a delicious topping later.
  3. Measure ½ cup of the old-fashioned large-flake oats and process them in a blender or food processor until they form a fine flour. Add this oat flour to the large bowl with the coconut mixture. Now, add the remaining 1 cup of whole large-flake oats, brown sugar, maple syrup, and melted coconut oil. Mix thoroughly until all the dry ingredients are evenly coated with the wet ingredients.
  4. Transfer the mixture into your prepared baking pan. Using lightly dampened hands (to prevent sticking), press the mixture down very firmly and evenly into all corners of the pan. This step is crucial for ensuring the bars hold together well. Bake for 20 minutes.

  6. Allow the bars to cool in the pan for at least 5 minutes before carefully using the parchment paper overhang to lift the entire slab onto a wire rack. Let it cool completely at room temperature, which can take an hour or two. Once fully cooled and firm, slice into 16 bars using a sharp knife. Enjoy!
