Ingredients
For the Crispy Pork & Tofu Filling:
- 4 tbsp cooking oil
- ½ medium onion, finely chopped
- ½ oz ginger, finely minced
- 2 cloves garlic, finely minced
- 1 lb ground pork
- 1 package firm or extra-firm tofu, drained and pressed (see note above for best texture) OR an additional 1 lb ground pork
- 2 tsp coarse salt
- 1 tbsp brown sugar
- 6 kaffir lime leaves (finely minced if fresh, or substitute with zest of 1 lime)
- 1 tbsp soy sauce
- 2 limes (juice of 1½ for the filling, ½ for serving)
- 2 tbsp finely minced cilantro
To Serve (Lettuce is a must, the rest optional but highly recommended!):
- Lettuce leaves (iceberg or green leaf lettuce work best for crisp cups)
- Cooked basmati rice or vermicelli noodles (for a heartier meal)
- Julienned or grated carrot
- Thinly sliced cabbage
- Julienned cucumber
- Fresh cilantro sprigs
- Salted peanuts, chopped (for crunch)
- Peanut Sauce (homemade or your favorite store-bought brand)
- Store-bought Sweet Chili Sauce (for an extra kick)
Instructions
- Heat the cooking oil in a large skillet or Dutch oven over medium-high heat. Add the finely chopped onion and cook until softened, which usually takes about 6 minutes.
- Stir in the minced ginger and garlic, cooking for another minute until fragrant.
- Add the ground pork and the prepared tofu (if using). If using tofu, break it apart with a spoon to integrate it with the pork. Season with coarse salt, brown sugar, and the finely minced kaffir lime leaves (or lime zest).
- Cook the mixture, breaking up the pork as it browns, until the fat has rendered and both the pork and tofu are nicely crispy and browned. This stage is key for maximum flavor and texture and may take around 10 minutes beyond the point where the pork is simply cooked through.
- Once the filling is beautifully browned, stir in the soy sauce, the juice of 1½ limes, and the fresh cilantro. Cook for another minute, allowing the flavors to meld.
- Transfer the flavorful filling to a serving bowl. Arrange plates of crisp lettuce leaves and all your desired toppings (rice, carrots, cabbage, cucumber, extra cilantro, peanuts, peanut sauce, and sweet chili sauce) on the table. Serve family-style, allowing everyone to build their own custom, delicious lettuce wraps!
