Ingredients
For the Graham Cracker Crust
- 1 ¼ cups graham cracker crumbs
- 2 tbsp granulated sugar
- ¼ cup melted butter
For the Raspberry Mousse
- 2 tbsp fresh lemon juice
- 1 tbsp cold water
- 2 ½ tsp unflavored gelatin granules
- 3 (6-oz) packages (approximately 3 ¾ cups total) Driscoll’s raspberries, divided
- ⅔ cup + 2 tbsp granulated sugar
- 2 cups cold whipping cream (heavy cream)
Instructions
- Prepare the Crust: Preheat your oven to 350ºF (175ºC). Line a 9″x9″ (or 9″x2″ square as per original) baking pan with parchment paper, ensuring there’s an overhang on all sides for easy removal. In the lined pan, combine the graham cracker crumbs, 2 tbsp granulated sugar, and melted butter. Use your hands to thoroughly mix and press the mixture together until it’s evenly moistened and resembles wet sand. Firmly press this mixture down evenly into the bottom of the pan to form the crust. Bake for 10 minutes, or until the crust is slightly darker and fragrant. Remove from oven and cool completely on a wire rack.
- Bloom the Gelatin: In a small, heatproof dish, combine the lemon juice and 1 tbsp cold water. Sprinkle the unflavored gelatin granules evenly over the liquid. Allow it to stand for about 1 minute to soften or “bloom.” The gelatin will absorb the liquid and thicken to an applesauce-like consistency.
- Prepare Raspberry Puree: Puree 2 packages (approximately 2 ½ cups) of the Driscoll’s raspberries in a blender until completely smooth. For an exceptionally silky mousse, force the puree through a fine-mesh sieve into a small saucepan using a stiff spatula to remove any seeds. (If you have a high-powered blender that completely pulverizes seeds, you can skip the sieving step).
- Cook the Raspberry Base: Add the ⅔ cup + 2 tbsp granulated sugar to the raspberry puree in the saucepan. Bring the mixture to a gentle simmer over medium-high heat, stirring until the sugar is fully dissolved. Reduce the heat to low, then stir in the softened gelatin mixture. Cook, stirring constantly, for a full 1 minute to ensure the gelatin is completely dissolved and no granules remain. Transfer this warm raspberry mixture to a large bowl and allow it to cool at room temperature for 30 minutes.
- Whip the Cream: While the raspberry mixture cools, whip the 2 cups of cold whipping cream in a standing mixer fitted with a whisk attachment, or using hand-held beaters, until firm peaks form. Be careful not to over-whip.
- Fold the Mousse: Once the raspberry mixture has cooled (it should still be liquid but not warm), gently fold about one-third of the whipped cream into the raspberry base first. This “lightens” the base, making it easier to incorporate the rest of the cream without deflating the air. Then, carefully and gently fold in the remaining whipped cream using a light hand until the mixture is completely blended and no streaks of white cream are visible. Pour the mousse mixture evenly over the cooled graham cracker crust in the prepared pan. Refrigerate for at least 2 hours, or until the mousse is fully set. (The mousse can be refrigerated longer; the gelatin will continue to firm over time. While it remains delicious, it’s often best enjoyed on the day it’s made for optimal texture).
- Make Berry Topping Sauce: Meanwhile, prepare a simple berry sauce for topping. In a small bowl, sprinkle 1 tbsp granulated sugar over half of the remaining package of raspberries (approximately a heaping half-cup). Let this stand for about 15 minutes, then mash the berries with a fork to create a coarse, rustic sauce.
- Garnish and Serve: When the mousse has fully set, carefully lift it from the pan using the parchment paper overhang and place it on a cutting board. Drizzle generously with the prepared mashed berry sauce. Top with the remaining half package (another heaping half-cup) of whole, fresh raspberries and, if desired, a handful of glistening pomegranate arils for an extra festive touch. Slice the mousse into 16 even squares. For exceptionally clean cuts, rinse your knife with hot water and wipe it clean between each slice. Serve immediately and relish this delightful holiday treat!
