Ingredients

  • 2 tablespoons olive oil
  • 1 to 1 1/2 pounds ground turkey
  • 3 garlic cloves, minced
  • 1/4 cup diced sweet onion
  • 1 large red bell pepper, seeds removed, chopped

  • 3 tablespoons chili powder
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon paprika

  • 1 – 15 ounce can black beans, drained and rinsed
  • 2 – 15 ounce cans red kidney beans, drained and rinsed
  • 2 – 15 ounce cans of diced tomatoes, drained
  • 1 – 6 ounce tomato paste
  • 1 cup chicken broth {divided – use 1/2 cup to deglaze, add the rest later}
  • 1 – 15 ounce can of corn, drained and rinsed
  • Salt and pepper to taste

Instructions

  1. Set your Instant Pot to the “Sauté” setting on normal/high. Allow it to heat thoroughly, then add 2 tablespoons of olive oil, ensuring it coats the bottom of the pot.
  2. Add the ground turkey along with a dash of salt and pepper. Cook for about 2 minutes without stirring, allowing it to brown on one side.
  3. Use a large wooden spoon to break apart the turkey and continue to sauté until it is fully browned, approximately 4-5 minutes.
  4. Remove the browned turkey from the pot. Drain and discard any fat (lean turkey usually has minimal fat). Set the turkey aside in a bowl.
  5. With the Instant Pot still on “Sauté” mode, add the remaining 1 tablespoon of olive oil. Add the minced garlic and diced onion, cooking for 1 minute until fragrant.
  6. Add the chopped bell pepper, jalapeño (if using), chili powder, cumin, paprika, oregano, and cayenne pepper. Continue to sauté for 2 to 3 minutes, stirring, until the bell pepper begins to soften and the spices release their aroma.
  7. Pour 1/2 cup of the chicken broth into the pot to begin deglazing.
  8. Use your spoon to scrape away all the browned bits of food from the bottom of the pot. This step is crucial for preventing a “Burn” notification and adding depth of flavor.
  9. Return the ground turkey to the pot. Then, layer the remaining ingredients in this order: the drained and rinsed beans, the remaining 1/2 cup of chicken broth, diced tomatoes (drained), tomato paste, and finally, the drained and rinsed corn. DO NOT MIX the ingredients at this stage.
  10. Secure the lid on the Instant Pot and ensure the sealing valve is set to “Sealing.” Cancel the “Sauté” function. Select “Manual” or “Pressure Cook” on high pressure and set the timer for 15 minutes. Once cooking is complete, perform a quick release of the pressure. For slightly more developed flavors, allow a 5-minute natural release before quick-releasing. Once pressure is fully released, carefully open the lid. Stir in fresh cilantro (optional) and adjust seasoning with salt and pepper to taste.
  11. Serve warm with your favorite garnishes such as sour cream, shredded cheese, fresh cilantro, and crushed tortilla chips.

  • To thicken: If the chili is not thick enough for your liking, you can simmer it on “Sauté” mode with the lid off for a few minutes. Alternatively, mix 1 tablespoon cornstarch with 1 tablespoon cold water to create a slurry, then stir it into the chili. Adding more tomato paste also works wonders for thickening.
