  • 2 cups shredded Mexican blend or cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Heat oil in a large skillet over medium-high heat. Add onion and ½ tsp salt. Cook, stirring frequently, until the onion is golden and very soft, about 7-10 minutes. Stir in minced garlic and cook, stirring constantly, until softened and fragrant, about one minute.
  3. Add the lean ground beef (or ground chicken) to the skillet and sprinkle with taco seasoning. Use a spoon or sturdy spatula to break the meat into small chunks and stir it well with the onion mixture to combine. Cook until the beef is fully browned and has rendered its fat, approximately 10 minutes. Drain any excess grease.
  4. Meanwhile, spread the entire can of refried beans evenly along the bottom of your prepared baking dish, creating a smooth base.
