Ingredients

To Cook Rice
  • 1 ½ cups dry brown jasmine or basmati rice
  • 1 ½ tsp kosher salt
  • 2 ¾ cups water
To Assemble Salad
  • ½ cup coconut ribbons or unsweetened shredded coconut
  • 2 cups shredded cooked chicken
  • 1 ripe mango, cut in chunks or thin slices
  • 1 ripe avocado, cut in chunks
  • ½ cup chopped cilantro
For Dressing
  • ½ cup coconut milk
  • 2 tbsp lime juice
  • 1 tbsp finely grated ginger
  • 2 tsp brown sugar
  • 1 clove garlic, finely minced
  • ½ tsp kosher salt, or to taste

Instructions

  1. Rinse the brown rice thoroughly under cold water. In a medium saucepan, combine the rinsed rice with 2 ¾ cups of salted water. Bring the mixture to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low, cover the saucepan tightly, and let it simmer for approximately 40 minutes, or until the rice is tender and has absorbed all the water.
  3. Transfer the cooked rice to a fine mesh sieve. Run cold water over the rice until it is completely cool. Place the sieve over a bowl to allow the rice to drain thoroughly for at least ten minutes, ensuring any excess moisture is removed.
  4. While the rice is cooking, preheat your oven to 350 degrees F (175 degrees C). Spread the coconut ribbons or shredded coconut in a single layer on a baking sheet.
