Ingredients

  • 1 cup plain yogurt 3.5% fat, or higher
  • 6 cloves garlic minced
  • 1 ½ tbsp paprika
  • 1 tsp cayenne
  • 1 tbsp minced ginger
  • 1 tbsp garam masala
  • 1 tbsp kosher salt
  • 3 lbs skin-on chicken drumsticks

Instructions

  1. Whisk together all ingredients except for the chicken in a large bowl to create the marinade. Add the chicken drumsticks and rub the marinade all over to coat thoroughly, gently working it underneath the skin of each drumstick for maximum flavor penetration. Let the chicken stand, covered, for at least 1 hour at room temperature, or for up to 24 hours if refrigerated (recommended for best flavor).
  2. Preheat your oven to 375ºF (190°C). Lightly oil a wire cooling rack and place it on top of a baking sheet. Arrange the marinated chicken drumsticks on the rack, ensuring there’s a little space between each piece for even cooking. Bake for about 40 minutes, or until the chicken juices run clear and an internal temperature of 165ºF (74°C) is reached.
  3. To achieve that authentic char, turn on your oven’s broiler (grill). Move the baking sheet with the chicken closer to the broiler element.
