Achieving the perfect flavor profile in your Buffalo Chicken Sliders starts with understanding your ingredients. Below, you’ll find a detailed look at each component, along with tips for selection and preparation. For exact measurements, please refer to the recipe card below.

  • Buffalo Sauce: This is the heart and soul of your sliders! You can absolutely use your favorite store-bought buffalo sauce for convenience. Brands like Frank’s RedHot Buffalo Wing Sauce are popular choices. If you’re feeling ambitious and want to control the heat and flavor, you can also make your own buffalo sauce using this recipe. For those who crave extra heat, seek out a “hot” or “extra hot” variety of buffalo sauce, or simply add a dash of cayenne pepper to the chicken mixture.
  • Ranch Dressing: Ranch dressing plays a crucial role in balancing the tang and spice of the buffalo sauce, adding a creamy, savory dimension to the chicken mixture. Use your preferred store-bought ranch dressing for ease. For a fresher taste, consider making your own with this fantastic homemade ranch dressing recipe. The creaminess of the ranch is essential for a moist and flavorful filling.
  • Spices: Our recipe calls for garlic powder and garlic salt. These add a wonderful depth of savory flavor that complements the buffalo and ranch. Garlic powder provides a mellow garlic essence, while garlic salt offers both garlic flavor and a hint of salinity. If you don’t have them on hand, you can skip them, but they truly enhance the overall taste. Fresh minced garlic could also be used for a more pungent flavor.
  • Chicken: Shredded chicken is key here. The best options are leftover cooked chicken or a store-bought rotisserie chicken. Both provide tender, juicy meat that shreds easily and absorbs the sauces beautifully. If cooking chicken from scratch, boil or bake chicken breasts or thighs until cooked through, then shred with two forks or a stand mixer with the paddle attachment for super easy shredding.
  • Green Onions: Freshly chopped green onions serve as a vibrant and flavorful garnish, adding a mild oniony bite and a pop of color to your finished sliders. They brighten up the rich flavors of the chicken and cheese. Reserve some for sprinkling on top just before serving for the best presentation and taste.
  • Cheese: For that irresistible, gooey factor, shredded Monterey Jack cheese is a fantastic choice. It melts beautifully and has a mild, creamy flavor that doesn’t overpower the buffalo chicken. For the freshest taste and best melt, we always recommend shredding the cheese yourself from a block, as pre-shredded cheeses often contain anti-caking agents that can affect texture. Other great options include pepper jack for extra spice, sharp cheddar, or even provolone.
  • Slider Buns: The foundation of your sliders! Sweet Hawaiian slider buns are highly recommended for their soft texture and slightly sweet flavor, which perfectly complements the spicy and savory filling. Their slightly larger size also makes them ideal for packing in plenty of filling. If Hawaiian rolls aren’t available, any soft dinner roll or mini brioche bun will work well.
  • Butter and Garlic Salt for Topping: A simple mixture of melted butter and garlic salt brushed over the tops of the buns before baking creates a wonderfully golden, fragrant, and slightly crispy crust. This step adds a crucial layer of flavor and texture that makes these sliders truly stand out.

Recipe Variations to Customize Your Buffalo Chicken Sliders

One of the joys of cooking is the ability to adapt recipes to your personal taste. These Buffalo Chicken Sliders are incredibly versatile, allowing for a range of delicious modifications:

  • Cheese Swap: Experiment with different cheeses to alter the flavor profile. Pepper Jack cheese will add a pleasant spicy kick, while sharp cheddar offers a more robust, tangy flavor. For a classic buffalo wing experience, crumble some blue cheese over the chicken mixture before adding the top buns. Provolone or a mozzarella blend would also work beautifully for a milder, stretchier melt.
  • Amplify the Heat: If you’re a true spice lover, there are several ways to crank up the heat. You can skip the ranch dressing entirely and use only buffalo sauce for an unadulterated spicy flavor. Alternatively, mix in a pinch of crushed red pepper flakes, a few dashes of your favorite hot sauce, or a ¼ teaspoon of cayenne pepper directly into the chicken mixture. A hotter buffalo sauce variety is also an easy upgrade.
  • Add Extra Toppings: Elevate your sliders with additional fresh or pickled toppings. Shredded lettuce or a simple coleslaw can add a refreshing crunch and cool contrast. Tangy Quick Pickled Red Onions or other pickled vegetables provide a delightful acidity that cuts through the richness. A dollop of creamy blue cheese dressing or extra ranch on the side is always a welcome addition.
  • Bun Alternatives: While Hawaiian rolls are traditional, don’t hesitate to try other bun types. Pretzel buns can add a unique savory and slightly chewy texture. For a low-carb option, turn these into delicious buffalo chicken lettuce wraps by serving the chicken mixture in crisp lettuce cups – a fantastic way to enjoy the flavors without the bread.
  • Smoky Flavor: A pinch of smoked paprika or a dash of liquid smoke added to the chicken mixture can introduce a delicious smoky depth.
  • Vegetarian Option: For a plant-based alternative, substitute the chicken with shredded jackfruit or cooked, shredded cauliflower florets, then proceed with the rest of the recipe.

Step-by-Step Instructions for Perfect Buffalo Chicken Sliders

Follow these simple steps to create a batch of hot, cheesy, and irresistible Buffalo Chicken Sliders:

  1. Prepare Your Rolls: Preheat your oven to 350°F (175°C). Take your entire package of slider rolls (usually 12 count) and, using a serrated knife, carefully slice them horizontally in half, separating the tops from the bottoms. Keep the rolls connected. Place the bottom halves of the rolls evenly in a 9×13 inch baking dish (or a similar size that fits the rolls snugly) and set aside.
  2. Mix the Buffalo Chicken Filling: In a large mixing bowl, combine the buffalo sauce, ranch dressing, and garlic powder. Whisk them together until they are thoroughly blended and smooth. Next, add your cooked and shredded chicken along with 3 tablespoons of the chopped green onions. Toss everything gently until the chicken is completely coated with the flavorful sauce mixture.
  3. Easy Buffalo Chicken Sliders: chicken mixture on bottom buns
Step 2: Spreading the buffalo chicken mixture onto the bottom layer of Hawaiian rolls.

Step 3: Topping the chicken mixture with shredded Monterey Jack cheese.
  4. Assemble the Sliders: Evenly spoon the buffalo chicken mixture over the bottom halves of the rolls in the baking dish, spreading it out to cover all the buns. Sprinkle the shredded Monterey Jack cheese generously over the chicken layer. Finally, carefully place the top halves of the rolls over the cheese layer, aligning them with the bottoms.
  5. Add the Buttery Garlic Topping: In a small separate bowl, melt the butter (you can do this in the microwave). Stir in the garlic salt until combined. Using a spoon or a pastry brush, generously spoon or brush the melted garlic butter mixture over the tops and sides of the assembled rolls. Ensure all the tops get a good coating for that perfect golden crust. Cover the entire baking dish tightly with aluminum foil.

Step 5: Freshly baked sliders, golden and cheesy, with a sprinkle of green onions.
  7. Bake and Serve: Place the covered baking dish in the preheated oven. Bake for 10-15 minutes, allowing the sliders to heat through and the cheese to start melting. Then, remove the foil and bake for an additional 5-7 minutes, or until the cheese is completely melted, bubbly, and the tops of the buns are beautifully golden brown. Remove from the oven and let them rest for a minute or two before slicing and serving. They are best served immediately with crisp celery and carrot sticks, and a side of blue cheese or ranch dressing for dipping.

Make-Ahead Tip: To save time on the day of your event, assemble the sliders completely (up to brushing with garlic butter) and then cover the baking dish tightly with plastic wrap or foil. Refrigerate for up to 24 hours. When you’re ready to bake, remove them from the fridge about 15-20 minutes beforehand to come closer to room temperature, then cook as directed above, adding a few extra minutes to the initial covered baking time if needed to ensure they are heated through.

Storage and Reheating Tips for Leftover Sliders

While these Buffalo Chicken Sliders are best enjoyed fresh from the oven, leftovers can be stored and reheated to maintain their deliciousness:

  • Refrigerator Storage: If you have leftover buffalo chicken filling separate from the buns, store it in an airtight container in the refrigerator for up to 4 days. If the sliders are already assembled and baked, place them in an airtight container and refrigerate for up to 2-3 days.
  • Reheating Baked Sliders: For best results when reheating entire sliders, place them on a baking sheet, cover loosely with foil, and warm in a preheated oven at 300°F (150°C) for about 10-15 minutes, or until heated through and cheese is re-melted. For a quicker option, an air fryer at 280°F (138°C) for 5-7 minutes can crisp them up beautifully. Microwaving is also an option, but the buns might become soft.
  • Freezing the Chicken Mixture: The buffalo chicken mixture can be prepared in advance and frozen for later use. Allow the chicken to cool completely after mixing with the sauces. Transfer it to a freezer-safe airtight container or heavy-duty freezer bag, ensuring as much air is removed as possible. It can be stored in the freezer for up to 3 months. To use, thaw overnight in the refrigerator, then proceed with assembling and baking the sliders as directed.

Recipe FAQ: Common Questions About Buffalo Chicken Sliders

What type of chicken is best for making buffalo chicken sliders?

For the best texture and convenience, we highly recommend using leftover shredded chicken or a store-bought rotisserie chicken. Both options ensure the chicken is tender and moist, making it easy to shred and allowing it to absorb the buffalo sauce mixture beautifully. If you’re cooking chicken from scratch, boneless, skinless chicken breasts or thighs can be boiled or baked and then shredded.

How do I ensure the buffalo sauce evenly coats the chicken?

The trick to evenly coated chicken is using warm chicken. After shredding your cooked chicken, immediately toss it with the buffalo sauce and ranch mixture in a large bowl. The warmth helps the sauce adhere better to every strand of chicken, ensuring a consistent flavor throughout. Don’t overload the chicken with sauce; a good balance is key.

How do I keep the buffalo chicken sliders warm for a party?

Once assembled and baked, you can keep the sliders warm by placing the baking dish in a slow cooker set to a “warm” setting. Alternatively, cover the dish loosely with foil and keep it in a low oven (around 200°F / 93°C) until ready to serve. For longer periods, cover them tightly with foil to retain moisture and heat, but be mindful that the buns might lose some crispness over time.

Can I make these sliders less spicy?

Absolutely! To reduce the spice level, you can use a milder buffalo sauce (many brands offer different heat levels). You can also increase the amount of ranch dressing in the chicken mixture to temper the heat. Alternatively, serve extra ranch or blue cheese dressing on the side for guests to dip their sliders, cooling each bite as they wish.

What prevents the slider buns from getting soggy?

Using a thick, hearty bun like Hawaiian rolls helps. Also, ensure your chicken mixture isn’t overly wet; drain any excess liquid if present before mixing with the sauces. The initial covered baking step helps to heat the sliders without drying them out, while the final uncovered baking step helps to slightly toast the tops of the buns, preventing sogginess. Serving immediately after baking is always best for optimal texture.

Prep: 10 mins
Cook: 17 mins
Total: 27 mins
Servings: 12 sliders

Ingredients

  • 3/4 cup buffalo sauce
  • 1/4 cup ranch dressing
  • 1/2 teaspoon garlic powder
  • 3 cups chicken, cooked and shredded
  • 4 tablespoons chopped green onions, divided
  • 2 cups Monterey jack cheese, shredded
  • 3 tablespoons butter, melted
  • 1 teaspoon garlic salt
  • 1 – 12 count hawaiian rolls

Instructions

  1. Heat oven to 350 degrees. Slice the whole pack of rolls in half so you have 12 tops and 12 bottoms. Place the bottom half of the rolls in a baking dish and set aside.
  2. In a large mixing bowl combine the buffalo sauce, ranch dressing, and garlic powder until well combined. Add the chicken and 3 tablespoons green onions and toss to combine.
  3. Evenly spoon the chicken mixture over the rolls, top with the shredded cheese and place the top of the rolls on top of the cheese.
  4. In a small bowl combine the melted butter and garlic salt. With a spoon or pastry brush, spoon or brush the butter over the tops and sides of the rolls. Cover the baking dish with foil.
  5. Bake covered for 10 minutes then uncover and bake an additional 5-7 minutes until the cheese is melted. Remove from the oven and serve immediately.

Notes

  • Make sure to bake on the middle rack of the oven. If it’s too high the tops of the buns will brown before the cheese is melted.
  • If you want this slightly milder you can use half ranch and half buffalo sauce or dip in ranch dressing. You can also buy a mild buffalo sauce.
  • This is great served with carrots and celery, just like buffalo wings are served.
  • Buffalo Chicken Sliders are best eaten right after baking.
  • Store leftovers in an airtight container in the refrigerator for up to 2-3 days. For best reheating results, reheat at 280°F (138°C) in an air fryer for about 5 minutes or in an oven until warm through.
