Spiced Maple-Roasted Squash & Halloumi Salad: A Mediterranean Winter Delight
As the days grow shorter and the air turns crisp, there’s nothing quite as comforting as a warm, hearty salad that satisfies both the palate and the soul. Our Spiced Maple-Roasted Squash and Halloumi Salad is precisely that—a celebration of seasonal ingredients brought to life with vibrant Mediterranean flavors. This isn’t just a side dish; it’s a culinary experience, transforming a simple cheese and vegetable into an unforgettable meal.
The Charms of Halloumi: A Cheese Like No Other
Halloumi cheese, also known by its endearing nickname Halloom, originates from the beautiful island of Cyprus. Unlike most cheeses, Halloumi possesses a uniquely high melting point, making it incredibly versatile in cooking. This characteristic allows it to hold its shape beautifully under heat, whether you’re grilling, frying, or—as we’re doing in this delightful recipe—roasting it to perfection. Its firm texture and distinctive “squeak” as you bite into it are part of its appeal, offering a satisfying mouthfeel that’s a delightful contrast to the softer elements of a salad.
The flavor profile of Halloumi is equally captivating. It boasts a savory saltiness that is naturally present, often balanced with a subtle tang. When roasted, its edges caramelize into irresistible golden-brown perfection, adding a depth of flavor and a slightly chewy texture that is truly addictive. This makes it an ideal star for warm salads, providing a substantial and savory component that elevates the entire dish. For this recipe, we specifically feature Canadian Halloumi, ensuring a high-quality product made with 100% Canadian milk, which supports local dairy farmers and guarantees a fresh, delicious experience.

Embracing Autumn’s Bounty: The Sweetness of Acorn Squash
Acorn squash is an excellent choice for roasting, not just for its sweet, earthy flavor but also for its practical qualities. Its thin skin is entirely edible once cooked, eliminating the need for peeling, which saves precious time in the kitchen. When halved, acorn squash reveals the prettiest ruffled edges, adding an aesthetic appeal to your dish that is simply charming. The inherent sweetness of acorn squash truly shines when roasted, transforming into a tender, almost custardy texture with caramelized edges.
To enhance its natural deliciousness, we brush the squash with rich maple syrup and sprinkle it generously with warm, aromatic spices. This combination creates a symphony of flavors that perfectly complements the savory Halloumi. Imagine the sweet, caramelized notes of maple mingling with the subtle warmth of allspice, perhaps with hints of cinnamon or nutmeg that could also be added for an extra layer of complexity. Roasting not only brings out the best in the squash but also infuses it with those comforting, cozy flavors that are synonymous with cooler weather and hearty meals. Beyond its taste, acorn squash is also packed with nutrients, including vitamins A and C, fiber, and potassium, making this salad a truly wholesome choice.

The Art of Roasting: Perfecting Halloumi and Squash
Achieving the perfect texture for both your Halloumi and acorn squash is key to this salad’s success. The roasting process is surprisingly simple, yet yields incredible results. For the acorn squash, slices are tossed with olive oil, maple syrup, salt, and allspice, then spread in a single layer on a parchment-lined baking sheet. This ensures even cooking and promotes optimal caramelization. Baking for approximately 20-25 minutes at 425°F (220°C) allows the squash to become beautifully tender and develop those coveted browned edges.
The Halloumi is introduced during the final stage of roasting, ensuring it reaches its ideal state. Simply arrange the 1/4-inch Halloumi slices in a single layer on a separate baking sheet, brush lightly with a touch of olive oil, and pop it into the hot oven for the last 5-10 minutes alongside the squash. This brief, high-heat exposure allows the cheese to soften slightly while retaining its firm, chewy texture, distinct from the melty quality of cheeses like mozzarella. The edges will crisp up and caramelize beautifully, creating an irresistible contrast of textures and flavors. The key is to serve the Halloumi while it’s still warm and soft, directly from the oven, to fully appreciate its unique character.
A Mediterranean Flair: The Finishing Touches
This salad is more than just roasted ingredients; it’s a carefully crafted medley of flavors and textures, reminiscent of a cold-weather twist on a Caprese salad, infused with a distinct Mediterranean flair. The vibrant layers of warm, savory Halloumi and sweet, spiced acorn squash are elevated by a bright, tangy drizzle of pomegranate molasses. This ingredient is a powerhouse of flavor, offering a concentrated sweet-tart punch that cuts through the richness of the cheese and squash, awakening the palate with its fruity acidity.
A final generous drizzle of high-quality extra virgin olive oil acts as the perfect binding agent, uniting all the elements and adding a luxurious sheen. To complete this masterpiece, a generous shower of freshly torn basil leaves, or even mint for a different aromatic note, provides a burst of fresh herbaceousness and a beautiful visual contrast. The combination is easy to prepare, visually appealing, and utterly delicious – a testament to the power of simple, quality ingredients.

Tips for Serving and Variations
To truly maximize the enjoyment of this salad, we recommend having all your components ready to go so you can plate and serve it immediately while the Halloumi is still warm and exquisitely soft. For those special occasions or dinner parties, consider gently warming your plates beforehand – a small detail that makes a big difference in presentation and guest experience. The visual appeal of this dish is undeniable, with the vibrant colors of the squash, the golden Halloumi, and the deep red of the pomegranate molasses creating an inviting tableau.
While this recipe is perfect as is, it also lends itself beautifully to creative variations. For added crunch and a nutty undertone, consider sprinkling toasted pistachios or walnuts over the finished salad. If you’re looking to boost the green factor, a bed of fresh arugula or baby spinach underneath the warm ingredients would add a peppery bite and extra nutrients. For those who enjoy a heartier meal, grilled chicken, pan-seared salmon, or even roasted chickpeas could be incorporated as additional protein sources. Experiment with different types of winter squash, such as butternut or kabocha, for slightly different flavor profiles and textures. Each variation offers a new dimension to this already fantastic dish, ensuring it remains a staple in your culinary repertoire.
