  • ½ of a white onion, diced, divided
  • 2 garlic cloves
  • 1 teaspoon chicken bouillon (optional)
  • ½ teaspoon salt
  • 1-2 Tablespoons vegetable oil or nonstick cooking spray
  • 1 – 12 ounce bag thick tortilla chips
  • 4 eggs (cooked to your liking)
  • 1 avocado, sliced
  • 1/4 cup cilantro, minced
  • 1/4 cup Mexican cream or sour cream thinned with milk
  • 1/4 cup diced red onion
  • 1/3 cup Queso Fresco, crumbled, or other shredded cheese

Instructions

  1. In a medium saucepan, place the chilis, tomatoes, ½ of the diced white onion, garlic cloves, chicken bouillon, and salt. Cover with water and place on the stove. Turn stove on medium-high and when the chilis come to a boil, cook for 10 minutes until softened.
  2. Remove from stove and place in a blender. Blend for a minute or two until completely smooth. Strain chili sauce through a fine sieve to remove any larger pieces that didn’t blend.
  3. If the chili sauce seems a bit too runny, place it back in the pan and cook down a little. You will want it to be thick enough to coat the chips but still pourable.
  4. In a large skillet over medium heat, warm the vegetable oil. Add the remaining diced onion and sauté for 3-4 minutes until it begins to soften and turn translucent. Add the tortilla chips and gently toss them with the sautéed onion. Make a “hole” in the middle of the chips and crack the eggs into the space. Scramble the eggs as they cook, mixing them in with the chips.
  5. Pour the warm red sauce over the chips and eggs. Stir until completely coated. Cook for another 1-2 minutes to heat through and allow the chips to absorb the sauce slightly.
