Essential Ingredients for Your Soup

Crafting this delightful Tomato Spinach Orzo Soup requires a blend of fresh, simple ingredients that come together to create a harmonious and deeply flavorful experience. Each component plays a vital role in building the soup’s robust character and nutritional value. For precise measurements and step-by-step instructions, please refer to the complete recipe card below.
- Aromatic Base Vegetables: The foundation of any great soup begins with a robust aromatic base. For this recipe, we use a classic mirepoix-like blend of finely chopped onions, celery, and carrots. These vegetables are sautéed until tender, releasing their natural sweetness and creating a depth of flavor that enriches the entire broth. A touch of freshly minced garlic is added to infuse the soup with its pungent and warming notes, truly elevating the overall aroma and taste.
- Rich Tomato Goodness: The star of the show, whole canned tomatoes, provide a sweet, tangy, and robust tomato flavor that forms the heart of this soup. Using whole tomatoes, rather than diced or crushed, allows for a fresher, less processed taste. You can gently break them apart with a spoon as they simmer, creating delightful bursts of tomato in every spoonful. Alternatively, two 15-ounce cans can be used for an even richer tomato base.
- Flavorful Spices & Herbs: The right blend of seasonings transforms simple ingredients into something extraordinary. This soup is beautifully seasoned with dried oregano, thyme, and basil. These Mediterranean herbs complement the tomatoes perfectly, adding an earthy, aromatic complexity that is both comforting and invigorating. Don’t forget a generous amount of salt and freshly ground black pepper to taste, which are crucial for balancing and enhancing all the flavors.
- Nutrient-Dense Spinach: Fresh spinach is folded into the soup towards the end, adding a vibrant green hue and a wealth of nutrients. Its mild flavor wilts beautifully into the hot broth, contributing iron and vitamins without overpowering the other ingredients. If using frozen spinach, ensure it’s thoroughly thawed and squeezed dry to remove excess water, preventing the soup from becoming watery.
- Tender Orzo Pasta: Small, rice-shaped orzo pasta is the ideal addition to this soup. Its petite size makes it delightful to eat and ensures it cooks quickly. It adds a pleasant chewiness and helps make the soup more filling. If orzo isn’t available, other small pasta shapes like pastina, ditalini, or even small elbow macaroni can be used as a substitute, maintaining the comforting texture.
- Vegetable or Chicken Stock: The liquid base is crucial. High-quality vegetable stock keeps the soup vegetarian-friendly, offering a clean and vibrant flavor profile. For those who prefer, chicken stock can also be used to add a slightly richer, more savory undertone. Always opt for a low-sodium option to control the saltiness of your soup.
By bringing these fresh and pantry-staple ingredients together, you’re not just making a soup; you’re crafting a truly wholesome and flavorful culinary experience that is sure to please everyone at your table.

How to Make This Delicious Tomato Spinach Orzo Soup
Preparing this comforting Tomato Spinach Orzo Soup is a straightforward process, making it an ideal choice for both novice cooks and seasoned chefs looking for a quick yet flavorful meal. Follow these simple steps to bring this delightful soup to life in your kitchen:
Step 1: Prepare the Orzo Pasta. The first step is to cook your orzo pasta according to the package directions. It’s important to cook the pasta separately and add it to the soup at the very end to prevent it from becoming mushy and absorbing too much liquid. Once cooked al dente, drain the pasta and rinse it under cold water to stop the cooking process and prevent sticking. Set it aside.
Step 2: Sauté the Aromatics. In a large, heavy-bottomed pot or Dutch oven, heat two tablespoons of olive oil over medium-high heat. Add the chopped onion, celery, and carrots. Sauté these vegetables for about 5-7 minutes, stirring occasionally, until they begin to soften and become slightly translucent. Next, add the minced garlic and cook for another minute until it becomes fragrant, being careful not to burn it. This aromatic base is crucial for developing the soup’s deep flavor.
Step 3: Build the Broth. Pour in the vegetable stock and add the whole canned tomatoes (crushing them gently with your hands or a spoon before adding, if desired). Stir in the dried oregano, thyme, and basil, along with salt and freshly ground black pepper to taste. Bring the mixture to a gentle boil, then reduce the heat to low, cover the pot, and let it simmer for 15 minutes. This simmering time allows the flavors to meld beautifully and the vegetables to become perfectly tender.
Step 4: Incorporate Spinach & Orzo. After the broth has simmered, remove the lid and add the fresh spinach. Stir gently until the spinach wilts into the hot liquid, which should only take about 1-2 minutes. Finally, stir in the pre-cooked orzo pasta, ensuring it’s well combined and warmed through. Taste and adjust seasonings as needed, adding more salt, pepper, or herbs if desired.
Serve your warm Tomato Spinach Orzo Soup immediately in bowls, garnished with fresh basil leaves for a pop of color and extra aroma. It pairs wonderfully with a classic grilled cheese sandwich, perfect for dipping, or a slice of crusty bread. Enjoy this wholesome and comforting meal!
Storage and Reheating Tips
This Tomato Spinach Orzo Soup is fantastic for meal prepping and often tastes even better the next day as the flavors deepen. Proper storage ensures you can enjoy its comforting taste for days to come:
- Storing: Allow the soup to cool completely to room temperature before transferring it to an airtight container. Refrigerate promptly, and it will keep fresh for up to 4 days.
- Reheating: To reheat, simply pour the desired amount into a saucepan and warm over medium-low heat on the stove, stirring occasionally, until heated through. You can also reheat individual portions in the microwave; just ensure it’s piping hot throughout. If the soup has thickened significantly upon standing, you might want to add a splash of vegetable or chicken stock to thin it out to your desired consistency.
- Freezing: For longer storage, this soup freezes beautifully, especially if you cook the orzo separately and add it when reheating. If the orzo is already in the soup, it might become a bit softer after freezing and thawing, but the flavor will remain excellent. Pour cooled soup into freezer-safe containers or bags, leaving some headspace for expansion. Freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
