  • 1/2 cup green pepper, chopped
  • 1/2 cup red pepper, chopped (can use orange or yellow)
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup red kidney beans, or white kidney beans, drained and rinsed
  • 1/3 cup mushrooms, sliced (optional)
  • 1 can diced tomatoes, drained
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Pepper to taste
  • 1/3 cup white cooking wine
  • 1/3 cup Parmesan cheese, for garnish
