  • 1- 14.5 ounce can diced tomatoes
  • 2-15 ounce cans tomato sauce
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 2 bay leaves
  • 3 cups kale, ribs removed, chopped
  • 6 oz. lasagna noodles, broken
  • 1 cup water
  • Salt and pepper to taste
  • Sprinkle parmesan cheese
  • basil leaves, chopped
  • Italian parsley, chopped

Instructions

  1. In a large skillet heat the 2 Tablespoons of olive oil over medium high heat. Add the ground turkey and cook for 5 minutes, breaking it apart. Add in the onion and garlic and continue to sauté until the turkey is browned and cooked through and the onion is softened. Drain any excess fat.
  2. Transfer the turkey mixture to a 5-quart slow cooker. Add the diced tomatoes, tomato sauce, chicken broth, oregano, basil, thyme, and bay leaves. Stir well to combine. Cover and cook on high for 4 1/2 hours, or on low for 7-8 hours.
  3. With 30 minutes remaining in the cooking time, add the broken lasagna noodles and chopped kale to the slow cooker. Stir to ensure noodles are submerged. Re-cover and let the soup continue cooking for an additional 30 minutes, or until the noodles are tender and the kale has wilted.
  4. When ready to serve, ladle the soup into bowls. Top each serving with a generous dollop of ricotta cheese (such as Galbani Ricotta), 1-2 slices of mozzarella cheese (Galbani Mozzarella works wonderfully), a sprinkle of grated parmesan cheese, and a handful of freshly chopped basil.
