- 3 tbsp olive oil
- 2 lbs white fish (such as haddock loins, cod, sea bass, tilapia, or halibut; approximately 6 pieces)
- ¾ cup tahini
- ½ cup fresh lemon juice
- 3 cloves garlic (minced or finely grated)
- ½ cup warm water
- 1 bunch kale (stems discarded, leaves coarsely chopped)
- 1 tsp kosher salt (or to taste)
- Freshly ground black pepper (to taste)
- toasted pine nuts (optional, but highly recommended for crunch and flavor)
- 3 tbsp crispy fried shallots or onions (optional, but a truly transformative addition!)

Continue to cook for another 1 to 2 minutes, or until the fish is entirely opaque throughout and flakes easily when tested with a fork. Be careful not to overcook, as this can dry out the fish.
