Ingredients
For the Lamb Kofta:
- ¼ cup packed minced parsley, plus more for garnishing
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cinnamon
- 2 tsp ground cumin
- ¼ tsp ground cayenne
- 2 ¼ tsp kosher salt
- 2 lbs ground lamb
For the Tahini Sauce:
- ½ cup tahini
- ¼ cup lemon juice
- ½ cup hot water
- 1 clove garlic, minced
- ½ tsp kosher salt, or to taste
Instructions
- Preheat your oven to 400ºF (200ºC). In a large bowl, combine all the lamb kofta ingredients. Use your hands to thoroughly mix everything together, ensuring the spices are evenly distributed throughout the ground lamb for maximum flavor.
- Take approximately ½-cupfuls of the lamb mixture and shape them into long, distinct sausage-like forms. Arrange these koftas in a single layer within a 9×13-inch baking dish. Bake for 25 minutes, or until the koftas are nicely browned on the outside. Meanwhile, in a separate bowl, whisk together all the tahini sauce ingredients until smooth.
- Once the koftas are browned, carefully flip them over in the baking dish. Pour the prepared tahini sauce evenly over the koftas, gently whisking it into any accumulated pan juices to create a rich, integrated sauce. Return the dish to the oven and continue baking for another 10-15 minutes, until the tops of the koftas are further browned and the tahini sauce has visibly thickened to a creamy consistency.
