Today, I’m absolutely delighted to share with you a recipe for a Cinnamon Swirl Coffee Cake that, despite its somewhat lengthy list of ingredients and steps, is surprisingly easy to make and yields incredibly delicious results.   3. Prepare the Cinnamon Swirl Filling: In a separate small bowl, mix together the brown sugar, ground cinnamon, and the optional cocoa powder. Remember, the cocoa powder is primarily used for enhancing the color of the swirl, not for flavor; you can omit it if you like. Set this filling aside.
  4. Start the Cake Batter: In a large mixing bowl, using an electric mixer, beat together the softened butter, salt, both granulated and brown sugars, baking powder, and vanilla extract until the mixture is light, fluffy, and smoothly combined. Scrape down the sides of the bowl as needed.
  5. Incorporate Eggs: Add the large eggs one at a time to the butter mixture, beating well after each addition until fully incorporated and the batter is smooth.
  6. Combine Wet Ingredients: In a separate bowl, whisk together the sour cream (or plain yogurt) and milk until they are smoothly combined. You don’t need to whisk out every single lump from the sour cream.
  7. Alternate Dry and Wet: Gradually add the all-purpose flour to the butter mixture, alternating with the sour cream/milk mixture. Begin and end with flour. Beat gently after each addition, just until combined, being careful not to overmix the batter. Overmixing can lead to a tough cake.
  8. First Batter Layer: Pour or carefully spread half of the cake batter (approximately a scant 3 cups) into your prepared baking pan(s). Spread it evenly to the edges of the pan(s). If you’re using two 9″ round pans, spread approximately 1 1/3 cups of batter evenly in each pan.
  9. Add Cinnamon Filling: Evenly sprinkle the entire prepared cinnamon swirl filling over the first layer of batter in the pan. Distribute it as evenly as possible.
  10. Second Batter Layer & Swirl: Carefully spread the remaining cake batter atop the cinnamon filling. The batter is thick, so you might find an offset spatula particularly helpful for gently spreading without disturbing the filling too much. Once covered, take a simple table knife or a thin skewer and gently swirl it through the batter, creating beautiful ribbons and pockets of cinnamon throughout the cake. The goal is a marbled effect, not a fully combined mixture.
  11. Add Streusel Topping: Generously sprinkle all of the reserved streusel topping over the top of the batter in the pan.
  12. Bake the Cake: Place the cake in the preheated oven and bake until it’s a dark golden brown around the edges, with a medium-golden top showing no light patches. To check for doneness, a wooden skewer or cake tester inserted into the center should come out clean. Baking typically takes about 55 to 60 minutes for a 9″ x 13″ pan, or 50 to 55 minutes for two 9″ round pans. The cake should also spring back gently when lightly pressed in the middle.
