  • 4 chicken thighs, bone in, skin on
  • 3/4 cup fresh cranberries, {or sub in cranberry sauce}
  • 1 cup cranberry juice
  • 1 orange, sliced into a half and the other half sliced into quarters
  • 2 sprigs fresh rosemary
  • 2 tablespoons butter
  • 1 1/2 tablespoons brown sugar
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  • Preheat oven to 350° F (175°C).
  • Pat the chicken dry with a paper towel. Season tops and bottoms of the chicken thighs with garlic salt and black pepper. Cut the orange in half; slice one half into quarter-inch slices (for garnish). Leave the other half whole for later use.
  • In a cast iron or heavy-bottomed, oven-safe pan, melt two tablespoons of butter over medium-high heat. Once hot, place the chicken thighs in the pan skin side down.
  • Brown the chicken in the pan until the skin is golden and crispy, then remove the chicken from the pan and set aside.
