Why Instant Pot Fried Rice is a Weeknight Game Changer
The Instant Pot isn’t just a kitchen gadget; it’s a culinary revolution, especially when it comes to dishes like fried rice. Here’s why this pressure cooker method will transform your cooking routine:
- Speed and Efficiency: Unlike traditional stovetop methods that require pre-cooking and cooling rice, the Instant Pot handles cooking the rice perfectly from scratch, often in less than 15 minutes of active cook time. This means you can have a delicious, hot meal on the table faster than ordering delivery.
- Consistent Results: The sealed environment of the Instant Pot ensures that your rice cooks evenly and consistently every time, resulting in perfectly fluffy grains without the guesswork. No more dry or mushy rice!
- One-Pot (Almost) Wonder: While a quick sauté finish is essential for that signature fried rice texture, the bulk of the cooking happens in a single pot, simplifying cleanup and streamlining your cooking process.
- Healthier Alternative: By making it at home, you have complete control over the ingredients. You can opt for healthier choices like brown rice, low-sodium soy sauce, and a generous amount of fresh or frozen vegetables, creating a dish that’s both flavorful and nutritious.
- Versatility at Its Best: This recipe serves as an excellent base for endless customization. Add your favorite proteins, extra vegetables, or unique flavor enhancers to make it truly your own. It’s fantastic as a main dish or a vibrant side.
My family, especially the kids, absolutely adores this fried rice. They often ask for second helpings, which is always a good sign! It’s proof that healthy eating can be incredibly appealing and delicious.

The Secret to Flavorful Fried Rice: Key Ingredients Explained
Creating delicious fried rice starts with understanding the role of each ingredient. Here’s a breakdown of what you’ll need and why it matters:
The Foundation: Rice & Broth
- Brown Rice (or White Rice): My go-to for this recipe is brown rice, offering a healthier profile with more fiber and nutrients. It cooks beautifully in the Instant Pot and provides a hearty texture. However, if you prefer, white rice works perfectly fine. Just be aware that cooking times might need slight adjustment if using white rice, as it generally cooks faster. For best results, always rinse your rice thoroughly before cooking to remove excess starch and prevent stickiness.
- Broth (or Water): The liquid component is crucial for cooking the rice. I highly recommend using vegetable broth or chicken broth instead of just water. The broth infuses the rice with an extra layer of savory flavor right from the start, contributing significantly to the overall taste of your fried rice. If broth isn’t available, water will certainly work, but you might want to increase the amount of soy sauce or other seasonings slightly.
Vibrant Veggies: Fresh vs. Frozen
- Frozen Stir-Fry Vegetables: For ultimate convenience, a frozen stir-fry vegetable mix is a fantastic choice. These typically include carrots, peas, corn, and sometimes green beans, which are all excellent in fried rice. They require no chopping and can be added directly from the freezer. Any type of frozen vegetable will do – feel free to use what you have on hand, such as frozen peas and carrots, or a medley of broccoli florets and bell peppers.
- Fresh Vegetables (Optional): If you prefer fresh, a mix of diced carrots, peas, corn, bell peppers, and broccoli florets would be delicious. For heartier vegetables like carrots or broccoli, consider steaming them lightly or sautéing them for a few minutes before adding to ensure they are tender-crisp. If you’re using fresh onions, sauté them in a little oil for a few minutes before adding the rice and other ingredients to mellow their flavor.
The Flavor Makers: Soy Sauce & Sesame Oil
- Soy Sauce: This is the backbone of fried rice flavor. It provides that essential umami and savory depth. I always opt for low-sodium soy sauce to control the overall saltiness, allowing the natural flavors of the other ingredients to shine. Regular soy sauce works too, but you might want to use slightly less.
- Sesame Oil: While not strictly necessary, a dash of toasted sesame oil adds an incredibly aromatic and nutty depth that truly elevates fried rice. It’s usually added at the end of cooking to preserve its delicate flavor. If you don’t have it, your fried rice will still be delicious, but this ingredient provides an authentic touch.
- Olive Oil: Used for sautéing, olive oil (or another neutral oil like canola or vegetable oil) helps create those desirable slightly crispy bits of rice and ensures the vegetables are cooked through.
Elevate Your Dish: Essential Garnishes & Add-ins
- Sliced Green Onions: These provide a fresh, mild oniony bite and a pop of vibrant green color. Always a classic fried rice garnish!
- Chopped Peanuts: For a delightful crunch and a hint of nutty flavor, chopped peanuts are an excellent addition.
- Sesame Seeds: Toasted sesame seeds offer a subtle nutty flavor and visual appeal.
- Scrambled Egg: A scrambled egg is a traditional and delicious addition to fried rice. You can cook it separately and then stir it in at the end.
- Protein Boost: Turn your fried rice into a complete meal by adding cooked protein. Consider diced cooked chicken (such as Lemon Marinaded Chicken), succulent shrimp (Air Fryer Coconut Shrimp), or even tender strips of Grilled Ribeye Steak. Firm tofu or edamame are also fantastic vegetarian options.

Step-by-Step Guide: How to Make Perfect Instant Pot Fried Rice
Making fried rice in the Instant Pot is surprisingly simple. Follow these steps for a perfect batch every time:
1. Preparing Your Instant Pot for Rice Perfection
- Add Rice & Water/Broth: Begin by adding your rinsed brown rice and broth (or water) directly into the Instant Pot inner pot. Ensure the rice is evenly distributed.
- Seal the Pot: Secure the lid on your Instant Pot. Double-check that the steam release valve is switched to the “Sealing” position. This is critical for pressure to build inside the pot.
2. Pressure Cooking for Fluffy Grains
- Set Cooking Time: Select the “Manual” or “Pressure Cook” function (depending on your Instant Pot model), set it to “Normal” or “High Pressure,” and adjust the timer for 5 minutes. This timing is ideal for brown rice, yielding a perfectly cooked, slightly chewy texture that holds up well for frying.
- Allow to Pressurize: The Instant Pot will take approximately 10 minutes to come to full pressure. During this time, you’ll see a float valve rise. Once pressure is reached, the 5-minute cooking countdown will begin.
- Quick Pressure Release: Once the cooking cycle is complete, carefully release the pressure manually by switching the valve to the “Venting” position. Be extremely cautious as a strong burst of steam will escape, and there might be some splattering. Use a kitchen towel or oven mitt to protect your hand.
3. The Sauté Finish: Infusing Flavor and Texture
- Switch to Sauté Mode: Once all the pressure has been released and the float valve has dropped, remove the lid. Turn the Instant Pot to the “Sauté” function (set to normal).
- Add Remaining Ingredients & Sauté: Add the frozen vegetables, soy sauce, olive oil, and sesame oil to the cooked rice in the Instant Pot. Stir everything together gently to combine.
- Sauté Until Crispy: Continue to sauté the rice and vegetables, stirring occasionally, for 5-8 minutes. The goal is to heat the vegetables through and allow some of the rice grains to lightly crisp up at the bottom of the pot, developing that classic fried rice texture and flavor.
- Serve & Enjoy: Your Instant Pot Fried Rice is now ready! Serve immediately, garnished with chopped peanuts and sliced green onions, if desired, for an extra layer of flavor and freshness.

Troubleshooting & Tips for the Best Fried Rice
Even though Instant Pot Fried Rice is straightforward, a few tips can ensure perfection every time:
- Achieving Crispy Bits: The “Sauté” function at the end is key for texture. Don’t rush this step! Allow the rice to sit for a minute or two between stirs so that some grains can brown and crisp up at the bottom of the pot. A little patience here makes a big difference.
- Preventing Soggy Rice: Ensure you use the correct liquid-to-rice ratio. For brown rice in the Instant Pot, a 1:1 ratio (2 cups rice to 2 cups liquid) works perfectly to yield fluffy, separate grains that are ideal for frying. Rinsing the rice thoroughly before cooking also helps prevent stickiness.
- Customizing Your Fried Rice: This recipe is a blank canvas! Feel free to be creative.
- Add Heat: A pinch of red pepper flakes or a drizzle of sriracha can add a pleasant kick.
- Umami Boost: A teaspoon of oyster sauce or a splash of fish sauce can deepen the savory notes.
- More Veggies: Water chestnuts for crunch, edamame for protein, or even thinly sliced mushrooms are all delicious additions.
- Sweet & Savory: A tiny bit of honey or brown sugar can balance the savory flavors, especially if you like a slightly sweeter fried rice.
Storage Solutions: Keep Your Fried Rice Fresh
Fried rice is fantastic as leftovers, and storing it properly is essential for safety and taste.
Refrigeration Best Practices
To keep your fried rice fresh for as long as possible, it’s crucial to refrigerate leftovers promptly. Allow the fried rice to cool down slightly, then spread it out in a shallow baking dish or a large airtight container. This helps it cool more quickly and reduces the risk of bacterial growth. Properly stored in the refrigerator, fried rice will remain fresh for up to 4 days. When reheating, ensure it’s heated thoroughly to a safe temperature.
Freezing Fried Rice for Future Meals
One of the best things about fried rice is its freezer-friendliness! You can easily freeze a portion for a quick meal later.
- Cool Completely: First, ensure the fried rice has cooled completely in the refrigerator. This step is vital before freezing to prevent ice crystal formation and preserve texture.
- Package for Freezing: Transfer the cooled fried rice into a large freezer-safe zip-top bag, pressing out as much air as possible, or a durable airtight freezer container. For individual portions, divide the fried rice into smaller bags or containers. Label with the date.
- Reheating from Frozen: When you’re ready to enjoy your frozen fried rice, remove it from the freezer. You can reheat it directly from frozen or allow it to thaw in the refrigerator overnight. Add the fried rice to a skillet with a little olive oil or a tablespoon of water, and slowly reheat over medium heat, stirring occasionally, until it’s warmed through and steaming hot. For best results, avoid over-microwaving, as it can sometimes lead to dry rice.

Julia Jolliff
10 minutes
25 minutes
35 minutes
4
servings
Ingredients
- 2 cups brown rice , or white rice
- 2 cups water, or broth
- 2 cups frozen stir-fry vegetables
- 1 Tablespoon olive oil
- 1/4 cup low-sodium soy sauce
- 1 Tablespoon sesame oil
- peanuts , optional– for garnish
- green onions, optional– for garnish
Instructions
-
Add the rice and water to the Instant Pot.
-
Attach the lid and ensure the vent is in the “sealing” position.
-
Heat the Instant Pot using the Manual Pressure-Normal-High Pressure function and set the timer for 5 minutes.
-
The Instant Pot will take about 10 minutes to come to pressure and will then begin counting down from 5.
-
Once the Instant Pot has finished cooking, release the pressure manually by switching the valve to the “venting” position. Be careful— the valve will steam and may splatter.
-
Turn the Instant Pot to the Saute function.
-
Add the frozen vegetables, soy sauce, olive oil, and sesame oil. Saute the rice and vegetables, stirring occasionally for 5-8 minutes, or until the rice has started to crisp in some areas and the vegetables are hot.
-
Serve with chopped peanuts and sliced green onions, if desired.
Notes
- Fresh vegetables would also work in this recipe— I’d recommend a mix of carrots, broccoli, and peas. If you want to use fresh onion, saute it for a few minutes before adding it to the rice so it isn’t overpowering.
- If you don’t have sesame oil, it can be left out of this recipe. It adds a nice nuttiness but it isn’t necessary for great fried rice!
- If you like egg in your fried rice, remove the cooked rice and veggies from the Instant Pot, crack an egg (or two) and cook them through fully. Break the eggs up and then return the rice and veggies to the Instant Pot and stir to combine.
- This recipe is intended as a blank slate— feel free to be creative! Water chestnuts, edamame, or unsweetened peanut butter would all be delicious additions.
