  • 3 – 4 Chicken Breasts, skinless/boneless (approx. 8 ounce each)
  • 1 – 15 ounce jar of your favorite salsa
  • 1/4 cup of water
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. In a small bowl, mix together the oregano, garlic powder, chili powder, salt, and pepper. Season the chicken breasts thoroughly with this spice mixture.
  2. Put about 1/2 of a cup of salsa on the bottom of the Instant Pot insert, creating a thin, even layer.
  3. Carefully place the seasoned chicken breasts on top of the salsa layer, then pour the remaining salsa over the chicken.
  4. Add 1/4 cup of water to the pressure cooker. Seal the lid and turn the steam knob to the “Sealing” position. Set the Instant Pot to “Manual” or “Pressure Cook” on HIGH for 10 minutes. Allow a 5-minute natural release, then perform a quick release for the remaining steam and pressure. Always ensure the Instant Pot is turned off before quick-releasing steam, directing it away from you.
  5. Remove the cooked chicken and transfer it to a large bowl. Use two forks to easily shred the chicken. Return the shredded chicken to the Instant Pot and stir it well with the flavorful juices. If there is too much liquid, you can drain some of it to your liking.
