This, truly, is vacation perfected – a symphony of relaxation, connection, and culinary exploration that rejuvenates the soul.

Rediscovering the Joys of Atlantic Living: Vacation Highlights

This trip was a vibrant tapestry woven with countless memorable experiences, each one a highlight in its own right. From the quiet corners of my family home to the rugged beauty of the Fundy coastline, New Brunswick offered a unique blend of adventure and tranquility.

  • New Arrivals & Old Friends: The pure joy of cuddling the adorable new babies of my best friends forever brought an immeasurable warmth to my heart. There’s something truly special about witnessing new life and sharing these precious moments with the people who know you best.
  • Paddling Serenity: A delightfully simple afternoon spent kayaking with my sister on a humorously tiny lake was a testament to the fact that sometimes, the smallest adventures create the biggest smiles. The gentle rhythm of the paddles and the shared laughter were pure bliss.

Armed with beer and s’mores, I wrapped myself in two layers of pants, wool socks, a hoodie, a winter jacket, and a toque to brave the crisp evening air. This commitment to warmth, however, led to endless good-natured teasing about no longer being a true “Maritimer” – a playful jab at my supposed loss of cold-weather resilience after years out West.
  • Exploring Fundy’s Flavors: Family excursions along the majestic Fundy coastline and through its quaint fishing towns were a highlight. Each stop offered a chance to savor local delicacies, from crispy fried clams and perfectly battered fish and chips to creamy peanut butter fudge crunch ice cream – a true taste of the Maritimes.

The Unrivaled Taste of Atlantic Lobster

No trip to New Brunswick is complete without celebrating its most famous culinary export: lobster. I had the immense pleasure of enjoying not one, but two gorgeous lobster feasts. Sourced straight from the cold, pristine waters of the Atlantic, this truly is the best lobster in the world – sweet, succulent, and utterly unforgettable. Each bite was a testament to the rich bounty of the ocean and the traditions of Atlantic Canadian fishing communities.

Unexpected Adventures: Surviving Irene

Even a perfect vacation can have its unexpected twists. I vividly recall surviving hurricane Irene, an experience that added an unforeseen element of drama to the trip. While I emerged unscathed, the cottage roof did not, a stark reminder of nature’s power and the resilience often found in coastal communities.

A Forager’s Delight: Dulse and Wild Blueberries

  • Discovering Dulse: My fascination with local sea vegetables led me to procure an inordinate amount of dulse. This nutrient-rich red seaweed, often dried and eaten as a snack or added to dishes, is a unique taste of the Atlantic coastline and a true Maritimes delicacy.
  • The Quest for Wild Blueberries: My absolute obsession, however, was with New Brunswick’s wild blueberries. These tiny, succulent, midnight blue gems are found only on this coast and possess an intense flavor unlike any other blueberry. I made countless stops at farm stands, local markets, and even grocery stores, urging whoever was driving to pull over to buy “MORE wild blueberries.” This quest was fueled by a singular purpose: to make a totally unreasonable amount of jam. The intoxicating aroma of blueberries bubbling on the stove and the satisfaction of preserving summer’s bounty are among my favorite vacation memories.
  • Jam-Packed Journey Home: The culmination of my jam-making endeavors required an additional suitcase, acquired specifically to transport said unreasonable amount of wild blueberry jam back to the West Coast. A small price to pay for a taste of the Maritimes to last through the year!

From Atlantic Charm to West Coast Abundance: A New Culinary Chapter

Now, back on the West Coast, I find myself brain rested, heart warm from cherished memories, and tummy satisfied by weeks of delicious East Coast fare. My culinary focus shifts with the seasons, and with autumn approaching, my intention is clear: to enjoy every last piece of tree fruit I can get my mitts on. Peaches, nectarines, plums, apricots, pluots, cherries, pears – the West Coast offers its own delightful bounty, and I intend to savor each and every one until the very last fruit falls, ripe and rotting, from the tree.

Recipe: Pan-Seared or Grilled Salmon with Refreshing Nectarine Salsa

This easy-to-make dish brings together succulent salmon with a bright, flavorful salsa, perfect for a healthy and quick meal.

Ingredients:

  • 4 salmon portions, steaks, or fillets (about 6 oz each)
  • 1 tbsp fresh lime juice
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 cup diced cucumber
  • 1 cup diced nectarine (from one large or two small nectarines)
  • 1/4 cup chopped green onion (scallions)
  • 2 tbsp seasoned rice vinegar
  • 2 tsp granulated sugar
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions:

  1. Prepare the Salmon: In a small bowl, whisk together the lime juice, honey, and olive oil until well combined. Generously brush this mixture over both sides of your salmon portions. Season the fish well with salt and freshly ground black pepper.
  2. Cook the Salmon: You have several options for cooking:
    • Grill: Preheat your grill to medium-high heat. Grill the salmon for 4-6 minutes per side, depending on thickness, until it’s just opaque in the center and flakes easily with a fork.
    • Pan Sear: Heat a large, oven-safe skillet (preferably cast iron) over medium-high heat with a little olive oil. Sear the salmon, skin-side down first if applicable, for 3-5 minutes until crispy. Flip and continue cooking for another 2-4 minutes, or finish in a preheated oven at 375°F (190°C) until cooked through.
    • Broil: Place salmon fillets on a baking sheet lined with foil. Broil for 6-10 minutes, about 4-6 inches from the heat source, until the salmon is opaque in the center.
  3. Prepare the Nectarine Salsa: While the salmon is cooking, combine all the other ingredients – diced cucumber, diced nectarine, chopped green onion, seasoned rice vinegar, and sugar – in a medium bowl. Toss gently to combine. Season the salsa to taste with salt and freshly ground black pepper. Adjust sweetness or acidity as desired.
  4. Serve: Plate the cooked salmon and generously top each portion with the vibrant nectarine salsa. Serve immediately and enjoy this healthy, flavorful meal!
