Cardamom-Plum Cake: A Rustic Delight Inspired by Galiano Island’s Charm

Every culinary creation tells a story, and this exquisite Cardamom-Plum Cake is no exception. Its inspiration blossomed from a recent enchanting visit to Galiano Island, a jewel among British Columbia’s captivating Gulf Islands. Just a couple of weekends ago, attending a beautiful wedding on this serene isle, I was once again reminded of the unparalleled beauty that defines my home of ten years.

British Columbia consistently mesmerizes with its breathtaking, jewel-toned landscapes—a perfect harmony of rugged wilderness and tranquil serenity. For those who haven’t yet had the pleasure, a visit to this part of the world is an absolute must. Galiano Island, particularly, holds a special allure as the Gulf Island closest to Vancouver, making it an accessible slice of paradise that feels worlds away from city life.

The stunning coastal views and vibrant marine life of Galiano Island.

Our stay on Galiano was nothing short of magical. Imagine waking up to a hundred meters from your front door, seals playfully frolicking in the turquoise sea, with misty, emerald islands painting a picturesque backdrop. The air was crisp, the views expansive, and the tranquility profound. Right outside our window, bountiful pear and plum trees dripped with ripe, succulent fruit, their branches heavy with nature’s bounty. We even heard tales of a pod of majestic orcas gracing the waters with their presence, though sadly, our schedule didn’t permit us to witness them firsthand. Nevertheless, the island’s vibrant ecosystem and untouched beauty created an unforgettable atmosphere.

My son, Theo, was particularly captivated by the local produce. He spent his days happily snacking on sun-warmed, perfectly ripe plums, plucking them straight from the branches. His sheer enthusiasm for these juicy plums—and the adorable mess he made while devouring them—was infectious. It was this pure, unadulterated joy that sparked the idea for this cake. Upon our return home, inspired by the island’s generous orchards and Theo’s delightful plum-fueled adventure, I headed straight to the farmers market and bought a large quantity of plums, knowing exactly what I wanted to create: a cake to capture the essence of our Galiano escape.

Crafting the Cardamom-Plum Cake: A Symphony of Flavors

This cake is more than just a dessert; it’s a tribute to simple pleasures and the beauty of natural ingredients. The combination of tender cake, juicy plums, and the subtle warmth of cardamom creates a truly harmonious flavor profile. The key to its irresistible aroma and taste lies in the thoughtful selection and preparation of its star spice.

The Magic of Cardamom: Elevating Every Bite

Freshly crushed cardamom pods release an unparalleled fragrance.

I have a profound appreciation for the heady, floral aroma of cardamom. It’s a spice that can transform a simple cake into something truly exotic and memorable. For the freshest and most vibrant flavor, I always opt for green cardamom pods. The process is simple yet crucial: I remove the tiny, dark seeds from the pods and then finely smash or chop them using a chef’s knife or a mortar and pestle. This method ensures that the essential oils are released just before mixing, providing an unparalleled freshness that dusty, pre-ground cardamom simply cannot match. The difference is truly astounding.

However, if cardamom isn’t your preferred spice, or if you simply don’t have it on hand, don’t fret! The cake will still be wonderfully delicious without it, allowing the natural sweetness and tartness of the plums to shine through even more prominently. It’s a versatile recipe that welcomes personal taste variations.

Perfecting the Plums: A Rustic Touch

For this recipe, I specifically chose Italian prune plums. Their firm texture and distinct tartness make them ideal for baking, as they hold their shape beautifully and provide a wonderful counterpoint to the rich sweetness of the cake batter. I simply quartered them, which allows them to be scattered generously throughout the cake and elegantly arranged on top. The sight of these vibrant plum pieces nestled within the golden cake is visually appealing, giving the dessert a charming, rustic quality. Each bite offers a delightful burst of tart, juicy fruit, perfectly balancing the tender, spiced crumb.

There’s something inherently appealing about rustic desserts, isn’t there? Their understated elegance often speaks volumes. For serving, a simple dusting of confectioners’ sugar is usually all that’s needed to complete this delightful creation. The subtle sweetness of the sugar beautifully complements the cake’s flavors without overpowering them. Of course, a generous scoop of good quality vanilla ice cream alongside a warm slice of this plum cake is never a bad idea; in fact, it often elevates the experience to pure bliss. The creamy, cold ice cream melts slightly into the warm cake, creating an irresistible contrast.

Cardamom-Plum Cake

By: Jennifer Pallian BSc, RD

A fluffy, tender, cardamom-scented cake studded and topped with juicy, ripe plums.

Prep Time: 20 minutes

Cook Time: 40 minutes

Total Time: 1 hour

Servings: 8

Ingredients

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 10 cardamom pods (seeds removed and finely crushed with a knife or mortar and pestle)
  • ½ tsp kosher salt
  • ½ cup melted unsalted butter
  • 1 ¼ cups sour cream
  • ¼ cup milk
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 12 oz ripe plums, cut into ½-inch slices (yields approximately 2 cups sliced)

Instructions

  1. Preheat your oven to 350ºF (175ºC). Lightly grease and flour a 9×2-inch round cake pan. For easy removal, line the bottom of the pan with parchment paper, then set it aside.
  2. In a large mixing bowl, thoroughly whisk together the dry ingredients: flour, granulated sugar, baking soda, baking powder, your freshly crushed cardamom, and kosher salt.
  3. In a separate medium bowl, whisk together the wet ingredients: melted butter, sour cream, milk, egg, and pure vanilla extract until well combined.
  4. Pour the wet mixture into the bowl of dry ingredients. Stir gently until they are just barely combined, making sure not to overmix. A few small floury patches are perfectly fine at this stage.
  5. Carefully fold in three-quarters of the sliced plums into the batter. As you do this, any remaining floury patches will likely be incorporated. Remember, the key is to avoid over-mixing for a tender crumb.
  6. Transfer the prepared cake batter into your greased and floured cake pan. Arrange the remaining sliced plums decoratively on top of the batter.
  7. Bake for 35-45 minutes, or until the top of the cake feels springy when lightly pressed and a toothpick inserted into the center comes out clean or with just a few moist crumbs attached.
  8. Once baked, allow the cake to cool in the pan on a wire rack for 10 minutes. Then, run a thin knife around the edges of the cake to loosen it. Carefully invert the cake onto a plate or a clean oven mitt. Immediately flip it right-side-up onto the wire rack to cool completely before transferring it to a cake stand or serving plate.

This Cardamom-Plum Cake is a celebration of simple, wholesome ingredients and the unforgettable charm of British Columbia’s natural beauty. Whether you’re baking it to evoke memories of a tranquil island escape or simply to enjoy a delightful homemade treat, it promises to be a favorite. The tender crumb, the aromatic cardamom, and the sweet-tart bursts of plum create a truly comforting and elegant dessert.
