Ingredients

  • 4 tbsp butter
  • 3 lbs yellow onions halved lengthwise and thinly sliced crosswise
  • salt
  • ½ cup dry white wine
  • 6 cups beef broth
  • 1 ½ cups water
  • 3 sprigs thyme leaves
  • 1 bay leaf
  • ½ tsp pepper
  • 6 slices baguette
  • 1 200- gram Saint-Honoré brie

Instructions

  1. Heat the butter in a heavy-bottomed pot or Dutch oven (at least 5 quarts/liters) over medium heat. Add onions and a pinch of salt. Cook onions, stirring occasionally, until they are deep golden brown, about 40 minutes. This slow process is crucial for developing the rich, sweet flavor.
  2. Add white wine and cook, stirring, for 2 minutes to deglaze the pot and incorporate its delicate flavors. Add beef broth, water, thyme, bay leaf, pepper, and a good pinch of salt (the exact amount will depend on the salinity of your broth, so taste and adjust later).
