Ashley has been navigating incredibly challenging times, and a warm, nourishing meal like this can offer a small measure of comfort and support when it’s needed most.

Ashley and Ryan were high school sweethearts whose love story led them to marriage. Their joy knew no bounds when they discovered they were expecting their first child. However, this profound happiness was tragically overshadowed just one week later by a devastating diagnosis: Ryan, a healthy 29-year-old, was diagnosed with Stage 4 Colon Cancer.
I had the privilege of meeting Ashley at a food blogging conference in Chicago when she was pregnant with their son, Miles. From the moment we met, I was struck by her incredible positivity, warmth, and friendly spirit. I cherished the time we spent getting to know each other, and it was during our conversations that I learned of her family’s arduous journey. Over the past year, I’ve followed Ashley’s updates on her Facebook page, witnessing her remarkable resilience firsthand.
Ashley is, without a doubt, one of the strongest and most positive women I know, despite enduring hardships that would challenge anyone’s spirit. When Miles was born, he became a beacon of hope, giving Ryan renewed strength and purpose in his fight against cancer. Their “miracle baby” has truly been their driving force.
Miles was born healthy and happy, bringing immense joy into his parents’ lives. However, at just eight weeks old, while Ashley was changing his diaper, she noticed something alarming – what appeared to be a seizure. They rushed him to the hospital, where blood tests confirmed that Miles, at a mere two months old, was in kidney failure. The seizure was a direct result of this critical condition.

After navigating three different hospitals and undergoing countless tests, the heartbreaking diagnosis was confirmed: Miles has a rare disease called Primary Hyperoxaluria (Type 1). This condition means he will require life-saving liver and kidney transplants to survive.
Their daily lives are a testament to unimaginable strength and dedication. They juggle Ryan’s bi-weekly chemotherapy treatments with the demanding, around-the-clock care for Miles, who undergoes hemodialysis four days a week and peritoneal dialysis daily, in addition to a multitude of medications. Ashley’s story profoundly impacts me. Her positive updates, her unwavering spirit, and the sheer magnitude of the challenges she endures serve as a daily reminder to cherish every single moment in life and to be eternally grateful for the love of family and friends.

Sausage, Roasted Red Pepper, and Gouda Macaroni and Cheese Recipe

Ingredients
- 16 oz. elbow macaroni, cooked al dente and drained
- 2 Tablespoon olive oil
- 3 turkey sausage links, casing removed, crumbled
- 3 Tablespoons butter
- 1/4 cup milk, skim or whole milk (use your preference for creaminess)
- 2 cups gouda cheese, shredded (smoked gouda is also delicious)
- 2 cups parmesan cheese, freshly grated
- 2 cups sharp cheddar cheese, shredded
- 12 oz. roasted red peppers, liquid drained and chopped
- 6 oz fresh spinach, washed and roughly chopped
- Salt and pepper , to taste
- Panko breadcrumbs, for optional garnish
- Crispy onion straws, for optional garnish
- Red pepper flakes, crushed, for optional heat

Begin by preparing the elbow macaroni. Cook it according to the package directions until it’s al dente (slightly firm to the bite). Once cooked, drain the pasta thoroughly and set it aside. This ensures your macaroni will hold up well in the creamy sauce.

In a large, heavy-bottomed skillet or Dutch oven, heat the 2 tablespoons of olive oil over medium heat. Add the crumbled turkey sausage (with the casing removed). Break the sausage into smaller pieces with a spoon as it cooks. Sauté until the sausage is nicely browned and cooked through. Once done, transfer the cooked sausage to a bowl and set it aside, leaving any rendered fat in the skillet.

Using the same skillet (no need to clean it!), melt the 3 tablespoons of butter over medium heat. Once the butter has melted, pour in the 1/4 cup of milk. Add a dash of salt and pepper to the mixture. Bring this to a gentle boil, continuously whisking to ensure everything is well combined and smooth. Once boiling, reduce the heat to low and gradually add the shredded Gouda, Parmesan, and sharp cheddar cheeses. Continue to whisk gently until all the cheese has completely melted and the mixture transforms into a thick, smooth, and creamy cheese sauce. Patience is key here to avoid a grainy sauce.

Now, it’s time to incorporate the additional flavors and textures. Add the chopped roasted red peppers, the cooked turkey sausage, and the fresh spinach to the cheese mixture in the skillet. Stir everything together gently but thoroughly. Continue to stir until the fresh spinach has completely wilted into the sauce. This step adds beautiful color, flavor, and a touch of nutrition.
