Highlighting Edamame: A Nutritional Powerhouse

One of the star ingredients in this stir-fry, and truly a personal favorite, is edamame. We’re proud to highlight the incredible benefits of this soyfood, especially as April is celebrated as National Soyfoods Month alongside our friends at the Soyfoods Association of North America. Edamame, or young soybeans, are not only delicious but also incredibly nutritious and environmentally friendly.

Edamame is remarkably versatile. I love tossing them into stir-fries for added texture and protein, but they also make a fantastic snack on their own or as a healthy side dish. My children are particularly fond of them, which makes me feel even better about incorporating them into our family meals. Knowing that they are packed with high-quality protein and produced in an earth-friendly way ensures that I’m making a responsible and healthy choice for my family.

When preparing stir-fries, I always recommend seeking out shelled edamame. This convenient form saves you time and effort, allowing you to simply add them directly to your pan alongside other vegetables during cooking.

The Health Benefits of Soy and Edamame

Soybeans, the source of edamame, are a remarkable food. Naturally cholesterol-free, they provide all nine essential amino acids necessary for human growth and overall health, making them a complete protein source. The nutritional profile of edamame is truly impressive: just half a cup of cooked soybeans delivers approximately 29% of your daily recommended protein, 21% of your daily fiber, 25% of your iron, and 14% of your calcium. These small but mighty legumes truly pack a significant nutritional punch!

Beyond their robust macronutrient and micronutrient content, studies suggest that incorporating soy into your diet may offer several health advantages. It can contribute to heart health, help protect bone density, and even reduce oxidative stress often associated with exercise. This makes edamame a beneficial food for athletes and anyone looking to support their body’s performance and recovery processes. Including edamame in dishes like this stir-fry is a delicious and easy way to reap these incredible benefits.

Eating the Rainbow: Maximizing Your Meal’s Nutrition and Appeal

Beyond ensuring a good source of protein, one of my primary goals when creating meals for my family is to incorporate a “rainbow of colors” onto their plates. This isn’t just about making the meal look appealing; it’s a simple, intuitive way to boost the nutritional value of your food. The more natural colors you include, the wider the spectrum of vitamins, minerals, and antioxidants your family will consume, contributing to their overall health and well-being.

In this stir-fry, we aim for that colorful diversity. I often grab a variety of bell peppers – red, yellow, orange, and green – and use a portion of each to create a vibrant medley. These not only add beautiful colors but also distinct flavors and textures, along with a significant dose of Vitamin C. Other fantastic additions to any stir-fry include fresh broccoli florets, crisp bok choy, tender zucchini, or even rich eggplant. Don’t hesitate to get creative and customize your stir-fry with whatever fresh vegetables are in season or your family enjoys most.

Eating the rainbow is a delicious and effective strategy for holistic health. It turns every meal into an exciting culinary adventure, making healthy eating both rewarding and visually stunning. This Asian Shrimp Edamame Stir-Fry perfectly embodies this philosophy, proving that healthy can indeed be incredibly appetizing and beautiful.

Customizing Your Stir-Fry: Endless Possibilities

The beauty of stir-fries lies in their incredible flexibility. This Asian Shrimp Edamame Stir-Fry recipe serves as a fantastic foundation, but you can easily adapt it to suit your dietary needs, preferences, or what ingredients you have readily available.

  • Protein Alternatives:
    • Vegetarian/Vegan: To make this dish vegetarian or vegan, simply omit the shrimp entirely. You can enjoy the vegetable and edamame medley as is, or introduce plant-based protein like firm tofu (pressed and cubed), tempeh, or even chickpeas for added substance.
    • Chicken: If shrimp isn’t your favorite or you prefer poultry, chicken breast or thigh, cut into bite-sized pieces, makes an excellent substitute. Cook the chicken until browned and cooked through before adding vegetables.
    • Beef or Pork: Thinly sliced beef sirloin, flank steak, or pork tenderloin can also be used. Ensure to cook these meats quickly over high heat to keep them tender.
  • Vegetable Variations:
    • Feel free to mix and match vegetables based on your taste and what’s in season. Great additions include sliced carrots, mushrooms, snow peas, sliced onions, asparagus, or even kale or spinach (added at the very end).
    • Broccoli florets and bok choy are classic stir-fry ingredients that would complement the existing vegetables beautifully.
  • Spice Level:
    • Adjust the amount of red chili garlic sauce to your liking. Omit it entirely for a mild version, or add more for a bolder, spicier kick.
    • A dash of sriracha or red pepper flakes can also enhance the heat.
  • Gluten-Free Option: To make this recipe gluten-free, simply substitute regular soy sauce with tamari, which is a gluten-free alternative.

Serving Your Delicious Stir-Fry

This Asian Shrimp Edamame Stir-Fry is incredibly satisfying on its own, but it also pairs wonderfully with a variety of accompaniments. For a classic meal, serve it over a bed of fluffy white or brown rice to soak up all that delicious sauce. If you prefer noodles, lo mein or rice noodles are excellent choices. For a lighter, low-carb option, consider serving it with cauliflower rice or quinoa. A simple side salad with a light vinaigrette can also complement the flavors beautifully, adding another layer of freshness and texture to your meal.

  • 12 oz. frozen, shelled edamame
  • 1 1/2 cups sugar snap peas
  • Salt and pepper to taste
  • cilantro, Freshly chopped
  • green onion, Chopped
  • Sesame seeds

Instructions

  • In a medium mixing bowl, whisk together the fresh lime juice, low sodium soy sauce, red chili garlic sauce, and vegetable broth. Set aside.
  • In a large skillet or wok, heat 2 Tablespoons of olive oil over medium-high heat. Add the grated ginger and minced garlic and sauté for 2 minutes, or until the garlic becomes fragrant.
  • Add the jumbo shrimp to the skillet and cook for approximately 3 minutes, flipping occasionally, until the shrimp turn opaque and pink. Remove the cooked shrimp from the skillet and set aside in a bowl, leaving any remaining oil in the pan.
  • In the same skillet, add the remaining 1 Tablespoon of olive oil and heat over medium-high heat. Add the sliced bell pepper and trimmed green beans and sauté for 3 minutes. Then, add the shelled edamame and sugar snap peas. Continue to sauté for another 3 minutes, or until the vegetables are tender-crisp.
  • Pour the reserved sauce into the skillet with the vegetables. Continue to cook on medium heat for 1-2 minutes, stirring constantly, until the sauce thickens slightly. Return the cooked shrimp to the skillet and stir gently to ensure everything is well combined and coated with the sauce. Season with salt and pepper to taste.
  • Remove the stir-fry from the heat. Garnish generously with freshly chopped cilantro, chopped green onions, and a sprinkle of sesame seeds before serving.
  • Serve this delicious stir-fry immediately over a bed of steamed rice, noodles, or enjoy it on its own for a lighter meal.

Notes

  • You can easily omit the shrimp and use chicken, tofu, or another protein source, or leave it entirely vegetarian for a meat-free meal.
  • Feel free to customize the vegetables based on your preferences or what you have available. Bok choy, broccoli, zucchini, carrots, or mushrooms would all be fantastic additions.
