  • 1 tablespoon grated ginger
  • 2 teaspoons turmeric powder
  • 2 teaspoons coriander powder
  • 1/2 teaspoon pepper
  • 2 tablespoons tomato paste
  • 1 15 ounce can petite diced tomatoes, undrained
  • 3 cups beef broth
  • 1 cup coconut milk, canned
  • 1 bay leaf
  • 3 dried red chilis, Kashmiri or arbol, Optional
  • ¼ cup cilantro leaves
  • 3-4 cups cooked Basmati rice {for serving}
  • 1 lime, cut into wedges {for serving}

  3. Place in the oven and bake for 20 minutes, or until just slightly pink in the center.
  4. In a large pan, heat the oil over medium-low heat and add the onions, garlic and ginger and cook for 3 to 4 minutes until softened and fragrant.
  5. Add the flour, curry powder, turmeric, coriander, and pepper. Toast for a minute, stirring constantly. Add the tomato paste and cook for another minute, stirring it in.
  6. Add the diced tomatoes and beef broth, stirring until the flour mixture is well combined and there are no lumps. Stir in the coconut milk, dried red chilis (if using), bay leaf, and cilantro (reserving some for garnish). Simmer for 20 minutes. Then, add the baked meatballs and simmer for an additional 10 minutes, allowing them to absorb the sauce.
  7. Serve with a side of rice and lime wedges. Sprinkle with fresh cilantro. (You can remove the red chili peppers before serving if desired.)
