As autumn leaves begin to paint the landscape with their vibrant hues, there’s a natural shift towards warm, comforting flavors in our kitchens. Nothing embodies this seasonal transition quite like a nourishing salad brimming with the bounty of fall. This Fall Harvest Salad is more than just a dish; it’s a celebration of autumn’s best, combining earthy roasted vegetables with crisp greens, sweet fruits, and tangy cheese, all brought together by a luscious maple tahini dressing. It’s the quintessential centerpiece for any fall gathering or a wholesome, satisfying meal on its own.

Embrace the Flavors of Autumn with Roasted Vegetables
Roasted vegetables are truly the stars of autumn cuisine. The process of roasting caramelizes their natural sugars, intensifying their flavors and creating a delightful texture that’s both tender and slightly crisp. I adore making a large batch of roasted vegetables on a Sunday, which then becomes a versatile base for various healthy meals throughout the week. Beyond this incredible Fall Harvest Salad, these savory roasted gems can transform dishes like Roasted Carrots with Pistachios, Mediterranean Roasted Vegetables, a wholesome Mediterranean Buddha Bowl, a simple Roasted Vegetable Salad, Roasted Carrots and Beets with Tahini, or even vibrant Turmeric Cauliflower.
There’s an undeniable comfort that the unique flavor profile of fall salads brings. This particular Fall Harvest Salad is a symphony of tastes and textures: the earthy sweetness of roasted butternut squash, beets, and carrots; the slight bitterness and crunch of kale and spinach; the chewy sweetness of dried cranberries; the burst of juicy pomegranate arils; and the creamy tang of goat cheese. Each element plays a crucial role, creating a harmonious blend that captures the very essence of the season. I often serve this salad at holiday gatherings, where it always receives rave reviews, or enjoy it as a hearty, fulfilling lunch or dinner on a chilly evening. It truly is the perfect culmination of fall flavors in a single, magnificent bowl.
Imagine this exquisite salad gracing your Thanksgiving table! It would be a phenomenal complement to my Herb Butter Roasted Turkey, adding a fresh, vibrant contrast to rich dishes. Pair it alongside a comforting Butternut Squash Stuffing and a decadent Baked Mac and Cheese for a truly unforgettable holiday feast. The bright flavors and diverse textures of this salad will surely make it a highlight of your seasonal menu.
Essential Ingredients for Your Fall Harvest Salad

You’ll be delighted by how straightforward this recipe is and how simple yet impactful the ingredients are. This is genuinely one of my most cherished fall recipes!
- Hearty Vegetables: The foundation of our roasted medley includes an exquisite blend of brussels sprouts, earthy beets, sharp red onions, and sweet carrots. These vegetables transform under heat, releasing their inherent sweetness and developing a tender, yielding texture.
- Sweet Butternut Squash: Butternut squash is a quintessential fall ingredient. When roasted, it takes on a deeply sweet, almost nutty flavor and a velvety texture, providing a delightful counterpoint to the other ingredients in the salad.
- Fresh Greens: We combine nutrient-dense kale and tender spinach to form the verdant base of this harvest salad. Kale offers a slight bitterness and robust texture, while spinach adds a milder, softer element.
- Crunchy Pecans: Pecans are my go-to nut for this salad. They contribute a wonderful crunch and a subtly sweet, buttery flavor that pairs beautifully with the other fall elements. They also add healthy fats and protein.
- Sweet Dried Fruit: Dried cranberries provide a burst of tartness and chewiness. For variety, feel free to substitute with dried raisins, chopped dried apricots, or even diced dates for a different kind of sweetness.
- Juicy Pomegranate Arils: These jewel-toned seeds are a fantastic addition, offering a pop of vibrant color, a refreshing crunch, and a delicate sweet-tart flavor that brightens the entire salad.
- Creamy Goat Cheese: Crumbled goat cheese introduces a creamy texture and a distinctive tangy, savory flavor that elevates the salad. It’s a truly delicious component, but if you prefer, crumbled feta cheese makes an excellent alternative.

Customize Your Fall Harvest Salad: Delicious Modifications
This Fall Harvest Salad is incredibly versatile, allowing you to tailor it to your personal taste preferences or what you have on hand. Don’t hesitate to experiment with these ideas to make it uniquely yours:
- Nuts & Seeds for Extra Crunch: While pecans add a lovely touch, any nuts or seeds would be a welcome addition. Consider sliced almonds for a delicate crunch, cashews for a richer flavor, earthy pine nuts, or wholesome sunflower seeds for added texture and nutrients. Toasting them lightly before adding will enhance their flavor even further.
- Cheese Variations: Goat cheese offers a creamy, tangy profile that beautifully complements the roasted vegetables and other autumnal ingredients. However, you can easily swap it for crumbled feta cheese for a saltier, sharper note, fresh mozzarella pearls for a milder creaminess, or grated Parmesan cheese for a savory, umami kick.
- Additional Roasted Vegetables: Roasted vegetables are the cornerstone of fall salads, bringing depth and warmth. Feel free to include other seasonal favorites like sweet onion for added tenderness, vibrant red bell peppers for a touch of color and sweetness, cherry tomatoes (roasted until bursting), or tender zucchini and yellow squash.
- Alternative Squash Varieties: Butternut squash is a classic for a reason, but the fall season offers a bounty of other delicious squash options. Acorn squash, with its slightly nutty flavor, or the delicate, edible-skinned delicata squash, would both roast beautifully and integrate seamlessly into this salad.
- Fresh Herbs for a Flavor Boost: Incorporating fresh herbs can elevate the salad’s aroma and taste to the next level. Finely chopped fresh parsley offers a bright, herbaceous note, oregano adds a touch of Mediterranean flair, dill provides a unique freshness, or mint can introduce a surprisingly refreshing element, especially with the pomegranate and apple.
- Add a Protein Boost: For a more substantial meal, consider adding grilled chicken, roasted turkey breast, pan-seared salmon, or even chickpeas for a vegetarian protein option.
- Spice it Up: A pinch of red pepper flakes with the roasting vegetables or a dash of cayenne in the dressing can add a subtle warmth and kick.

Crafting Your Delicious Fall Harvest Salad
Creating this stunning Fall Harvest Salad is a rewarding process, yielding a dish that’s as beautiful as it is flavorful. Follow these simple steps to bring autumn’s best to your table:
Step 1: Preparing and Roasting the Vegetables
Begin by preheating your oven to 425°F (220°C). Line one or two large baking trays with parchment paper – this prevents sticking and makes cleanup a breeze. Next, prepare your root vegetables: trim the ends off the beets and scrub them thoroughly to remove any dirt. Dice the beets into small, uniform pieces. Similarly, dice the butternut squash, halve the Brussels sprouts, slice the red onion, and peel and dice the carrots. Place all these prepared vegetables into a large mixing bowl. Drizzle with 2 tablespoons of olive oil, then season generously with salt and pepper. Toss everything together until the vegetables are well coated, ensuring even cooking and seasoning.

Step 2: Roasting to Perfection
Once seasoned, spread the vegetables and squash evenly in a single layer on your prepared baking sheet(s). Avoid overcrowding the tray, as this can lead to steaming instead of roasting, preventing that desirable caramelization. Roast in the preheated oven for approximately 30 minutes, or until the vegetables are tender when pierced with a fork and lightly browned at the edges. The aroma alone will make your kitchen feel like autumn! While they roast, prepare the remaining salad components.

Step 3: Assembling the Fresh Components
While the vegetables are roasting, prepare your greens. Place the chopped kale in a medium mixing bowl. Drizzle with 2 tablespoons of olive oil and, using your hands, gently massage the kale for about two minutes. This process helps to break down the tough fibers in the kale, making it more tender and palatable. Transfer the massaged kale to a large salad bowl. Add the fresh spinach, diced apple, crunchy pecans, sweet dried cranberries, vibrant pomegranate arils, and crumbled goat cheese to the bowl. Once the roasted vegetables are finished cooking, allow them to cool slightly before adding them to the salad bowl with the other ingredients. This prevents the greens from wilting prematurely.

Step 4: Whisking the Maple Tahini Dressing and Serving
For the exquisite maple tahini dressing, combine all the dressing ingredients (tahini, maple syrup, orange juice, and minced garlic cloves) in a blender or a small bowl. Blend or whisk vigorously until the mixture is completely smooth and creamy. The orange juice adds a lovely citrusy brightness that cuts through the richness of the tahini and complements the maple syrup beautifully. Drizzle this delightful dressing generously over the assembled salad. Gently toss all the ingredients together, ensuring every bite is coated with the flavorful dressing. Serve your sensational Fall Harvest Salad immediately to enjoy it at its peak freshness and flavor. This salad is best enjoyed fresh, allowing the textures and temperatures to create a dynamic culinary experience.

Storage Tips for Your Fall Harvest Salad
To maximize the freshness and quality of your Fall Harvest Salad, I recommend storing the roasted vegetables separately from the greens and other fresh components if you anticipate having leftovers. This approach prevents the greens from becoming soggy. When you’re ready to enjoy your next serving, simply assemble a portion with the cooled roasted vegetables. Otherwise, if the salad is already dressed and mixed, you can store any leftovers in an airtight container in the refrigerator for up to 3-4 days. While the greens may soften slightly, the flavors will remain delicious, making for a convenient and healthy meal prep option.
