Ingredients:

  • 14 ounces rigatoni pasta (or similar medium-sized pasta like penne, ziti)
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 small red onion, chopped into thin slices
  • 1 red bell pepper, seeds removed, chopped into large chunks
  • 1 orange bell pepper, seeds removed, chopped into large chunks (or any color bell pepper)
  • 1 small zucchini, chopped into small chunks
  • 1 small eggplant, cut into small chunks
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon sweet paprika
  • 1/4 teaspoon crushed red pepper flakes (optional, for a hint of heat)
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • 14 ounce can of diced fire roasted tomatoes, undrained (or regular diced tomatoes)
  • 16 ounce can tomato sauce (or your favorite marinara sauce)
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • Fresh basil and parsley, chopped, for garnish (optional)

Instructions:

  1. Cook the Pasta: Cook the rigatoni pasta according to package instructions until al dente. Drain and set aside. While pasta cooks, preheat your oven to 400°F (200°C).
  2. Prepare Vegetables: On one or two large non-stick baking sheets (to avoid overcrowding), combine the chopped red onion, bell peppers, zucchini, eggplant, and minced garlic. Drizzle with extra virgin olive oil and toss to coat evenly.
  3. Season Vegetables: In a small bowl, mix together the dried oregano, basil, thyme, sweet paprika, crushed red pepper flakes (if using), sea salt, and black pepper. Sprinkle this spice mixture over the vegetables and toss again to ensure all vegetables are well-seasoned.
  4. Roast Vegetables: Roast the seasoned vegetables in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized. Stir once halfway through cooking. Once done, remove from the oven and transfer the roasted vegetables to a large baking dish (e.g., a 9×13 inch casserole dish). Reduce oven temperature to 350°F (175°C).
