This Roasted Vegetable Salad is the perfect hearty salad for fall. Roasted squash, sweet potato, fresh vegetables, spinach, goat cheese and dried cranberries are tossed in a light dressing and topped with crunchy croutons.
Ingredients
Main Salad Components:
- 1 large sweet potato, peeled and cubed
- 2 cups of butternut squash, peeled and cubed (or your preferred squash like acorn or delicata)
- 1/2 of a small red onion, sliced
- 1 large carrot, peeled and cut into coins
- 3 garlic cloves, finely minced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1 teaspoon Italian seasoning
- 1 – 6 ounces container of baby spinach
- 1 cup cherry tomatoes, halved
- 1/4 cup sliced almonds
- 1 – 4 ounces container of goat cheese, crumbled
- 1/2 cup dried cranberries
- 1/4 cup fresh parsley, chopped
- 4 green onions, white and green parts chopped
For the Croutons:
- 1/2 loaf of French or sourdough bread, cut into cubes
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter, melted
- 2 teaspoons Italian seasoning
For the Dressing:
- 2/3 cup extra virgin olive oil
- 1/3 cup red wine vinegar
- 1 lemon, juiced
- 2 teaspoons honey
- 2 teaspoons maple syrup
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1 teaspoon Italian seasoning
Instructions
To prepare vegetables and croutons:
- Preheat the oven to 350 degrees F (175 C). In a large mixing bowl, combine the butternut squash, sweet potato, red onion, carrot, garlic, 2 tablespoons olive oil, 1/2 teaspoon salt, and 1 teaspoon Italian seasoning. Toss to thoroughly coat the vegetables and squash with the olive oil mixture.
