Ingredients

  • 3 teaspoons extra virgin olive oil
  • 2 medium zucchinis, thinly sliced into rounds
  • 1/2 red onion, thinly sliced
  • 1 fennel, trimmed, cored, halved lengthwise, and thinly sliced
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1/4 teaspoon nutmeg
  • 1 cup Gruyere cheese, shredded
  • 1 cup panko breadcrumbs
  • 1/2 cup Parmigiano-Reggiano cheese, grated {or regular Parmesan cheese}

Instructions

  1. Preheat the oven to 425 degrees F.
  2. In a large mixing bowl combine the olive oil, zucchini, fennel, onion, salt, pepper, dried parsley, and oregano and mix well.
  3. Put the zucchini mixture in a 2 1/2 quart casserole dish. Bake until just tender, about 20 minutes.
  4. Whisk together the cream and nutmeg in a small bowl and pour over the vegetables.
  5. Sprinkle with the Gruyère cheese evenly over the top of the zucchini. Bake until bubbling, about 5-10 minutes.
  6. In another small bowl combine the panko and the Parmigiano-Reggiano.
  7. Remove the baking dish and sprinkle with the panko mixture and bake until golden brown, about 5 to 10 more minutes.
  8. Remove from the oven and let stand for 5 minutes. Serve warm!
