How to Make Gourmet Puff Pastry Baked Brie with Prosciutto di Parma and Cranberries: A Step-by-Step Guide
Creating this magnificent appetizer is surprisingly straightforward. Here’s a quick overview of the simple steps that will lead you to a perfectly baked brie:
- Prepare your puff pastry: Thaw it and gently roll it out to ensure it’s large enough to encase your brie wheel completely.
- Spread the cranberry sauce generously over the center of the pastry.
- Layer torn pieces of exquisite Prosciutto di Parma on top of the cranberry sauce.
- Carefully place the wheel of brie onto the prosciutto layer.
- Fold the edges of the puff pastry over the brie, sealing it like a gift.
- Chill the wrapped brie briefly to firm it up, then flip it and bake until golden and puffed.
- Allow the baked brie to rest for about 15 minutes before slicing to achieve the perfect ooey-gooey consistency.
Now, let’s dive into the visual guide, ensuring every step is clear and achievable, even for novice bakers. These photo instructions will walk you through the process, guaranteeing a flawless baked brie every time.

The foundation of this dish is good puff pastry. If frozen, ensure it is properly thawed. You can leave it overnight in the fridge or on the counter for about 30 minutes. Once thawed, gently roll it out on a lightly floured surface. The goal is to make it slightly larger than your brie wheel, allowing enough dough to fold over and completely enclose the cheese. Do a quick test run by placing your brie on the pastry to gauge the size before adding your fillings.

Next, spoon your favorite cranberry sauce generously into the center of the pastry. This is where your brie will sit, creating a delightful layer of sweetness and tartness that cuts through the richness of the cheese and prosciutto. You can use homemade cranberry sauce or a high-quality store-bought variety. For a different twist, a fruit chutney or fig jam can also be an excellent alternative, adding a unique depth of flavor.

Now for the star savory ingredient: Prosciutto di Parma. Carefully layer torn pieces of prosciutto over the cranberry sauce. Tearing it into smaller, bite-sized pieces ensures that every serving gets a balanced amount of this exquisite cured meat, enhancing the overall texture and flavor profile. The delicate, savory notes of prosciutto are indispensable to this recipe, creating a truly unforgettable appetizer.
Which Prosciutto Should You Use? The Magic of Prosciutto di Parma
When it comes to prosciutto, there’s a world of difference in quality, and Prosciutto di Parma stands in a league of its own. Much like other products with protected names such as Parmigiano Reggiano cheese or Balsamico di Modena vinegar, Prosciutto di Parma adheres to stringent quality standards that guarantee an unparalleled taste experience.
My personal journey with this magnificent cured meat began when I had the pleasure of living in San Francisco’s vibrant Little Italy. I distinctly remember my astonishment at the depth of flavor and nuanced deliciousness—a perfect balance of sweet and savory notes—that true Prosciutto di Parma offered. I found myself frequently visiting a particular deli, indulging in its rich, tender slices, realizing I had never truly experienced prosciutto before.
More recently, during a trip to Italy, I had the privilege of enjoying Prosciutto di Parma even closer to its source, specifically the Parma region of North-Central Italy, where it’s exclusively produced. The experience only deepened my appreciation. To my delight, I later discovered that genuine Prosciutto di Parma, marked by its distinctive quality, is available even in Canada, thanks to collaborations initiated by the Consorzio del Prosciutto di Parma. This discovery felt less like a sponsorship and more like a public service announcement, a joyous finding I was eager to share.
What sets true Prosciutto di Parma apart? It is a 100% all-natural, gluten-free product, crafted using only four simple ingredients: pork, sea salt, air, and time. Crucially, it is completely free of preservatives, including nitrates or deceptive substitutes like “celery extract,” which is merely another form of nitrates. This commitment to natural processing results in its superior taste and texture.
To ensure you’re purchasing authentic Prosciutto di Parma, always look for the distinctive Parma Crown logo on the packaging. If you’re buying from a deli, the crown will be fire-branded directly onto the ham. This symbol is your guarantee of quality and authenticity, ensuring you get the genuine article for your culinary creations.

With your flavor layers meticulously arranged, it’s time to place the wheel of brie directly on top of the Prosciutto di Parma. Then, with the precision of wrapping a precious gift, fold the sides of the puff pastry over the brie. Ensure all edges meet and overlap slightly, completely enclosing the cheese and its fillings. This creates a secure package that will bake into a beautiful golden sphere.

To help achieve a neat, smooth, and evenly shaped wheel, utilize the parchment paper underneath. Gently lift the edges of the parchment paper and use them to press down the corners of the pastry, helping to seal them firmly and round out the overall shape. This step ensures that the pastry cooks uniformly and presents beautifully. A well-sealed pastry also prevents any cheese from escaping during baking.

Before baking, chill the entire wrapped brie in the refrigerator or freezer for about 15-20 minutes. This chilling period is crucial for two reasons: it helps the pastry firm up, making it easier to handle and preventing it from becoming too soft during its initial moments in the oven. While it chills, preheat your oven to 400ºF (200ºC). Just before baking, carefully flip the brie over so that the smooth, sealed side faces upwards. This ensures a more attractive, unblemished top crust. Then, brush the entire surface of the pastry with an egg wash (one egg beaten with a tablespoon of water) for that lustrous, golden-brown shine that makes this appetizer so irresistible.

Now, for what might be the most challenging part: the wait. Once your puff pastry baked brie emerges from the oven, golden and fragrant, you must resist the urge to cut into it immediately. Take a deep breath and allow it to rest for a full fifteen minutes at room temperature. Why this crucial waiting period?
If you cut into the brie right away, the molten, scalding-hot cheese will flood your serving platter, creating a chaotic and messy situation. While there are certainly worse things in life, if you prefer a more refined and enjoyable dining experience, this short quarter-hour rest is essential. It allows the cheese to settle slightly and firm up just enough to maintain its gooey deliciousness without threatening to burn your fingers or drown your accompanying baguette in hot lava. This brief pause ensures that when you finally slice into it, you’ll be met with warm, perfectly melty brie that holds its shape beautifully.
Because the puff pastry crust is already wonderfully buttery and crisp, I find that a puff pastry-wrapped baked brie is best served with warm, crusty bread rather than crackers. The soft interior of the bread perfectly complements the creamy cheese and flaky pastry. However, feel free to choose your preferred accompaniment—whether it’s various crackers, apple slices, pear wedges, or even a handful of toasted nuts. The beauty of this dish lies in its versatility and crowd-pleasing appeal.
Baking Perfect Brie: Tips and Tricks for Success
To ensure your Puff Pastry Baked Brie is nothing short of perfection, consider these additional tips:
- Even Thawing: Ensure your puff pastry is evenly thawed. If parts are still frozen, it can be difficult to roll and may tear.
- Don’t Overwork the Pastry: Puff pastry needs to be handled gently. Overworking it can prevent it from puffing up properly, resulting in a dense rather than flaky crust.
- Proper Sealing: Make sure the pastry is completely sealed around the brie. Any gaps could allow the cheese to leak out during baking.
- The Power of Chilling: The chilling step is vital. It keeps the butter in the puff pastry cold, which is key to its flakiness, and helps the wrapped brie maintain its shape in the oven.
- Egg Wash Benefits: Beyond the golden shine, egg wash also helps seal the pastry and gives it a slightly crispy texture.
- Oven Temperature: A hot oven is crucial for puff pastry. It creates steam, causing the layers to separate and puff up beautifully.
- Trust the Rest: As mentioned, resting allows the brie to set, preventing a runny mess and making it much easier and more pleasant to serve.
Serving Suggestions and Variations for Your Baked Brie
This baked brie is incredibly versatile. Here are some ideas to make it uniquely yours:
- Sweet Variations: Instead of cranberry, try apricot jam, fig spread, or a drizzle of honey with walnuts inside.
- Savory Twists: Add caramelized onions, sautéed mushrooms, or a sprinkle of fresh rosemary or thyme with the prosciutto.
- Nutty Crunch: Toasted pecans, walnuts, or slivered almonds can be added inside with the fillings or sprinkled on top after baking.
- Fresh Fruit Accompaniments: Serve alongside fresh apple or pear slices, grapes, and berries for a refreshing contrast.
- Wine Pairings: A crisp Chardonnay, a light Pinot Noir, or even a sparkling wine would pair wonderfully with the rich flavors of the brie and prosciutto.

- 1 (550 g / 19 oz) wheel of brie
