Essential Ingredients for Grilled Ribeye Perfection

Crafting the perfect grilled ribeye requires a few quality ingredients, thoughtfully combined to maximize flavor. Here’s a breakdown of what you’ll need to create this memorable meal. For precise measurements and a printable version, refer to the full recipe card below.

  • Premium Ribeye Steaks: The foundation of this dish. Look for well-marbled ribeye steaks, often labeled as Delmonico steaks in many grocery stores. Marbling, the flecks of fat within the muscle, is key to the ribeye’s signature juiciness and flavor when grilled. Aim for steaks that are at least 1-inch thick for best results.
  • Flavorful Ribeye Marinade: This simple yet powerful marinade tenderizes the beef and infuses it with deep, savory notes. It features a blend of Worcestershire sauce for umami depth, fresh lemon juice for brightness, soy sauce for additional savory complexity, high-quality olive oil to carry flavors, Italian seasoning for aromatic herbs, minced garlic for pungent flavor, and a touch of salt and pepper. It’s a versatile marinade that works wonders on various cuts of beef. A crucial tip: due to the acidity from the lemon juice, limit marinating time to two hours or less to prevent the meat from breaking down too much and becoming mushy. This marinade is also fantastic for recipes like Easy Grilled Flank Steak with Chimichurri or even Pan-Seared Ribeye Steak with Goat Cheese.
  • Luscious Lemon Garlic Compound Butter: The crowning glory of this grilled ribeye. This compound butter adds a luxurious, savory, and aromatic finish to the hot steaks. To prepare, simply ensure your unsalted butter is at room temperature for easy blending. Then, combine it with fresh lemon juice, bright lemon zest, finely minced garlic, and fresh chopped parsley. The resulting butter melts beautifully over the warm steak, creating a rich sauce that elevates the entire dish. This butter can also be made ahead of time and refrigerated.

How to Master the Art of Grilling Ribeye

Grilling a perfect ribeye might seem intimidating, but with these straightforward steps, you’ll achieve a restaurant-quality steak right in your backyard. Follow this simple guide to create a delicious Lemon Garlic Butter Grilled Ribeye that’s tender, juicy, and packed with flavor.

Step-by-Step Grilling Guide:

  1. Prepare the Marinade and Marinate the Steaks: Begin by removing your ribeye steaks from the refrigerator and allowing them to sit on the counter for about 15-20 minutes while you prepare the marinade. In a medium-sized mixing bowl, whisk together all the marinade ingredients until well combined. Transfer the steaks to a large zip-top bag or a shallow container and pour the marinade evenly over them, ensuring each steak is fully coated. Seal the bag or container and refrigerate for no more than two hours. Marinating for too long, particularly with acidic ingredients like lemon juice, can negatively affect the texture of the beef.
  2. Bring Steaks to Room Temperature and Prepare Your Grill: Approximately 30-45 minutes before grilling, remove the marinated steaks from the refrigerator. Allowing them to come closer to room temperature promotes more even cooking. Use this time to prepare your lemon garlic butter if you haven’t already. Preheat your grill to medium-high heat. A good hot grill is essential for a beautiful sear.
  3. Grill to Perfection: Place the room-temperature steaks directly on the preheated grill grates. Cook for approximately 4 to 5 minutes per side until they develop a beautiful golden-brown crust with slight char marks. Flip the steaks and continue grilling for another 4 to 5 minutes for a medium-rare doneness (internal temperature of 135°F). For a medium steak (140°F), aim for 5 to 7 minutes per side. For medium-well (150°F), cook for 8 to 10 minutes per side. Always use a meat thermometer inserted into the thickest part of the steak for the most accurate results.
  4. Rest and Serve: Once your steaks reach the desired doneness, transfer them to a clean cutting board or serving platter. Loosely tent them with aluminum foil and let them rest for at least 5 minutes. This crucial resting period allows the juices to redistribute throughout the meat, ensuring a tender and moist steak. After resting, slice the ribeye against the grain or serve whole with a generous dollop of the prepared lemon garlic butter melting over the top.

Understanding the Ribeye Steak: A Cut Above the Rest

The ribeye steak is widely regarded as one of the most flavorful and tender cuts of beef, making it a favorite among steak enthusiasts and home cooks alike. It originates from the beef rib primal cut, specifically from the longissimus dorsi muscle, which runs along the back of the cow. This muscle does very little work, contributing to the ribeye’s exceptional tenderness.

You might encounter ribeye steaks under various names in your local butcher shop or grocery store, such as Delmonico Steak or Filet of Ribeye. While a ribeye is typically boneless, a rib steak (or cowboy ribeye) includes the bone, which some believe adds even more flavor and moisture during cooking.

What sets the ribeye apart is its rich marbling – the generous streaks of fat woven throughout the muscle. This intramuscular fat renders down during cooking, basting the meat from within, resulting in an incredibly juicy, tender, and intensely beefy flavor that’s hard to beat. Its balanced fat content contributes to its succulence without being overly greasy.

Given its characteristics, the ribeye is perfectly suited for high-heat cooking methods that allow for a beautiful sear while keeping the interior moist. Grilling, pan-searing, and broiling are among the best ways to cook a ribeye, bringing out its natural richness and tender texture. With this lemon garlic butter recipe, you’re embracing one of the best ways to prepare this magnificent cut.

Storage and Reheating Tips for Leftover Ribeye

While this grilled ribeye is best enjoyed fresh off the grill, leftovers are certainly a treat. To store any remaining steak, allow it to cool completely before transferring it to an airtight container. Properly stored, it will keep in the refrigerator for up to 3 days. When reheating, consider slicing the steak thinly and warming it gently in a pan with a little butter or beef broth, or in the oven at a low temperature, to prevent it from drying out.

Prep: 15 mins
Cook: 20 mins
Total: 35 mins
Servings: 4

Ingredients

  • 4 – 10 ounce Beef Ribeye Steaks

For the Marinade:

  • 1/2 cup extra virgin olive oil
  • 1/4 cup of Worcestershire sauce
  • 1 lemon, juiced
  • Zest of 1/2 of a lemon
  • 1/3 cup soy sauce
  • 3 garlic cloves, minced
  • 1 teaspoon oregano
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper

For the Lemon Garlic Butter:

  • 1/2 cup of unsalted butter, softened
  • 4 garlic cloves, minced
  • 1 tablespoon lemon juice
  • Zest from 1 lemon
  • 1 teaspoon fresh parsley, chopped
  • 1 teaspoon fresh basil, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

To make the butter:

  1. Combine softened butter, minced garlic, lemon juice, lemon zest, chopped parsley, basil, salt, and pepper in a mixing bowl.
  2. Transfer the mixture to parchment paper and shape it into a log. Roll in parchment paper to 1 to 1 1/2 inches in diameter, twisting the ends to seal the log. Refrigerate until firm and ready to use (lasts up to 1 1/2 weeks). This butter is also fantastic on warm bread!

To make the marinade:

  1. In a large zip-top bag or a resealable container, combine the olive oil, Worcestershire sauce, lemon juice, lemon zest, soy sauce, minced garlic, oregano, salt, and pepper.
  2. Add the ribeye steaks to the marinade and refrigerate for up to 2 hours. Do not marinate longer than this, as the acidity from the lemon juice can begin to break down the meat’s texture too much.

For grilling:

  1. When you are ready to grill, remove the steaks from the refrigerator and allow them to come to room temperature for 30-45 minutes before placing them on the grill.
  2. Preheat your grill to medium-high heat. Place the steaks on the hot grill and cook until golden brown and slightly charred, about 4 to 5 minutes. Flip the steaks over and continue to grill for another 4 to 5 minutes for medium-rare (internal temperature of 135°F), 5 to 7 minutes for medium (140°F), or 8 to 10 minutes for medium-well (150°F).
  3. Transfer the cooked steaks to a cutting board or platter. Loosely tent them with aluminum foil and let them rest for about 5 minutes. This allows the juices to redistribute, ensuring a tender and moist steak. Slice the ribeye against the grain or serve whole with a generous dollop of the lemon garlic butter.

Notes

  • The lemon garlic butter is incredibly versatile and makes a delicious spread for bread or rolls!
  • For best results, use a meat thermometer to ensure your steaks reach the desired internal temperature.
  • Adjust seasoning to your personal preference. Taste the marinade before adding the steaks and adjust salt or pepper as needed.
