  • ½ cup finely-chopped onion
  • 1 tsp kosher salt

  • 2 tbsp avocado oil
  • 1 ½ cups finely-chopped onion
  • ¾ tsp kosher salt
  • 4 tsp minced garlic (about 4 large cloves)
  • 1 ½ tbsp finely chopped jalapeño pepper (about ½ a medium jalapeño)
  • 1 tbsp ground cumin
  • 1 tsp ground chipotle powder (sub smoked or sweet paprika for a mild version)
  • ⅛ tsp ground cloves
  • 1 can (398 mL / 15 oz) pure pumpkin puree
  • 2 cups chicken broth (or 2 tbsp bouillon concentrate + 2 cups water)
  • Salt, to taste

To Assemble:

  • 6 medium flour tortillas
  • 8 oz grated sharp cheddar or Monterey Jack cheese, or a combination (about 3 cups packed)
  • ½ cup sour cream (or 10%+ fat Greek yogurt)

To Serve (Optional Garnishes):

  • 1 tbsp fresh cilantro leaves, chopped
  • 1-2 sliced avocados or a dollop of avocado crema

Instructions

Prepare the Chicken Filling:

  1. Add 2 tbsp more avocado oil and 1 ½ cups finely-chopped onion to the same pot. Cook over medium-high heat until the onion is translucent and softened (about 5-7 minutes). Reduce heat if onions start to brown too quickly.
  2. Stir in the minced garlic, finely chopped jalapeño, ground cumin, ground chipotle powder, and ground cloves. Cook for an additional 2 minutes, stirring constantly, until the spices are fragrant.
